We’ve just spent a long weekend in beautiful Cornwall at my sisters wedding.  Weddings are always special, but this was especially special!  My own little sis!!!  Cornwall added a spectacular backdrop to everything we got up to.  I had been to Cornwall as a three year old, from which I surprisingly have a load of memories; staying in little farmhouse B and B’s, the intense smell of fresh manure, cream teas and the iconic Cornish lanes, where vegetation rises high above and it seems like all the roads are cut out of massive bush!  Its certainly a part of the world that leaves an impression.

My sis Laura and her new hubby Paul stayed in the most stunning little wood cottage almost on the beach, surrounded by dramatic cliffs and raging, white surf.  We all said that it seemed like South Africa or Australia, we couldn’t believe that these kinds of coastlines existed in our little island.  The surfers were loving it and there seemed to be a gang of pirates having a fire just down the beach.

My sis’s ceremony was on the beach and was a beautiful spiritual affair, although not ‘religious’, we revelled in the beauty of nature and the good things we all share; love, compassion, hope and freedom.  We also ate some sensational vegan food, prepared by the awesome Annie (who worked her socks off).  It was a Middle Eastern/ Southern Med style buffet, something Annie was vastly experienced in.  It showed.  Spicy carrots, green cous cous, fresh pitta, roasted pepper and almond puree, smokey aubergine salad and piles of crispy borek (with spinach and pine nuts).  Jane and I thought we’d died and gone spinning into a Lebanese form of nirvana.  I have rarely enjoyed food so much and the backdrop of the Cornish coastline, surrounded by our nearest and dearest, just added to the experience.

Jane and I drove our old Peugot estate, Hooty, down to Cornwall and camped in Hay on Wye for a night (central Wales), a real hot spot for second hand book shops and, as it turned out, vegan food.  Wahee!  The perfect combo. I love a good second hand bookshop, the smell alone transports me to a place of wonder and excitement.  I picked up a couple of antique books, precious heirlooms.  We also went to the amazing Old Electric Shop, a space for old vintage clothes, records and interior stuff as well as vegan food.  When Jane and I walked in, they were playing one of our favourite tunes at the moment, ‘Better Days’, we felt right at home immediately.  We missed out on their lovely looking lunch menu, we had to hit the road, but it all smelled amazing and their vegan cakes proved to be a full power breakfast as we took on the Glastonbury traffic.  We hope to go back to Hay on Wye this winter to go deeper into the bookshops and explore the beautiful local scenery.

We’re still on a high after getting back late last night and thought we’d share something in keeping with our awesome weekend in the beautiful south of England.  Here is a recipe taken from ‘Peace and Parsnips’ that would please anyone who has a passion for the cuisine of the Southern Med:

Tabouleh is a proper southern Med classic. Combined with great olive oil and sweet roasted cauliflower it makes a substantial salad. I love the spice mix baharat – if you can find it, substitute it for the ground spices. I like to use pomegranate molasses in the dressing – it gives a funky reddish tinge and has a sticky tang all of its own. For a special occasion, go the whole hog and sprinkle over herbs, baharat, pomegranate and chopped toasted almonds. Gluten-free option: replace the bulgar wheat with millet.

The Bits – For 4-6
100g Puy lentils
1 bay leaf
220g bulgur wheat, rinsed in cold water
about 450ml boiling water or veg stock
1 small cauliflower, cut into small florets, roughly 2cm in size, stalks finely diced (waste nothing!)
a large pinch of ground cumin
a large pinch of ground coriander
a large pinch of sweet paprika
a large pinch of ground turmeric
a small pinch of ground cinnamon
½ tsp sea salt
4 spring onions, finely chopped
½ a cucumber, deseeded and finely diced
2 ripe tomatoes, deseeded and finely diced
1 tbsp great olive oil
½ a handful of dried apricots, soaked for 2 hours, then drained and finely chopped
a handful of fresh flat-leaf parsley, finely chopped
½ a handful of fresh mint leaves, finely chopped
seeds from 1 small pomegranate
1 tbsp toasted sesame seeds

For the garnish
4 tbsp pomegranate seeds
a handful of chopped fresh parsley and mint

For the Pomegranate Dressing
4 tbsp olive oil
2 tbsp pomegranate molasses or juice of 1 large lemon
zest of ½ a lemon
1 clove of garlic, peeled and well crushed
a small pinch of dried mint
a small pinch of sea salt
½ teaspoon cracked black pepper

Do It

Put the lentils into a pan and cover with water. Leave for 5 minutes, then pick out any floating lentils. Drain, cover with fresh water, and add the bay leaf. Bring to the boil, then reduce the heat and simmer for 30 minutes, stirring and checking the water level (add more if needed). The lentils should be springy, but cooked. Drain if necessary, though there should be very little liquid left.

Put the bulgur wheat into a large bowl and pour over the boiling water or stock, enough to cover it by about 2cm. Tightly cover and leave for 30 minutes. Once cooked, fluff with a fork and cool.

In a frying pan, heat the oil on a high heat, then add the cauliflower and begin to fry. Stir regularly and cook for 10–12 minutes. Once the cauliflower has softened and the edges are slightly charred, sprinkle over the ground spices and salt and cook for a further 2 minutes, stirring well. Cover and leave to cool. The cauliflower should be nicely coated with the spices.

For the Pomegranate Dressing simply whisk all the ingredients together in a bowl.

Add three-quarters of the lentils to the bulgur wheat, along with the cauliflower, herbs and the rest of the ingredients, then pour over the dressing and mix gently together with your hands until well combined. Place in a wide, shallow serving bowl and spread out evenly. Sprinkle over the remaining lentils and garnish with pomegranate seeds and herbs.

Plantain Breakfast Burrito with Pico de Gallo (Original Recipe from Peace and Parsnips)

Here’s the perfect Saturday morning Burrito packed with colours and all the flavours we love from Mexico.  If you can’t get your hands on a plantain, use potato instead and cook it for a little longer.

I spent six months in Mexico quite a long time ago now, driving around from North to South. The food memories (and parties) have always stayed with me.  In fact, you could say that a street taco changed my life!  It certainly changed my ideas about food and what constitutes ‘good food’ or ‘fine dining’.  I ate some of the best food of my life, huddled under a light bulb on a street corner or hanging out at a 24 hour taco stall.  Maybe it was all that Corona, but Mexico was one long feast and my eyes were opened to the complexity of Mexican food and its distinct regional influences.

Burritos are something we all know and are very much a meal in a wrap.   There are so many ways to fill a burrito, but in the morning, when you’re looking for something a little bit different, a plantain is a very versatile and nourishing amigo.  It brightens up your day from the very beginning!

Most of us need a quick breakfast that is easy to prepare, and burritos are ideal. In Mexico, home of the burrito, breakfast differs from lunch in only minor detail – restaurants serve dishes almost identical to any other time of day. Pico de gallo is a classic, and easy enough to assemble for breakfast – although having a bowl of pico de gallo in your fridge is never a bad idea at any time of day. It can be found all over Mexico and Central America and bizarrely translates as ‘beak of rooster’. If you’re not serving your burrito with pico de gallo, I recommend mixing some fresh coriander leaves and tomatoes into the filling. Qué rico!

The Bits – F0r 4
2 large green plantains
2 tablespoons cooking oil
1 onion, finely diced
1 red pepper, deseeded and finely diced
240g firm tofu or tempeh, well drained and mashed with a fork
3 cloves of garlic, peeled and crushed teaspoon ground cumin
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon sweet paprika
½ teaspoon oregano
1-2 green chillies, deseeded and finely sliced Oalapeiios would be perfect)
a large pinch of sea salt
4 large whole wheat tortillas (must be fresh – stale tortillas will crack when rolled – and they dry out very easily, so keep them covered: gluten-free tortillas are available)

Do It

Make the pico de gallo. Peel the plantains with apotato peeler, then halve them lengthways and chop them into lcrn chunks. In a large frying pan, heat half the oil on a high heat, then add your plantains and toss well. They will become nicely caramelized. Stir them regularly to prevent them sticking and remove when they have some nice crisp brown bits – roughly 5-7 minutes. Set aside, uncovered.

Add the rest of the oil to the pan. On a high heat, saute your onions and peppers (that’s posh frying) and stir well. After 5 minutes, when they are beginning to caramelize, add the tofu, garlic, cumin, coriander, turmeric, paprika, oregano, chillies and salt. Cook and stir for a further 5-7 minutes, adding 1tablespoon of water to ensure the spices are not sticking to the base. Now stir in the cooked plantains and check the seasoning. Cover and set aside.

Wipe out the frying pan with kitchen roll and warm your tortillas for a minute on each side (or you can warm them beforehand on a medium grill). They should be just warmed through, fragrant and still soft and pliable. If they are too toasted, they break when wrapping.

Spoon 3 tablespoons of plantain filling into the centre of each tortilla and top with 2 tablespoons of pico de gallo. Fold in the two opposing edges, pressing gently down, then roll the whole thing over. A burrito is like a tucked-in wrap, a fat tortilla parcel if you like.

Salsa verde is also amazing lathered over burritos or served on the side. Serve these burritos warm, with more fresh chillies or chilli sauce. POW!

Happy Birthday Blueberry & Spelt Slices (and brownies and cookies…)

So without further ado, a Big Beach House-y Happy Birthday to you Lee!

I made some chocolate brownies, blueberry slices and some of Lee’s brazil nut and spelt chocolate chip cookies from ‘Peace and Parsnips’ for the special day! Lee is working today so they had to be gorgeous but transportable and that’s why I opted for the kind you can cut into squares and share around…. Roll on the 10 o’clock tea break down at the Retreat Centre!

Cooking these cakes was so much fun, and I had such a great time covering the kitchen in flour(!) while sieving and grooving to a very cool album… not so much fun clearing up, but I felt compelled to share with you the experience anyway and post some pictures so that you can be with us from afar!

I love baking, and I tend to start with a recipe from a cookbook and see what happens…. Sometimes I go way off-piste and create something totally new, other times I stick to the recipe religiously. Both are interesting and produce unexpected results…!

The blueberry slices recipe originally came from ‘The Vegan Baker’ by Dunja Gulin and I changed it in a couple of places, but gosh I recommend you try it! I munched on a quick slice with a cup of tea this afternoon (pure research you know, checking to see if they were cooked properly..!) and they were delicious!

The Bits

260g/ 2 cups unbleached spelt flour

65g/ ½ cup plain wholemeal / wholewheat flour

1 teaspoon bicarbonate of soda

1 ½ teaspoons baking powder

¼ teaspoon salt

1/2 teaspoon vanilla extract

¼ teaspoon ground cinnamon

a few pinches of ground turmeric

250ml plain soya yoghurt

30ml soya milk

170g / 2/3 cup maple syrup

100g coconut oil (melted)

1 lemon (freshly squeezed juice and zest)

1 teaspoon apple cider vinegar

2 cups blueberries

 

Do It

Sift the dry ingredients into a bowl and mix together (that’s the flours, bicarbonate of soda, baking powder, salt, vanilla powder, cinnamon and turmeric).

Combine the wet ingredients in a separate bowl (that’s everything apart from the fruit, because that goes on top). You may need to mash the coconut oil with a fork a little to get it to mix.

Mix them together really gently keeping the air inside the mixture, if it looks a little dry here you can add a tiny more soya milk.

Gently spoon into a baking pan (23cm x 30cm is best) and get it fairly level without squashing the mixture down (the aim is to keep the air in the mixture). Scatter the fresh blueberries over the top making sure there are gaps between to stop the cake going soggy.

Put the cake into pre-heated oven (180 degrees, gas 4 or 375 farenheit) for 30-35 minutes and when it comes out it should be golden on top.

Allow it to cool in the pan and once it is nearly cold gently lift onto a wire rack. When it has cooled completely you can cut it into squares. Mine were nice big squares and I got 16.

 

Serve

Lovely warm, drizzled with a little more maple syrup…Yummm!

THESE VEGAN BURGERS ARE CARNIVORE APPROVED!!!!!  PACKED WITH FLAVOUR AND LOADS OF TEXTURE, YOU WON’T BELIEVE THEY’RE MADE FROM LEFTOVER KITCHEN SCRAPS!

A vivid receptacle for all your kitchen scraps, a modern take on what would have been a very old fashioned, house wife style, classic. Purple vegan burgers are not it Delia’s repertoire yet, but if you love juicing (and more and more people are getting on that ship) you’ll be wondering what to do with all that gorgeous looking leftover pulp. We use it as a fabulously nutritious filler for many dishes, our muffins turn out rather well (see Juicer Pulp Muffins with Pecan, Fig and Turmeric); burgers, cakes, soups etc. They give these burgers a great texture, light and moist. A million miles away from the stodgy, claggy veggie burgers that most of us have to endure on regular occasions. Well, not in the Beach House!!!!!! Pop round for dinner, we’ll whip you a pulp burger up and you’ll leave considering your very own vegan burger odyssey. It’s a large and diverse place to inhabit for a while. The options are mind boggling.

You will need alot of juicer pulp for these burgers, maybe save up for a couple of days. Taste it before you use it, the citrus elements especially can go a little wayward after a day or more in the fridge. We did it in a day! A pint of juice is surely a zingy start to the day. This pulp contains 250g spinach leaves, 4 apples, 4 carrots, 1 beetroot, 1 handful parsley, 1 lemon (with ½ zest), 1 orange (with ½ zest), 2 large florets of broccoli. Phew! Then yum. Quite a list of ingredients, but we use whats to hand and buy loads of veggies and fruits, if they are getting a little past their best we juice them and come up with many odd combos. Swede juices is a real thing! Certainly wakes you up first thing.

HEALTH BENEFITS OF EATING YOUR JUICER PULP?

The pulp leftover from juicing is filled with fibre which is amazing for digestion.  A little word of warning, too much fibre will bung you up so bear that in mind.  No juicer will produce completely dry pulp, so there are benefits from eating the leftover juice along with the pulp.  Fruits (especially citrus) store many of their nutrients/ flavanoids in their skins, so we are not missing out any of that goodness either.

OTHER IDEAS FOR USING UP LEFTOVER JUICE PULP

–  COMPOST IT, THE PULP WILL BREAK DOWN VERY QUICKLY AND THE GARDEN LOVES IT!

–  ADD TO SMOOTHIES FOR A FIBRE HIT

–  ADD IT STRAIGHT TO SOUPS AS A THICKENER INSTEAD OF POTATOES ETC

–  FREEZE IT, GATHER ENOUGH PULP UNTIL YOU HAVE ENOUGH TO MAKE BURGERS ETC.

–  SOME PEOPLE FEED IT TO THEIR PETS AND ANIMALS, MIXED INTO THEIR NORMAL FOOD.

I use cooked rice as the binding/ ballast for these veggie burgs. You can use a similar quantity of cooked millet, buckwheat, pearl barley, quinoa etc. They will all work well once blended up into a sticky paste.
The flavouring of this burger went East, but you can flavour it with whatever you like. Some suggested substitutes would be leeks = onions, tahini = peanut or other nut butters, sesame seeds = any other nuts (crushed for the coating), seitan = firm tofu or tempeh, tamari = soya sauce/ shoyu.

Seitan is an ingredient we use rarely.  It has a lovely texture, sometimes called ‘mock duck’ it is something a bit different.  Seitan is basically pure gluten and these burgers can easily be made gluten free by adding tofu or tempeh instead.  You won’t lose anything by doing so.

I fancied putting a crunchy coating on the burgers and a vivid yellow jacket, so I used polenta. You can leave them naked if you like, or go for breadcrumbs. Both would work very nicely indeed.  I like the colour of them without there jackets and its a little less fuss.

The Bits – Makes 8 Fat Quarter Pounders
3 tbs oil (more for frying)
300g leeks (finely sliced)
1 inch sq fresh ginger (finely diced)
4 cloves garlic (peeled and crushed)
3 teas sesame seeds (more for the coating)
3 tbs tahini
1 -2 tbs tamari
2 tbs brown miso
200g seitan (roughly chopped)
400g brown rice (cooked and cooled – leftovers are best)
1 tbs sesame oil
900g juice pulp

Crumb
1 small handful of sesame seeds
2 big handfuls of polenta (optional)
½ teas turmeric

Do It
In a large frying pan with a heavy bottom, add 2 tbs oil and your leeks, sauté until tender, add your seitan, sesame seeds and ginger, cook for another 3 minutes, then add the garlic, tamari, miso, tahini and 2 tbs water, cook until the liquid has mostly evaporated.

In a blender, blitz your cooked rice until it forms a thick paste. Sticky to the touch.
Add the leek mix and rice to the juice pulp, pour in your sesame oil and 1 tbs more oil. Pop in a fridge for ½ hour or longer to mingle and get together.

Scatter sesame seeds, turmeric and polenta on a plate, grab a handful of burger mix and form it into patties of your favourite dimensions. Place on the plate and toss the coating over the burgers, pat gently so that it sticks.

Preheat oven to 180oC.

Warm oil in a pan, we like to use roughly 3 tbs, and replenish when needed. For super crispy burgers, cover the base with 1 cm of oil and shallow fry them gently. This is amazing, but uses alot of oil, so we reserve it for what could be called, ‘special’ occasions. Fry the burgers on a medium heat for 2-3 minutes each side, until golden brown and warmed through. Top up the oil as needed.  Use a nice flat spatula and gently flip them over, veggie burgers need to be handled with a little finesse and care, otherwise they’ll look like a dog’s dinner (which basically means not very appetising at all unless you’re a spaniel).

After frying, place them onto a baking tray lined with parchment and pop them in the oven to warm for 10-15 minutes, this will ensure that the fat burgers have a piping hot middle.

Serve

However you like burgers. You may like to maintain the sesame theme, as we did, and serve with smokey hummus (smoked paprika mixed into regular hummus) and salad leaves (we used sorrel) or serve them in fresh bread with something creamy, a bean puree for example, and something tangy; pickles, pineapple, then the ubiquitous leaves; spinach, lettuce, sorrel?(it grows like weeds in our garden).

Foodie Fact

This is Wales and the leek is a national symbol of pride and rightly so for many reasons.  Leeks are said to come from Central Asia and were introduced to Britain by the Romans who believed they helped the voice (could this be why the Welsh are famed for their singing voices?).  The history of leeks in Wales goes back to the 17th Century when a Welsh army defeated the Anglo Saxons, to differentiate themselves form the enemy, the Welsh wore leeks on their helmets.

Leeks are a member of the allium family, along with garlic, onions and many others.  The alliums are filled with flavanoids, folates and anti-oxidants, which combine to keep our heart very healthy indeed.  All of the alliums have anti-inflammatory properties.  The healthiest parts of the leek are the bulb and just above, this is where the health-giving chemicals hang out.

Its that time of year in the Beach House garden, when you step outside, you’ll probably find some form of fruit landing on your head.  Its raining fruit! Jane very sensibly converted a load of our plums and apples into small pots of gorgeous chutney, I have to say my favourite bit is the label, all hand designed.  Family and friends, may we introduce you to your Christmas pressie!  Chutney bubbling is such a British autumnal pursuit, it seems heavily engrained in our consciousness, we were born here; on this fare island to conserve and pickle at will, then spread it all on a seeded cracker…….with a brew (cuppa tea).

Mum bought me a Bardsey Apple tree for my birthday back in May.  We are preparing a rockery out the back for it to live, but it has thrived this summer after missing the storms and gales that robbed the blossom from our more established apple trees.   Bardsey apple trees are very special, all can be traced back to the ‘Mother’ tree on Bardsey Island, off the rocky tip of the Llyn Peninsula (the eyebrow of Wales when you look on the map).  The Llyn is like Devon or Cornwall 20 years ago, especially the North Coast and Jane and I love to camp over there on the beaches and do some seal watching (they’re massive and quite sociable).  The Llyn is a special place and all roads over there lead to the mythical Barsdesy Island.  I wrote an article on my other blog about it, Bardsey Island – Island of 20,000 Saints and there is plenty of info here about Ian Sturrock and his single handed resurrection of the Bardsey apple tree.  Ian discovered it growing beside an old house on the isolated outpost and ancient pilgrimage site.  After testing the tree, he realised that it was completely unique, nothing like it in the world.  Since then Ian has grafted and grown probably thousands of the trees and exports them as far a field as the U.S. and Japan.  It amazing to think that we are eating almost extinct apples!

The Bardsey Apples themselves are succulent and golden and a very good ‘all rounder’.  They go great in a pie and a have a lovely sweet and sour twang to them, nice crunch too.  Our little tree has done a great job this year, its young branches heavy laden with apples for most of the summer, it has even survived the regular gales we get up here (even in summer!), Jane and I have had to pick it up a few times after finding it blown across the front garden!  Proper gales up here on Tiger Hill!!!!

Other than the apples, this year has seen a bumper crop for fruits of all varieties.  I have never seen or tasted blackberries like it, huge and super sweet and fragrant.  Our plum tree has gone made, its branches full of plums, reminding me of an abundant Mediterranean grape harvest, not a craggy, long suffering plum tree cowering behind a dry stone wall.  Add to that a huge raspberry harvest earlier in the year and from a fruity perspective, we’ve had a ball!!!!

I’m not sure how Jane dreamt this chutney up, we have been experimenting whenever we have gluts of things in Spain and Wales.  Whatever happened in the pan, it worked, this chutney is well balanced between sweet and sour and had gorgeous occasional chunky surprises like the soft raisins or a lump of plum.

Good organic apples are essential here as apples grown non-organically are normally treated with high levels of pesticides which you cannot get rid off, even after a good rub on your jumper.  Heres an article we wrote about the ‘The Dirty Dozen’ – The 12 worst foods to buy non-organic, not exactly a light read, but worthy information that we regularly incorporate into our fruit and veg foraging escapades.  Organic apples also have a habit of tasting loads better.  As usual, we are lucky sorts, having a bumper crop down at Trigonos has also meant that we can keep things local this year.  I absolutely love apples and Judy’s Discovery’s are up there with some of the tastiest, crunchiest apples I’ve ever scoffed.

I think its probably worth making this all organic actually, especially if your giving it to loved ones as a gift (that seems to be what we end up doing with chutneys and jams).  Our bodies love organic food and non-organic food puts serious pressure on our digestive systems, liver and kidneys, to try and deal with the poison. Its a strong word I know, but pesticide is undoubtedly a poison and when we eat non-organic, we have to deal with it somehow.  We fully appreciate that unless you are rather wealthy, very devoted or have an organic small holding/ farm, being 100% organic in life is a tall order.   We are mainly organic and there is something intangibly wonderful about starting the day with a 100% pure organic juice/ smoothie.  It probably all in the mind, but I am (almost) literally floating around the place after one of those beauts, charged with energy, it certainly cleans out your tubes.

If you live anywhere near a farm or even better, someone with an orchard, knock on their door with a hefty chocolate cake and get into some gentle chatter about how you enjoy apples and wondered if they liked cake.  Trade could happen and you may end up with bags filled with proper apples to make into things, eat whole or have a go at Apple Hooch (basically crush or juice the apples, leave in a clean bucket with a light covering and taste after a week, then everyday after that.  Eventually it will ferment and become alcoholic and you have just made the easiest and probably one of the healthiest forms of booze known to humankind.)

You can buy pickling spice from most shops, even the supermarkets have it.  If you are just making this as a one off, you can use roughly 1/2 teas of the following whole spices (namely, not ground): coriander, cloves, mustard, dried ginger, chillies, all spice and wrap them in a bit of muslin.   If you don’t have them all, add a little more of the others although I would go easy on the cloves and all spice unless you love ’em dearly.

If your planning on keeping this chutney for a while you will need very clean jars.  We keep a stash in the garage, a decent jar for us is a real gift!   Janes method of jar sterilising works every time and we regularly keep chutneys for months without any obvious microbial issues.

The Bits – 8 Medium Jars

750g tomatoes (peeled and chopped)

500g apples (hopefully from a local tree – chopped into small chunks)

120g Onions (chopped)

400g plums (stones removed)

15g pickling spice (tied in a muslin bag)

15g mustard

10g salt

150ml apple cider vinegar

110g sultanas

130g light brown sugar (unrefined)

Do It

Put tomatoes, onions and apple into a pan and stir, on medium heat, until they start to soften. Add a little water to stop it sticking if you need to.  Then wrap the pickling spice in a muslin bag and add to the mixture, stirring as it simmers.

Blend the mustard and salt with a little vinegar and stir it into the mixture. When the ingredients have softened add the sultanas, sugar and remaining vinegar.

Continue to simmer, stirring often until you have a thick smooth chutney.

While that is going on, sterilise your jars.  Give them all a good wash in hot soapy water, rinse and dry.  Put your jars on a baking tray and place in an oven, turn on the heat to 180oC.  Leave for 10 minutes and then pop in the lids (make sure the’ye not plastic!) and leave to warm up for between 5-10 minutes.  Remove them and leave to cool for 5 minutes.

The jars will still be hot so use a kitchen cloth to handle them.  Pack the chutney into the hot jars, wiping away any spillages around the lip.  Screw the lid on tightly, pressing the ‘button’ down on top.  This should make an airtight seal as the chutney cools.   Store for 2 months or longer before opening.  If you can resist its fruity charms!

Serve

Chutneys go with almost anything, but we found that this went like a dream with home-made loaf toast, or a breakfast pan-bread. Try it on the side with salads, or generously lathered on crackers with fresh sliced tomatoes and salad leaves as a midday snack!  We have also paired this chutney, with great success, with a Goan style curry (one with tamarind/ lemon in to make it a little tarty).  Bascially, you’ll find any excuse to eat this type of chutney!

We Love it!

Sweet and sour, can be eaten at anytime of day on almost anything, we can find little to not like about chutney, especially when its falling from trees!   Money does not grow on trees, but chutney does and it tastes alot nicer than a fiver (that’s 5 British pounds).

Apples are part of the rose family, a surprisingly comprehensive family of fruits and nuts including almonds, apricots, plums, cherries, peaches, pears and….roses.

We all know that apples are beautifully sweet, but this does not mean that the sugar is doing us harm.   Apple contain phyto-nutrients that actually regulate our blood sugar levels.  Apples have good levels of fibre, but due to the unique mix of chemicals within apples, this decent level of fibre is transformed into benefits that would normally be associated with foods containing vastly higher levels of fibre (long winded description, but cool non-the-less!)   Apples also allow us to absorb more goodness from our foods in the large intestines.    Apples do contain vitamin C, but not loads, they do however boast a load of polyphenols (which actually act as a sunscreen and are the main reason why apples brown so easily) and most of these chemicals acts as strong antioxidants.  Regular munching of apples will also lower bad cholesterol.

JOHNNY APPLESEED

The coolest story we know about apples is that of Johnny Appleseed (aka Johnny Chapman) who lived in the U.S. in the 1800’s.  He spent a large portion of his life wandering barefoot around the country, some say 100,000 sq kilometres, sowing apple seeds as he went which provided early settlers with food.  He was a generous and caring nurseryman who placed huge significance on the symbolism of the apple and conservation of nature.  Folk who plant many trees and conserve nature are surely worth remembering, in our eyes they are the real heroes.

Simple Blackberry Compote and Tips on Berry Foraging

We decided to let our brambles run wild this year, the back of the garden has sprung into a thorny, berry heaven.  Brambles are so prolific and need no encouraging to take over the joint!  We’ve had a bumper crop with kilos of blackberries flying into the kitchen and looking for a home.  I like what the brambles have done to the nether regions of our garden, creating a home for all sorts of cool creepy crawlies and a decent amount of little mice, which are big friends to our developing garden.

On our green and good isle, Britain, we are enjoying a good start to September, the extra rays of sunlight are resulting in some massive, succulent blackberries, so we’ve been making chutneys, wine (this recipe will no doubt appear here soon) and compotes/ jams. We are nicely stocked for the upcoming Christmas/ birthday present-athon. What better gift than a spicy chutney?

Blackberries are such a bountiful autumnal bonus and along with elderberries, are two of my favourite fruity treats. This is such an abundant time of year, it seems like all the warm weather we’ve had this year has come to fruition. Its hanging from almost every bush! It makes all that messing around with soil and late night slug raids on the veg patch worth while. We can eat from the land and there are few things more satisfying than a fruit salad made from you’re own (British!) garden.

Blackberries are native to Northern Europe and they grow as far north as Siberia!  Our berries, like most, just run wild all over the place.  You can be more organised and precise and run them up trellises etc.  But thats proper gardeners territory and we’re not there yet.

When making this compote, it will rarely get easier when playing with pots and pans. Two ingredients and a little heat, a jar and a cool place.  All you need for a knockout compote.  We took this in what is known as a ‘sugar free’ direction as a friend was visiting who is avoiding the heinous white powder.  A sprinkle of dates sorts out all of our sweet tooth requirements and also brings a thicker texture to the party.  Taste the compote after 5 minutes bubbling on the hob and add more dates if not quite sweet enough.  We are not sure how long it will last in the fridge, this compote is not made as a ‘preserve’ but should be eaten soon after cooking.  We’ve had a huge pot in the fridge now for over three weeks and its fine.  I did think that the reduced sugar content would shorten its life, but its still soldiering on.

Good blackberries are essential for this type of embellishment free behaviour, raid you local hedgerow to find the finest blackberries.  You will probably have a nice time too, just avoid those vicious thorns and if picking on a road, avoid speeding buses!

TOP TIPS FOR BERRY FORAGING

–  Never pick anything edible around train tracks, they regularly spray chemicals around the tracks to stop weeds growing.  Never pick berries that are cocked dog leg height, for obvious reasons.

–  Be careful not to squash berries when picking them, if you do, we suggest popping them into your mouth.  Try to keep your hands clean when picking fruit, the occasional scoff is very hard to resist (and all part of the fun).

–  Only pick berries that are plump and soft, the ones that fall off in your hand.  If you have to tug it, it ain’t ready for munching.  Leave if for a few days and then go back for it (blackberries grow and ripen quickly).

–  Use the berries straight away, that day.  If they look dirty, or you don’t fancy wild berry munching, submerge berries in cold water when you get home, give them a swish around and then leave them to drain, laying them out on kitchen paper when ready.  Handle them very gently, until they are dry-ish.  Then pop in the fridge covered loosely.  This works for us.  But as mentioned, the sooner they disappear into happy bellies, the better.

–  When picking blackberries, look at the white bit (where the stem should be), this is where maggots reside.  If there are maggots hanging out, ditch the berry on the ground and continue undeterred.

–  Don’t wear your new white shirt or trousers.

The Bits – Makes 2 regular jam jars 

800g freshly picked blackberries

2 big handfuls of chopped dates (to taste)

Do It

In a large, heavy bottomed pan, add the blackerries and dates, bring slowly to a boil and leave to simmer for 20-30 minutes, until the berries have broken down.  Stir regularly, do not allow the base or edges of the compote to catch and burn.

Serve

The resulting deep purple gorgeous-ness can be spread on warm toast with soya yoghurt or with chopped bananas and nut butter.  Very pleasant when spooned over your morning bowl of muesli or even frozen and made into a sorbet (we haven’t tried this yet).  You could also make a wonderful dressing with it, by adding balsamic vinegar and a touch of oil and seasoning.

Blackberries contain a low-calorie sugar substitute called Xylitol, which is low GI, meaning slow absorption into the blood stream.  Blackberries are high in fibre and are full, full, full of antioxidants like vitamin C and chemicals called phenolic flavanoids (good guys).

Sauerkraut is a well disguised super hero. Cloaked in cabbage and a fermented glow, Sauerkraut is a dish that is not only delicious, but is very easy to make and gives us some very pleasant nutritional boosts.

China, with its amazingly rich and ancient food tradition seems the source of picklin’. It is said that traders brought many of their tasty pickles and fermented fare from the Far East to Europe. ‘Sauerkraut’ is the German name for fermented cabbage, the French call it ‘Choucroute’ and British people just call it “Fermented YUM”.

The fermentation of Sauerkraut involves a number microbial species; one creates an acid environment for another to thrive and the process continues until the ph is acid and we are left with the perfect conditions for pickling a cabbage. You just need to form a decent brine, cover the vegetable with it and leave it until you like the texture and flavour. Any kitchnen will have the equipment necessary to produce a decent ‘kraut and you can play around with the veggies, mixing and matching different combos.

This time of year, early Autumn in North Wales, is the perfect time for Sauerkraut making. All the ingredients we use here are bang on seasonal and we’re stocking up our larder for another long winter time, when vividly coloured sauerkraut is a pleasant surprise to unearth (not that we’ll be here, we’ll be in Turkey!!!!!!!). A ray of purple light in the chilly grey gloom. We like the addition of apples here, it gives a hint of sweetness. Beetroots are also doing well up here and a little caraway is always welcome to the party, giving things an unmistakeable, East Europe feel (where this kind of preserving behavior is very popular). Red cabbage makes an appearance to add even more colour and a backbone.  Proper cabbage-ness.

The process may seem a little long winded, but I’ve tried to simplify it down and make it accessible to the ‘kraut curious.

This recipe is lifted, with a few BHK modifications, from the brilliant book ‘Wild Fermentation‘ book by Sandor Ellix Katz. We are really getting our teeth into all things fermented at the minute, coming soon, the easiest Apple Juice Hooch imaginable (you almost have to do nothing to make home crafted booze!) and a really simple Kimchee recipe.

If you are avoiding salt, there are many salt-free sauerkraut recipes out there. We are yet to try them, but they will definitely be interesting!

You can add virtually anything to sauerkraut and it tastes good (this is not a challenge!); different herbs, spices etc.  We’re just sampling an Indian spice stylee version (you will not be surprised to hear!!!!) Can’t wait for the pokey results.

Fermenting and conserving vegetables using brine is something that once picked up, will be a constant source of inspiration in the kitchen. Making things like the glorious Kimchee or pickled onions/ gherkins is a not to dissimilar technique and of course, homemade stuff tastes leagues better than our shop bought friends. Once you start picklin’ and preservin’, its hard to stop (strange as that may sound).

Get your ‘kraut on!

The Bits – Makes roughly 1 kg of ‘kraut

1 medium-sized red cabbage
2 beetroots
1 red onion
(roughly grate these)
1 apple (cored and sliced)
2 teas caraway seeds
2 tbs sea salt

Do It

In a deep bowl or pan (preferably with straight sides), add the grated bits, caraway and sprinkle over the salt. Mix in well with your hands, pack down as well as you can.

Pick a lid/ plate that fits snugly over the sauerkraut and place a weight on top. Use kitchen weights, bottles of wine, whatever is handy and weighty. This weight will force the liquid from the veggies and fruit, the salt takes care of the rest via osmosis. The brine will begin to form. As the liquid gradually rises, keep pressing the lid down regularly until the brine covers the sauerkraut (this may take 24 hours). This is what we want. You can now cover this with a kitchen cloth and leave for 2-3 days and let the microbials do their work.

Some cabbages contain less water than others, if after 24 hours the brine is not covering the veggies, add salted water (1 tbs salt per 250ml water). Check the ‘kraut every day or two and skim off any ‘bloom’ that may form. This is technically mould, but is rare and does not affect your sauerkraut as it is protected by the brine.

The sauerkraut is normally ready after 3 days, depending on the heat of the room (the hotter the less time it takes to mature, the cooler the longer it can be left). It should be tangy and crisp.

You may like to scoop some out and keep it in the fridge when it is young and leave it for a few more days to mature, noting the flavour difference and what is your preference. We like ours funky and leave it for 5 days-ish. If the sauerkraut is getting soft, its probably passing its best and should be eaten pronto.

Serve

We’ve been having ours all over the place.  Great for picnics and packed lunches, on toast and a nice little surprise package on a plate of salad.

Fermented cabbage and other Brassicaceaes (Bok choi, broccoli, cauliflower, Brussels sprouts, mustard, kale, spring greens and many more) have been shown to help against cancer. When the cabbage breaks down, it goes through a chemical shift and the resulting isothiocyanates have been shown to fight the big C.

Sauerkraut juice is also a magical tonic, regarded as a digestive aid second to none.

All you need for this easy and gorgeous vegan breakfast is a food processor and a fridge.  It’s that super easy, lightning quick and totally nutritious.  What a lovely, healthy start to the day.

Chia seeds are one of the healthiest foods known to man and are the nutritious seeds of a plant related to the mint family!  Funky grass never tastes this good!! This tiny little seed acts a little like a sponge – becoming slimy and swelling up when soaked in liquid.  Because of this, chia is best served mixed into something creamy and delicious…. in this case coconut milk!  It can also be sprinkle on things liked salads or smoothies, like little seedy nutritional bombs!

This treat breakfast is also a perfect way to use up all those inevitable fruity autumn leftovers you (hopefully) have lurking in the corners of your fridge.  We had some mango bits and some red-currants that worked perfectly, in a very random way.  Sweet and sour…..bhom and mmmmmmm!

Any autumn berries would be find here, blackberries and elderberries spring to mind (as I can see them growing outside the window!)  We have an awesome little project planned for the next couple of weeks when we make Beach House Garden Jam for the first time.  Our plum tree has sought shelter under a dry stone wall, all the protected branches (from the vicious gales we get up here) are flourishing and its looking like a bumper plum crop this year.  Add to that a healthy Barsdey apple presence from our new apple tree and the ubiquitous blackberries swathe that is taking over parts of the garden and we’re looking good for tasty, sugarfree jam this year.  Does anybody know any good sugar free jam recipes?

For a more local/ accessible sweet fruit, why not go for a plum.  Oh, plum and blackberries, now we are talking in a sensation and seasonal fashion.

The Bits – for 4

1 cup of vegan yoghurt
1 small mango (or sweet fruit of your choice)
4 handfuls of seasonal berries (whatever you have in your fridge)
500ml coconut milk
1/2 cup chia seeds
1 date (optional added sweetness)
1/2 cup of linseeds
4 drops vanilla extract

 

Do It

Blend the yoghurt and mango and pour into the serving glasses.

Make a berry layer on top using half of the berries.

Next blend up the coconut milk with the date (it sweetens the milk a little), pour out into a bowl, and mix in the chia seeds, linseeds, and vanilla extract. Put this in the fridge for 20 minutes to cool and swell (or for as long as you can resist it’s charms for).

When the chia mixture feels thick-ish, pour it on top of the fruit layer in the serving glasses. Finally top with the remainder of the fruit.

 

Serve

Can be kept in the fridge for a couple of hours but better served straight away – dive straight in!

The benefits of Chia seeds are far and wide, with vast quantities of Omega-3 good fats and fibre being particular highlights.  Try drinking a large mug of lukewarm water with a chunk of lemon squeezed into it while you are preparing this breakfast, the perfect de-tox first thing in the morning.

Fancy a quick dip!  This simple, creamy vegan dip is a great way to get more broccoli into our lives.  Which is never a bad thing!

Broccoli is one of the healthiest things sprouting from the earth.  Outrageously high in vitamin C and K.  Broccoli should not be cut before storing, otherwise the vitamin content decreases and should not be washed before popping in the fridge (a general rule with all fruit and veg) as this speeds up the spoiling process.

The nutrients in vegetables and fruits is directly effected by the soil and methods used in growing.  Organic is best, but even modern organic, industrialised practices leads to an depletion in the nutrients in soil and  subsequently the things grown in it.  In the Beach House, we wholeheartedly recommend befriending local producers/ farmers or even better growing your own.

This went down a treat at lunchtime today, perfect summer dipping fodder with the added benefit of being super healthy and light.

The Bits – Males one bowlful

300g silken tofu

2 handfuls sunflower seeds (soaked overnight = smooth dip, unsoaked = crunchy dip)

1 small head of broccoli (finely chopped)

1 small clove garlic (peeled and crushed)

1/2 lemon (juice and zest)

1/2 handful of fresh dill

1/2 handful of mint leaves

1 tbs good olive oil

Cracked pepper and sea salt (to taste)

Do It

Place all in a food processor and blend for a minute, scraping the sides down if you need to.   If you have used unsoaked seeds, expect a nice crunch to your dip, otherwise, make it nice and smooth.

With all your favourite crudites, we love to dip oat cakes into ours.

By birth, Broccoli is an Italian.  A member of the cabbage family and the green sibling of the cauliflower.  It is never good soggy, steam for 5 minutes max or serve raw.  Broccoli is a meal in itself, use the leaves and stems for different textures.

Broccoli has excellent anti-inflammatory and anti-oxidant properties, especially high in vitamin C.  We regularly add it to morning juices to gives us a gentle kickstart in the right direction.  Broccoli is also outrageously high in fibre, helping fight cholesterol and keeping our digestion ticking over nicely.  This green hero also helps our eyes and repairs our skin.  Only a handful of broccoli per day will have considerable benefits.

We have the distinct pleasure of giving a Sage Nutri Juicer a new home.  As regular BHK readers will know, Jane and I are partial to a morning juice.  Actually, without it we feel a little under nourished and lack the incredible zing! that a fresh juice gives you in your waking hours.  We had researched juicers and made up a shortlist, Sage where somewhere close to the top and definitely offer awesome value for money.  So when one arrived on our doorstep, delivered by the juice crane we presume, we unpacked it with joy and then things got really juicy!

Juicing is so very good for us its almost outrageous.  We find that a glass of good juice in the morning sates us until lunchtime at least.  We also feel cleansed and energised by the whole process.  Most fruit and vegetables can be juiced to good effect and this means that juicing is seasonal.  We find that broccoli for example makes a wonderful juice and the stalk even tastes a little like egg (which is more appetising than it may sound!).  We are also experimenting with recipes to utilise the pulp, normally discarded in the juicing process.  Nothing is wasted!

You cannot beat a fresh juice, preferably with organic fruit and veg when possible.  Please do not be fooled by processed juices or even worse, juices from concentrate.  Many of these popular juice brands are just vehicles for added sugar to enter your diet and we don’t need any more of that.  Fresh juices can also be high in sugar and it is worth balancing high sugar fruits and veg with lower sugar varieties, greens are a perfect example of this and bursting with nutrients and flavour.  They also make your juice look very cool indeed.

One more word on juicing and we’ll get on with our review.  Juices can be high in acid, that may, over a period of time, damage teeth.  Its worth bearing in mind.  Maybe brush your teeth after your morning juice (using non-flouride toothpaste por favor).

Our last juicer died in a dramatic flaming fashion, possibly due to one too many beetroots!  We think it was a little under powered and couldn’t really handle the hard stuff, root veg and all.  The Sage has no problems on this front, when you start it up, it sounds like an out-board motor and the high setting (there are two settings, high and low) cuts through hard vegetables like carrots like a knife through cashew butter.  We are also very impressed with the amount of juice extracted, the pulp is very dry and even on high setting (think helicopter taking off on your work surface!) the extraction of juice is brilliant.

The Nutri Juicer is easy to assemble and take apart and relatively simple to wash up (the bug bear of many a non-committal juicer).  The actual juice basket is as sharp as you’d imagine (like an uber grater), so taking care when washing it is important.  Sage have provided a great little scrubbing brush for this purpose. There are a few parts that come apart with ease and fit together with the help of a reassuring metal fitting.  It has a very solid feel when in use and is well balanced, no leaning or buzzing off around the work surface like some other juicers.  The discarded pulp flies out of the juicer into a purpose built bucket, which when lined with a compostible bag, makes for very easy disposal in the compost bin, no scraping or blocked sinks here.

The Nutri Juicer comes equipped with its own jug, which even acts as a measuring jug for the pedantic juicer or doubles up around the kitchen when baking etc.  As mentioned, the Sage is a powerful little contraption and this means that the juice comes out at a rate of knots, so the lid and rubber pouring spout are a must.  There is nothing worse that walls covered with fine drops of beetroot juice!  This power also means that the juice gets nicely whipped up and when extracted into the jug has a decent head on it.  We like to swill this around and combine it with the juice, but if you leave the lid on when pouring the juice, it will separate the froth from the liquid.

A large chute on a juicer is essential and the circular chute on this machine is perfect.  We have not found an apple that will not fit in there whole.  This juicer will take care of whole apples without breaking sweat.  Even if you are having a particularly hectic juice morning and the Sage overheats, it has a safety device which means that it will cut off and can then be used after 15 minutes of cooling down.

This Sage is a centrifugal juicer and we had originally thought about a masticating juicer, which is alot slower and really squeezes the life force out of things (which we then drink!)  They are generally more costly and there are only a handful of companies who make them, most based in the U.S.  This means added shipping miles and cost to the equation.  In the future, we’d love to try and ‘masticator’ but have been pleasantly surprised by the Nutri Juicer performance.  One criticism of a centrifugal juicer is that it heats the juice and kills some of the enzymes and goodness, but Sage have got around that with some very clever design.

The Nutri Juicer is a real looker, with a shiny metallic finish and simple design, it sits nicely on the kitchen surface.  Heston Blumenthal is involved with these guys and he seems to be a man who knows his way around a quality gadget.  The Sage juicers were also used in the documentary ‘Sick, Fat and Nearly Dead’, I haven’t seen it, but people in a bad way use juice to help them get fit and healthy.  I can see why they chose Sage, it is a well-priced juicer with brilliant overall performance.

Beetroot, Apple, Ginger and Lemon Juice

Makes 2 glasses of purple morning sunshine

1 large beetroot, 3 carrots, 4 small apples, 2 inch cube of fresh ginger, 1/2 lemon (juice only)

Scrub your veggies, do not peel.  Cut the very ends off your veggies, they can get stuck in the juicer.  Ensure no soil or woody stems get into the juicer.

Get your juicer up to speed, higher setting is best as these are quite hard veggies.

Add ginger, beetroot, carrots and apple in that order.  Most flavourful and colourful to least seems to extract more flavour and colour.  Makes sense!

Squeeze your lemon juice separate and stir in at the end.

Rainbow Chard & Red Lentil Harira

We regularly have an identity crisis with dishes, turning traditional fare on its head, ‘Beach House-ing’ things you could say.  We don’t mean it, no offence to the original recipes and food heritage in question, its just we like to play in the kitchen.  Here’s another traditional recipe we have messed about with, thankfully the results were rather delicious.

The best harira I have ever had was for breakfast (regularly) in the village of Chefchaeoun, known to many a traveller for its exceptional soup, jalaba (hooded cloak garment worn by most Moroccans) production and wonderful mountain location.  Its small winding streets hide many a wonderful eating experience, rows of blue houses (yes blue!) make this one of the most distinctive and stunning villages in that vast old land.

I moved there for a while, took up residence in a room situated on the walls of the Hamam (the communal bath), the warmest room in town.  You see its high up there and you wake chilled to the bone and needing a serious bowl of spicy sustenance.  Abdullah provided.

He was a wonderful cook, in nothing more than a space between two buildings, a few squat tables and two gas burners with huge steel pots, Abdullah created the authentic Moroccan dining experience for breakfast, lunch and dinner.  It was like a French Bistro without the pretense and price tag.  My kind of joint for sure.

For a few pennies, Abdullah would dish you up an epic bowl of full-on morning ammunition, sometimes with a tooth-less smile that shifted the early morning fug.  This hearty soup fuelled me on many a hike around the Rif Mountains and also on days spent lounging around playing card games with other punks holed up there. It came with a wedge of steaming flat bread, fruity olive oil and a small bowl of freshly ground cumin to use liberally.  I sat wearing my Jalaba (the over enthusiastic tourist that I am) eating with the local men in silence, canteen style.  No women.  In Morocco cafes and restaurants seem to be a male only thing.

I like cooking soups, its a soulful pursuit.  You don’t have to be to precious, there are rules, but not many, a little like Morocco itself.  This is the situation where I feel nice and comfortable.

Recipe Notes

Add just  2 cups of water to make this a hearty stew.

As with all soups/ stews, depending on the quality of your veggies, you many need to add some vegetable stock if the flavour is thin on the ground.

Rainbow Chard and Red Lentil Harira

The Bits – For 4 bowls

1 1/2 cup dried chickpeas (soaked and cooked)

750ml fresh water (or vegetable stock)

1 tbs olive oil

1 1/2  inch fresh ginger (finely diced)

3 cloves garlic (minced)

1 large onion (finely diced)

1 yellow pepper (diced)

3 ripe tomatoes (with flavour)

3 cups chopped rainbow chard (stems separated from the leaves)

1 teas ground turmeric

1 1/2 teas smoked paprika

1/2 teas ground cinnamon

2 teas cumin seeds

3 tbs tomato paste

1 lemon (cut into wedges)

2 tbs gram flour (or flour of your choice)

1 handful fresh coriander leaves (leaves picked, stems chopped)

1 cup red lentils

3 dates (finely chopped)

1 teas fresh ground pepper

2 teas sea salt

Do It

Soak your chickpeas overnight in a saucepan.  Drain and refresh with new water, well covered.  Add 1/4 teas bicarb of soda (this makes them soft and cook quicker), bring to a boil and lower heat.  Vigorously simmer for 20 minutes or until chickpeas are tender.

Warm the oil in a thick bottomed sauce pan, add your onions and cumin seeds and saute the onions for a few minutes until glassy, add garlic, pepper and ginger, stir for a couple of minutes and then add all chard stems (add earlier if they are a little tough), flour and spices, stir and warm through for a minute and now add your tomatoes, dates, lentils, tomato paste, warm through for a minute then add your water/ chickpea juice. Bring to a rolling boil and turn down heat to the lowest setting, add your chickpeas and leave to simmer for 20 minutes.

When ready to serve, bring back to just about boiling, add your chard leaves and coriander stems.  Re-cover and allow to cook for a few minutes.  Check seasoning.

Serve

A lemon wedge, topped with coriander leaves and a good glug of good olive oil.  Add green olives and brown rice to the table if you’d like to make this dinner.

For a special touch, we have it sprinkled with roasted and chopped almonds.

We Love It!

With winter lurking up the hill, we are getting back to our hearty soups.  Harira is definately one of our fav’s and it is very cool when you have pleasant memories attached to a dish.  Food has amazing transporting properties, the sights and tastes so evocative and alive in memories.

Foodie Fact

Spices are much more than just incredible tasting, the vast majority boast some quite brilliant health properties (as long as we don’t burn them in the pan).

Turmeric is a root similar to ginger and in its raw state has very potent flavour, its wonderful stuff.  Dried is the best we can normally do on this island.  It is peppery and sweet, warm and bitter and has even been likened to orange peel (if very fresh indeed).

Now the nitty gritty and real magic.  Turmeric is anti-microbial, anti-flatulent and strongly anti-bacterial. POW!

Brazil Nut and Cacao Pancakes with Papaya Sauce and Berries

A truly awesome start to any day, this just happened to be a Sunday.   This is a low-rise cake, with aspirations to one day be a pancake.

Brazil nuts, berries, papaya, this is a decadent affair.  Its the kind of thing you’d imagine the old Maharajas to be munching on in palaces on the Gangetic Plains.  What Im trying to say is that this is decadent in the extreme and packed full of nutrition.  I find normal fat pancakes, american style, a little on the heavy side.  These Brazil Nut beauties have all the flavour without the post breakfast sag.

They can be made raw with a dehydrator, but we forgot to put ours on the night before, so we baked them like a cake in the oven and they turned out very well indeed.

The papaya is a real treat, making quite a change to all the apples and blackberries we have been eating at this time of year.  What can I say, I am weak when it comes to papaya.  They are one of my favourite things for breakfast.  Even though the papayas that take the long flight over here are a little jaded and solid, I never tire of that unique flavour.  I also love the seeds, they  look like frog spawn.

THE BEAUTY OF BRAZILS!

Brazil nuts (or cream nuts) are always handled with great care in our kitchen.  They seem impossibly hard to harvest and grow, so when I get hold of some, I reserve them for the best occasions and finest of company.  When blended, they are so fatty, they resemble butter.  Brazil Nut butter is the only thing that can compare with ‘real’ butter for creaminess and outrageous fattiness, only the fat here is not all saturated and of course, all plant based.

Brazil nut trees are mighty things, some of the highest and oldest trees in the Amazon region, growing to nearly 50 metres tall!  Imagine climbing that to get to the nuts!  Each one of these massive trees will only yield around 300 brazil nut pods per year and take at least 14 months to mature.

I am a little dodgy with gluten it seems, it makes my eczema go wild.  Ground brazil nuts, like almonds, make a perfect substitute for flour and are much more nutritious.  Brazil nut oil is also a wonder thing, great for massages and cooking.  As if that wasn’t enough goodness for one nut, see the nutritional content in the Foodie Fact below.

The Beach House Kitchen has been as busy as ever, but you’d never guess it by the number of posts of late.  Below are some of our cacao/ chocolate-style creations for the month.  We’ve had friends and family visiting, so cakes have definitely been on the agenda.  We really should type more, we’re just too busy cooking and eating!

Pancake time!

The Bits

Pancakes – 2 bananas, 1 1/2 cup brazil nuts, 1/2 cup raw cacao powder (or normal cocoa if you like), 1 cup flax seed meal, 2 teas cinnamon, 1/2 teas bicarb of soda, 1 cup water

Sauce – 1 small papaya, 1 small orange, 1 tbsp sweetener of choice (maple syrup, rice syrup etc)

Finish with chopped bananas and berries (we used raspberries and blueberries) and a few chopped brazil nuts (we used almonds bizarrely).

Do It

Preheat an oven to 200oC

In a food processor, add your brazil nut and pulse them until broken down, but still a little chunky.  Almost to the texture of ground almonds, but not quite.

Add the rest of the ingredients, except the water, blend together and add the water a little a time.  You are looking for a thick, double cream like texture, a little thicker than a normal pancake.

Pour into a well oiled, circular spring form pan and pop in the oven for 15 minutes.  It will rise nicely into a low-rise cake of sorts, but still in the realm of pancake.

Whilst this is occuring, wipe out your FP and place all sauce ingredients in.  Blend until smooth.  Thats that.

Chop up and wash your toppings ready for action.

Serve

In slices, drizzled with the sauce and festooned with topping galore.  What a treat for those weary Sunday mornings when the loss of Saturday just seems too much.

If you are hungry and feeling extravagant (even more so!) then you can stack these pancakes into some form of wonder tower, layered with the toppings and sauce.

We Love It!

Dessert for breakfast is something we wholeheartedly condone in these parts.  ‘Nuff said.

Foodie Fact 

Brazil nuts are such a gift.  Individually wrapped, hanging from a beautiful fruit.  Originally a delicious source of protein for the people of the Amazon, now enjoyed by us all, they are fatty, rich and packed full of nutrients.

Being so buttery, Brazil nuts are high in calories and fats.  The great news is that a large portion of these fats are mono-unsaturated, making them good for the heart and preventing strokes.

Brazil nuts also boast great levels of Vitamin E (good for the cells) and Selenium (they are the highest natural source of this mineral).  Selenium works with anti-oxidant enzymes to keep cancer, coronary disease and cirrhosis at bay.

Brazil nuts are also good for the vitamin B’s and are full of minerals like copper and magnesium.

Chestnut Mushroom and Sage Farrotto with Balsamic Figs and Tofu Feta (Vegan)

You cannot say that we aren’t good to you, here are two recipes on one plate!  It also has to be said that we are quite good to ourselves, this is our Thursday night treat dinner (or ‘tea’ as Jane calls it).   A farrotto with the lovely nuttiness of spelt and gorgeously sweet glazed figs topped off with some citrus tofu feta.

Every Thursday, I’m normally off work and Jane gets back early, we head off to the big smoke (Bangor – which is a small town with a big Cathedral) and we pick up our veg box from a wonderful little farm in Bethel and then head to a cafe and maybe pick up some fruit.  Today these beautifully plump figs caught my eye, I haven’t had the pleasure of figs for an age and love them with a little balsamic glaze.

FARROTTO?

Farrotto is an Italian dish made with ‘faro’ which can be translated as spelt.  Whenever I cook with spelt, it seems timeless.  An ancient grain that has been used for centuries in these parts.  We normally keep spelt for sprouting purposes and love the chew of the stuff in a salad, it’s always a hearty customer.

This farrotto is simply cooked like a risotto, only for longer.  We used some local chestnut mushrooms, fresh garden herbs and giant organic spinach for a classic Italian combo.  We also had a little secret ingredient in our umami powder, a mixture of fine sea salt, seaweed and powdered shiitake mushrooms.  Add to that bags of garlic and a small pile of onion and we are talking Italy on a plate using Welsh produce.  Definitely how we like to do it in the BHK, world food, local bits.

Tofu Feta

FETA TOFU, TOFU FETA, ARE YOU MAD?

As a a vegan, you must eat tofu.  It’s one of the vegan commandments.  If you don’t go tofu, you’re sent to work in Mcdonalds by the vegan police.  It’s not pretty.  Eat tofu!

Tofu feta is a vegan staple and nothing like proper feta but is damn fine and tasty non-the-less.  It is a little tiresome with so much vegan food sharing names with the original cheese/ meat produce.  Its something we’ll all have to live with, but when trying vegan sausages/ burgers/ cheese etc please do not expect something remotely similar.   Approach with an open mind and preferably an open mouth!

As you’d expect from a tofu dish, this is full of powerful plant protein and is superbly lean (no fat in fact).  Always opt for whole bean tofu and you cannot go wrong, tofu is amazingly versatile and we even use it in desserts, check it out – strawberry tofu ice cream cake).

Firm tofu will crumble like a nice feta and if you pop this recipe in a blender you have what could be called tofu ricotta.  We don’t make the names, just the tasty food.

AUTUMN HARVEST TIME

It is that time of the year when the slight chill of winter is in the morning air and the trees and bushes are ladened with fruits and berries.  We had a surprise apple tree spring up a few weeks ago.  We thought it was just a little bush and wham!  Big green apples all over the place.  Result!

We will soon be harvest our potatoes and beetroots, blackberries are everywhere (which is great for walks, no need for a packed lunch!), we will be making rowan syrup soon and bramble jelly. We are also trying to eat as much rainbow chard as possible, it’s irrepressible, which is wonderful news.  We are really thankful for a great summer weather wise and the bounty of autumn is a fine time of year to be a cook, I’ve never roasted so many tomatoes.  It’s the time of year when spare jam jars become a rare commodity.

We love the British seasons but will be cheating again this year and heading to Spain for a large part of it, we then have plans to go further afield.  Eastward.  Hoorah!  I plan on making a pit stop in the Southern Med for a couple of weeks of eating my way around various countries (Jane is heading to Delhi), then waddling around some fascinating historical sights.   I promise to come back inspired with notebooks full of new recipes to try out and a belly full of hummus.

The Bits

Serves 2 hungry sorts

Farrotto

2 cups spelt grain, 3 cloves garlic (minced), 1 small onion (chopped finely), 4 cups large spinach leaves and stems (sliced), 1 cup dried chestnut mushrooms (soaked) or 2 cups fresh, 1 teas umami powder or salt, 1 teas cracked black pepper, 5 large leaves fresh sage (chopped finely, 1 teas dried), 2 teas fresh rosemary (chopped, 1/2 teas dried), 1 teas fresh oregano (good pinch dried), 1 cup mushroom soaking liquor, 4 cups good veg stock (kept warm – jug with a plate on top will do, or a covered pan on low temp), 2 tbs good olive oil

Balsamic Figs

2 plump figs (halved from stem down), 1 tbs balsamic vinegar, 1 teas brown rice syrup (or other sweetener), scant pinch of salt and pepper

Tofu Feta

1/2 pack firm tofu (150g crumbled with fingers), juice of 1/2 lemon, 1 teas sea salt, 1-2 cloves garlic minced (depending on how much you love garlic), a few basil leaves (optional – left whole in the feta when marinading)

A couple of handfuls of sharp salad leaves, rocket is perfect.

Do It

In a medium sized saucepan, warm on medium heat 1 tbs olive oil, add your onions and saute for 4-5 minutes.  When softened, add garlic and faro to toast a little, saute for 3 minutes further, then add your umami (salt), pepper and mushrooms followed quickly by the liquor all this whilst stirring well!  Intense.  You’ll get a nice hiss now, add your herbs and continue to stir well.  It’s all in the stir this dish.

When the liquor has reduced down, ladle in some warm stock, one ladle at a time as the farrotto becomes thicker and reducing, intensifying the flavours.  Wow, what a thing!  Keep stirring gently.  Cook on a steady heat for around 40 minutes in total, the faro should still have a little bite to it and the consistency of a loose porridge.  Finish with 1 tbs olive oil stirred in just before serving.

The tofu is best made the night before serving to marinade nicely.  Crumble the tofu in a bowl, add the rest of the ingredients and mix well with a spoon.  Serve at room temperature, like most things, straight out of the fridge is just not cool.  It’s a flavour killer.

In a small frying pan, get it hot, add you balsamic and sweetener then your figs straight after, there will be smoke here.  Exciting.  Move the figs around the pan to get well coated in the glaze, cook for two minutes on high heat then remove from pan.  The figs should have a lovely shiny charred look to them.

Serve

On one half of a dinner plate, pop a handful of leaves sprinkled with some tofu feta (add walnuts or other nuts here for a super special twist) a couple of fig halves, few twists of black pepper.

On the other half (remember this is two meals in one here!) spoon your lovely thick and gooey farrotto, a sprinkle of herbs and drizzle the whole plate with some fine olive oil.

We Love It!

Like eating in our favourite Italian restaurant in the Beach House.  Who needs to go out for dinner when the food is this good in the casa and you get your starter and main course on the same plate.  Unconventional, but we like it.  Great for sharing.

The citrus tofu and sweet figs work well and the farrotto is our new favourite risotto (if you catch our drift),

Foodie Fact

Spelt is a cousin/ neighbour of wheat, but is lower in gluten making it acceptable to some folk who suffer from wheat allergies.  Generally its better for the belly than wheat and makes a wonderfully nutty loaf in flour state.

Spelt is said to originate from Iran and is 7000 years old (how do they know these things).  Spelt has always been highly regarded and was offered to pagan gods of agriculture to encourage a fine harvest and fertility.

Spelt has a better range of nutrients than the vast majority of wheats, its full of minerals which our body loves.  It is a whole grain meaning it has a good level of dietary fibre, remember that grains are not the only soure of fibre, many fruits are full of it.  Take raspberries for example which have a comparatively higher level of fibre than oats and brown rice put together!

Morcilla De Verano – Spanish-Style Aubergines

A traditional vegan classic from the south of Spain, originally cooked to replicate Morcilla (black pudding basically).  You regularly see it served around Murcia, especially on tapas bar counters.  Its a great option for me in the land of jamon.  All Murcians know the dish and are rightly proud of it.  We’ve added some tempeh to the traditional recipe making it more of main event.  I love cooking aubergines right down with sweet onions and the addition of proper Spanish herbs and spices really pack a punch flavour wise.

Even though its called a ‘summer’ dish, we think this is great all year around.  Due to its slightly meat like texture, this is a dish to sate all.  We’re always trying to find dishes that will appeal to meat eaters aka most of our family and friends.  This is exactly what this dish was created for, people couldn’t afford meat and were looking for a delicious substitute.

You know, I love Spanish food and this dish really taps into the rustic heart of their magical range of cuisine.  Spanish food speaks of the land and culture.  It is the perfect expression of such a diverse land and for me, the cuisine of the South perfectly matches the arid plains and craggy red mountains.  Its rugged, its got bags of soul and it can take your breath away.

As some of you will know, my parents have a little place over in Murcia, Jane and I are regular visitors chasing the sun and the peaceful Med life.  This dish is based on a recipe passed to us from wonderful friends over that way, Fey and Jose.  It is actually Jose’s brother Andres recipe and he created it in an attempt to eat less meat (he’s a real maverick in the area, only 0.3% of Spain’s population are veggies after all).  I still have the little scrap of paper that he wrote it down on one night, for me that is real soul cooking.  This recipe is connected with so many memories of wonderful people and places, we can’t help but love it.  We have of course made our usual Beach House alterations, but this does not stray too far from Andres Murcian delight.  Gracias HombresX

Recipe Notes

Don’t be shy with the oil here, remember it is Spanish after all!  The dish should be slightly on the oily side which of course makes it very rich and satisfying.  After eating this for dinner Jane exclaimed “I feel like I’ve just eaten meat and two veg” rubbing her belly.  Always a good sign.

We decided that this is a star dish and very versatile.  It could be used to stuff a vegetable, a courgette or potato sounds perfect.  Of course, its great for tapas and picnics and is lovely even when served cold.

The Bits

2 small aubergines

1 courgette

1 small onion (all three finely diced and kept seperate)

2 garlic cloves (crushed)

2 teas fresh rosemary (finely chopped)

2 teas sherry vinegar

2 teas sweet paprika

1/2 teas cinnamon

1/2 teas all spice

2 teas fresh oregano (finely chopped) or 1 teas dried

200g tempeh (or tofu)

1-2 teas sea salt

1 1/2 teas cracked black pepper

Olive oil (for frying)

 

Topping

2 tbs toasted pine nuts or almonds

 

Do It

This is a three part saute/ pan frying routine, meaning a number of stages until your meaty morcilla is just right.  The trick is to get everything nicely caramelised, bringing out maximum flavours.

Start with your aubergine and courgette.  Add 2 tbs of the oil and warm on a medium heat in a heavy based frying pan.  Add the aubergine and saute for 8-10 minutes, until nice and golden and releasing some of their liquid, then add the courgettes and continue to saute for another 5 minutes.  This is the real flavourful aspect of the dish, the aubergines should be nicely browned and gorgeously sweet by this stage.  Set aside.

Next, your tempeh needs sorting.  Chop it up finely, it will resemble dried scramble egg.  Add 1/2 tbs of oil and saute for 5-7 minutes, until it is beginning to get brown around the edges.  Set aside with the aubergine mix.

Now, add 1 tbs oil, fry the onions in the same pan (wipe out if necessary).  Lower the heat if things are getting a little hot.  Stir, the onions should take 6-8 minutes to become golden, we don’t want to rush them and risk burning them.  Once they are golden, add the garlic and cook for 3 minutes, pop your vinegar in to a big hiss.  Now it’s time to spice things up.

Add your paprika, all spice and cinnamon, saute for a minute, stirring all the time and not allowing the mix to stick.  Then add your herbs and the aubergine/tempeh mix to the pan.  Stir well and warm through for a couple of minutes.  Your ready for the plate.

We served our morcilla with some steamed green vegetables (broad beans, runner beans and broccoli) with some pan fried lemon cabbage.

Pine nuts are just incredible little things.  Now so expensive, but worth every penny as a treat item.  They can make a real difference to a dish, especially when roasted a little to bring out the flavour.

Pine nuts are full of vitamin A, so you’ll be able to see in the dark.  They have good levels of vitamin D, for the bones and are also rich in vitamin C and iron.  They are quite fatty, which is obvious when you enjoy them, but its mono-unsaturated fats.  Pine nuts are also packed full of energy, great on cereal for a morning buzz and fizz.

Please don’t be put off by the sound of tofu in a dessert, it is a truly wonderful addition.  Vegans wouldn’t get very far without it!!!!  Tofu has a bad rep, this cake will change it all…..Tofu is a real hero and if bought organic, is a nutritional wonder to boot with a smooth as silk texture.

It really is amazing what you can do with a blender.  This is a light, refreshing take on a cheesecake, only frozen and with the added interest of being made with tofu.  It takes minutes to prepare and sits happily in the freezer.  This has to be one of the healthiest desserts we’ve made at the BHK with bags of strawberries and only a small amount of figs in the base.

Raw desserts are amazing, but some hide huge quantities of sugar, normally in the form of dried fruits (primarily dates).  It is natural sugar, but it is still sugar.  This dessert is lower in sugar than most, the strawberries go a long way to sweetening the cake.  Raw desserts are not always healthier than other desserts, its worth bearing in mind.

Silken tofu is a vegan staple for dessert, baking and all sort of textural fun.  Tofu is high in protein and is a wonderful vehicle for flavours, of course by itself it is bland, its like a blank canvas for a creative cook.  We have used it in cakes to substitute eggs and it does an admirable job.

The base of this cake goes all seedy.  We have found that going raw can cost alot more, a main contributor is nuts.  You can get through alot of them, especially when making desserts.  Instead of flour, you use cashews.  In fact, many of our staples ie rice, cous cous, pasta etc go out of the window on raw and are replaced by fruit and veg.  Certainly not a bad thing for the body, but it can hit you in the wallet/ purse/ piggy bank.  Seeds are the answer and almost equally as flavourful.  For a crunch base like this, they are perfect.  We have also been making butters with them and they are just as tasty as their nutty compadres.  Go seed!

–  Big C, very big C.  Super packed with Vitamin C (8 strawbs =150% rda)

–  High in fibre (meaning that even though they are beautifully sweet, they have a low GI index)

CLEANING YOUR FRUIT AND VEG

We’d always recommend that you give strawberries a good wash.  They can attract all sorts of wonderful creep crawlies and dusty dirt.  Here are some top tips for cleaning fruit and vegetables, especially those bought in supermarkets (i.e. not particularly fresh and probably covered with chemicals and pesticides)  This makes a HUGE difference:

This cake is not made with an ice cream maker, so expect a few ice crystals if eaten frozen.  We find it best semi-thawed.  Take it out the freezer an hour before serving and it should soften up nicely.

Makes one large tart, enough for six slices.

The Bits

Topping: 1 punnet strawberries, 1 box silken tofu (350g), 2 tablespoons of sweetener of choice (we used a cane sugar syrup), 1 teaspoon vanilla extract, ½ cup of soaked cashews

Base: 1 cup of dried figs (soaked), ½ cup ground flaxseeds, ½ cup sunflower seeds, ¼ cup of pumpkin seeds, 2 tablespoons poppy seeds

Do It

Easy as pie (cake)!

Put all the filling bits in a blender and blend so that you get a thick double cream texture.

Put all the base ingredients into a blender and blend so you get a sticky clumpy mixture that can be rolled into balls.  This will take a few goes, make sure you scrape down the side to incorporate the chunks.

Press the base into a 9” dish circular tart dish lined with cling film.  Pour in the filling and pop in the freezer.  We decided to make two small fat ones, so we could eat one who cake between the two of us.  Some call this greed, we call this the good life!!!!!

Take it out of the freezer before service and it will have a soft scoop ice cream feel with a nice crunchy base.  You will no doubt have some strawberries or other berries lurking around your fruit bowl, this cake is great with them.

We Love It!

The closest we’ve come to a really healthy dessert that doesn’t taste healthy (you know what we mean here).  This is the perfect summer cooler and has a nice richness even though dairy has not entered the building.

(Yawn)  Where do you get your protein in a vegan diet? (Yawn again)  The question on the tip of most carnivores tongue could be simply answered with TOFU.   Tofu is an amazing plant based source of protein and is now readily available in most parts of the world.  It has no cholesterol, is low in fat and contains a similar amount of protein to dairy and meat.  Firm tofu is also high in calcium.  As I mentioned above, just make sure it’s organic and not GMO.

Avocado, Coconut and Apple Breakfast Pudding + THE Best Way to Start the Day

This makes for a sweet and super nutritious start to the day.  Who says pudding is just for later in the day anyway!  We like to mix things up over here on the hill and this is dessert first thing, what a way to start the day!

A serious combination of goodness this avocado and coconut, to some a pair of fat filled fiends, but to those of us in the nutritious know, two full blown detox powerhouses of legendary proportions.  Am I exaggerating, very probably!!!!  But seriously, don’t be put off by all that fat talk, good fats doesn’t even make you fat anyway!  It’s all that refined sugar aka bad carbs, aka breakfast cereals…….  We haven’t even got started on how these actually taste, a mixture made in heaven for certain.

THE BEST WAY TO START THE DAY

The coco water here is a brilliant re-hydrator due to its high quantity of electrolytes, beats any ‘sports drink’ hands down, and we all need a good dose of hydration in the morning.  This is a dense pudding so get the body fully woken up before you attempt to spoon it down.  We’d always recommend starting the day with a pint of warm water with a squeeze of lemon or a tbs of apple cider vinger (avec mother) in it at least 20 mins before having your breakfast/ pud.  This is the best way to start the day with plenty of good clean fluids which will get the system well oiled, hydrated and sparkling early on.  A pint of water can only help at anytime, especially in the morning when our body has being shriveling up whilst we sleep.

This ‘pudding’ is utterly guilt free!!!!!  It has a firm kick of greens, with some wonder green powder, spinach (or kale, or cabbage leaves, whatever you have handy) and the wonderfully gelatinous linseeds.  This is what gives the coco pudding its super thick texture and pudding-ness.

Naturally sweet and creamy, this could probably be frozen and made into a splendid summer ice cream.  We haven’t tried this though.  Has anyone frozen an avocado?

The Bits

1 avocado, ½ fresh coconut plus coco water (chopped in chunks), 2 sweet apples (halved and seeded), 1 tbs ground linseeds/ flax seeds (soaked for 20 minutes in 3tbs water), 1 cup creamy coconut milk, ½ lime (zest and juice), 1 handful spinach leaves, 1 tbs barley powder/ wheatgrass/ spirulina

Do It

Blend it, all of it, until thick and creamy.

Serve 

Sprinkle things on top if you like, but its great just as it is and as always, not too cold please, set the flavours free!

What a way to get things going in the morn!  Its fair to say that Jane and I are not natural morning birds, we tend to blossom later in the day, especially when we’re feed some AM dessert!  Hoorah!  What a concept, this could be the next big thing (way bigger than the last big thing, which was just medium/large in comparison.)

Coconuts are one of the most nutritious fruits on earth.  It contains a load of lauric acid, which is known for antiviral, antifungal, antibacterial properties and also boost the immune system.

Coconut water (the stuff in the nut) has a huge amount of electrolytes, making it an ace in preventing dehydration.  In some parts of the world they use it intravenously to hydrate critically ill patients.

Coconut, although being high in fat, actually helps you loose weight!  Its good for the heart, rejuvenates the skin (keeping wrinkles away), increases metabolism and actually lowers cholesterol.

Only downside is, they don’t grow in Wales!!!!!

This soup is a real summer cooler, not something you can regularly say about a soup.  Its creamy (without cream) and hearty (without potatoes and butter), all down to our raw friends the cashew nut.  What a wonderful thing they are.  They make great cheese, milk and add wonderful richness to all things they grace.

Raw soups can be very hearty actually, adding sprouted grains helps and a few nuts or seeds go along way to building a full texture, bags of veggies also make a big difference.  It always impresses me how much goodness you can squeeze into a soup/ smoothie/ juice.  My juice this morning had around 10 different fruits and vegetables (beetroot, carrot, orange, lemon, parsley, basil, spinach, apple, ginger, sweet potato YUM!)  I have to say, afterwards, I was feeling quite high on the stuff.  High on food!  Juice on an empty belly is a magical thing and gets the ZING going in the AM.

This soup has so many good flavours in there (we love the horseradish especially) as well as being superbly nutritious.  We have been using olives a lot this month instead of adding more salt, they add a natural saltiness to dishes.  So this is a salt-less soup.

COOL AS A CUCUMBER

Cucumber in anything is cooling, it has that lovely quality which is perfect for a sweltering summers day.  I am a hot blooded creature and therefore the British summertime is a little tepid, but yesterday did  seem quite steamy. This soup made for a perfect dinner.

The cooling effect of cucumber is put down to cucurbitin and fatty oils found in the seeds that has a soothing effect on the body.  Cucumber is great for sunburn and can also have a cooling effect when made into a juice.   So drinking cucumber juice is just like putting coolant into a car!

THAT ‘RAW FOOD’ FEELING

Now that we have been eating raw food for over two weeks, our appetite has generally decreased, more accurately our cravings for sugar have decreased.  I find myself better balanced and not snacking hardly at all, certainly not craving coffee or alcohol or sweet things.  I forgot how powerful the raw diet is and how it impacts much more than just what you eat, you feel very different also.  Its like your charged with loads of clean energy and your brain is working at its optimum level and your body is thanking you all the time for being some damn good to it.  Its a pleasant place to be.

RAW FOOD EQUIPMENT

The only thing about getting started with a raw food diet is that you need the equipment.  We’ve gathered ours over a period of two years and are still short of a few bits and pieces.  We have added a dehydrator recently, which we have been enjoying.  A juicer is fairly essential and a food processor is important for all those soups and smoothies.  You could be raw without these gadgets, that is probably the next step for us!  Eating things that fall from trees and gathering berries from hedgerows.  That would be a really natural existence!  Without this equipment, I’d imagine it would be difficult, especially in Britain, to get a decent variety of textures and keep things interesting.  Munching on a raw carrot does have its limits.

Having said that, one of the best bits of equipment that we use is a humble peeler.  Known as a French peeler, it is vital in sorting out all these fruits and vegetables quickly and makes almost perfect ribbons of produce that can then be popped into salads or made into a raw pasta-style dish.

Makes two big bowlfuls:

The Bits

1 1/2 cucumbers, 2 garlic cloves, 2 small green apples (cored and chopped), 1 lime (juice), 1 cup cashews (soaked for 2 hours or longer in filtered water), 1 cup green olives, 1 cup parsley, 1/2 cup basil, 1 tbs horseradish, 2 tbs nutritional yeast flakes, 2 cups filtered water (more if needed)

Do It

In a food processor, blend your cashews first, until a thin paste is formed (add soaking water a little at a time), add the rest of the ingredients and a cup full of water.  Blend for 30 seconds and check consistency, it should still be a little chunky in places, add more water and blend again if required.

Serve

With a splash of brilliant, fruity olive oil and a pinch of cracked black pepper.

Cucumber has many beneficial properties, it is anti inflammatory and moisture regulating, as mentioned above, it also has cooling properties.  These are the reasons that cucumber is used in beauty products and the like, it smooths the skin and gets rid of dead skin cells.

Cucumber is also full of dietary fibre and is great for people suffering from heartburn, ulcers,acidity etc, for this reason it also helps with constipation.  It’s good for the joints, the kidneys and helps in the digestion of proteins.

Cucumber also has plenty of vitamin C and folates and like the vast majority of veggies, it contains a vast amount of other nutrients.  Overall, cucumber is a serious superfood!

Sprouted Wheat Grains, Apple, Carrot and Mustard Salad (Raw)

A wholesome, hearty salad that fits perfectly with our beloved Welsh summer (meaning torrential rain and mist, even the sheep look miserable!)  This is actually  unfair as today and yesterday have been complete beauties, check out the sunset below taken from the kitchen window.

Its a real eden like environment up here on the hill and our garden is loving the sun.  The beetroots and cavolo nero particularly are leaping out of the ground.  Slugs seem to be taking it easy, probably hiding in some damp slug den, planning there next raid. Cunning slime balls that they are.  Long like the sunshine!

RAW TIMES

Sprouted wheat grains have been a saviour for us in the past as they sate and bready sweet pangs that we have.  Sometimes when we sit down to some nice raw salads, soups etc we do crave a little bread to add something a little different. We will be experimenting with raw breads very soon, but until then we reach for our buddies the wheat grains.

It takes a couple of days for them to sprout and after that you have a lovely sweet and chewy grain to use in all kinds of good things.  They need to be soaked in filtered water for 24 hours and then placed in a sprouting tray or something flat, rinse them twice daily with fresh water and you’ll soon see the sprouts waking up.

Anybody who reads the BHK regularly knows that we are into our sprouts.  Anything sprouted just seems so full of vitality and energy.  They are so easy to do at home even we manage!  We have been experimenting with other grains, oat and buckwheat are two firm favourites.  We also have barley, which is next on the sprout list.  The grain sprouts bring something new to the menu, quite chewy and meaty in texture.

The star here is the dressing, pairing our local rapeseed oil, with mustard and apple concentrate, a brilliant combo of flavours.  The rapeseed oil is almost buttery and the sweet apples cuts through nicely. YUM!

Making dressings all hangs on what the ingredients of the salad is and the overall flavour you’d like.  This is a sweet salad, with the apples and the raisins, which Jane really loves.  We made the dressing slightly tart to counteract the sweetness, I always try and think of what the overall flavour of a salad will be when I’m making a dressing and adjust it accordingly.  A dressing can accentuate the flavour of great ingredients, or hide them behind bog flavours.  I think a balance is best, with the veggies shining through.

 

The Bits – For 2 Hungry Herbivores

2 cups sprouted wheat grains, 1 apple (decored and chopped), 1 celery stick (chopped), 2 carrots (scrubed and chopped), 2 cup raisins. 1 handful mint (ripped), 1 handful parsley (chopped), 2 handfuls rocket leaves, 1/2 cup sunflower seeds

Dressing – 1/2 cup cold pressed rapeseed oil, 1/4 cup apple cider vinegar, 1 tbs apple concentrate, 1 tsp English mustard, 1 clove garlic (crushed), 1 teas sea salt (to taste)

Do It

Chop all ingredients in a fashion that suits your mood.  We were in a post work hurry, so they became abstract, but satisfying non-the-less.  Also when the sun goes down, we are using candle light and it can be difficult to chop things and wash up when you’re in the dark.  In fact, many things are.  You need to slow down, read, then sleep.  Which is great.

Whisk up your dressing ingredients in a small bowl, making sure all is nicely combined.

Serve

Dressing on the side, it is quite potent and each persons taste will differ.  Salads are of course best served super fresh, straight off the chopping board.

We Love It!

A real local treat this one, welsh rapeseed oil, mustard, apples, celery, rocket…..almost  the entire bowlful came from our neck of the woods and some from the garden.  We love this time of year when the sun shines a little and plants begin to bloom and fruit.  Happy days indeed!

Foodie Fact
Rejuvelac is an amazing by-product of the grain sprouting process.  It is regarded highly by Ann Wigmore and all at the Hippocrates Healthy People, which we pay great attention to.  It is one of those things that boasts incredible health benefits, but there is something about it that is quite special, almost undiscovered by modern science.

Rejuvelac contains many enzymes aiding digestion and is filled with friendly bacteria which are amazing for us, helping us to release toxins in the body.  Add to that the fact that it is bursting with vitamin B, E and C and you’re looking at quite a beverage.  It also tastes nice, like a tangy lemonade with a hint of sweet grain.

Asparagus, Lemon & Pesto Pizza

I love May, full of birthdays (my sister and I’s) and the green spears of asparagus decide to make a brief appearance.  Surely one of the finest vegetables with a flavour like no other.

I’ve always found asparagus season intriguing, it’s so short and makes the availability of British asparagus so appealing.  You are forced to save up all of your asparagus recipes for this one little window of the year and then POW!  Asparagus begins to appear on everything.  So to celebrate this asparagus-fest, we popped ours on a pizza, there is something special about the flavours of asparagus that lends it to Italian cuisine.

It’s not often that we get a pizza on the roll, the original idea for asparagus on pizza came from a lovely blog friend Margaret over at  Pachamama’s Beautiful Food.  If you haven’t been over to this wonderful oasis of food and nature, we highly recommend a visit.  Margaret is sure to brighten up your day!

The ingredients here are pan roasted off in a little balsamic before topping the dough, adding a nice sweet/ sharp tang.  This pizza also comes with an oil that packs even more flavour onto this already heavy-laden crust.  We’d serve it in a bowl separately and let people help themselves.

Pesto we had left over and thought it sounded like a right good idea, this does make it a very rich affair, but adds a tonne of flavour.  The pesto we used was your standard green pesto, plenty of parmesan and basil.  A regular tomato sauce would also be wonderful here.  Lemon zest is also a brilliant addition and really shines through here, not something you see often on a pizza.

GREEN SPEARS

Asparagus is one of the oldest recorded vegetables and is said to originate from the Mediterranean, it was much revered by the Greeks and Romans (and still is!)  Asparagus is related to the onion and garlic, also the daffodil and tulip.  Asparagus is one of those strange vegetables that actually take up more calories to digest, than they offer the body, making it a negative-calorie vegetable (celery is another).  A celery and asparagus could just be the ultimate ‘diet’ salad.

Asparagus must be served as fresh as possible, if not the sugars present turn to starch and it loses flavour.  Asparagus is best harvested early in the morning and kept in the fridge in a plastic bag, this will keep them tender and conserve the vitamins present.

Normally I’m a brown flour chap, but a  little white does make things a lot lighter and a heavy pizza dough is just no fun.  It doesn’t matter what you do,where you buy it from, how Italian the flour is; if you don’t make your own pizza dough, it just ain’t the same!  Give it a whirl…..

The Bits

Pizza Dough

Our No Knead Pizza Dough is our favourite at the minute.  So easy.

Toppings

8 stalks asparagus (tops cut in half length ways)

1 tbs balsamic vinegar

10 cherry tomatoes

1/3 courgette (sliced at a 45o angle if you like)

1 block vegan mozzarella (sliced into 1 cm slices) or use cashew cheese – something that melts

1/2 lemon zest

Handful of pitted olives (chopped)

Pinch chilli flakes

4 tbs green pesto

 

1/4 cup yoghurt

Fresh basil leaves

 

Oil

2 garlic cloves (crushed)

1/2 lemon zest

juice 1 lemon

1/2 cup olive oil

1 tbs white wine vinegar

 

Do It

Make your pizza dough.

Get your toppings ready, in a small frying pan, add a little olive oil and begin to fry your asparagus with a drizzle of balsamic vinegar, when they are beginning to colour they are ready. Repeat process with tomato and courgette.

Roll out your dough on an oiled surface and either use your hands or a rolling pin to massage the dough into a pizza shape.  It will be resistant and needs a little coaxing, but will eventually rest into a shape.  For a golden crust brush with a little plant milk.

Pre heat fan oven to 220oC (get very hot).  If are lucky enough to have a pizza stone, pop that in now.

Spread pesto on pizza, leaving a one inch gap around the edges then scatter your toppings with glee on your dough.  Be reckless and generous.

Pop in oven and check after 10-12 minutes, may need another 5 depending on the potency of your hot box.  The base of the pizza should be cooked in the centre.

For the oil, simply add all to a bowl and whisk together.  This will keep well in the fridge overnight and may be all the better for it!

Serve

Hot out of the oven, spoon over some yoghurt, sprinkle with basil leaves and serve with a nice light green salad with a sweet-ish dressing.

Too easy to love this one, far too easy.  From zesty top to crispy bottom, its a all round champion!

Welsh Leek, Feta and Herb Pie

A fine pie with influence from Jerusalem (via the Caernarfon Library) and our local hero’s; the mighty leek (a symbol of Wales-ness and great taste), our neighbour’s eggs and the humble spud.  My friend Mandy also makes a pie not to dissimilar to this one, so its a tasty mix of all these things and more!  Surely with all that input, this pie can only be amazing!

We have been getting a few leeks out of the garden, but these are proper Welsh farm leeks (the home of the mighty leek, spiritual at least).  Great leeks are a good place to start most dishes, but especially pies.  I like to put leeks centre stage, they deserve it and should not be wasted in a stock pot.

LEGENDARY LEEKS

Legend would have it that St David (the patron saint of Wales) had the Welsh army wear leeks on their helmets to differentiate themselves from some pesky Saxon invaders.  The impact of this fashion accessory stuck and it is still worn on March 1st, St Davids day.

Yotam Ottolenghi’s cooking style also makes an appearance here.  He is a real food superstar, most things he touches come to life with flavour and texture. I popped down to Caernarfon Library and picked up a few books, one of them being Yotam’s ‘Jerusalem‘, a fascinating place and a fascinating book. Brilliantly written and photographed, the dishes seem intrinsic to the melting pot of Jerusalem, with its many cultures in one little place. I particularly liked the ‘Herb Pie‘ recipe and immediately went about corrupting it to suit my cupboards and fridge. This little pie popped up and we’re glad it did. I was half asleep at the shop yesterday and bought puff pastry instead of filo, I think filo would have been better, but the puff sufficed!  I would like to think one day I will make my own puff pastry and my own filo pastry, I would also like to think one day I’ll play guitar like Neil Young and write poetry like T.S. Elliot.  Stranger things have happened!!!!!

Mandy puts Goats Cheese in her ‘Leek and Walnut Pie’, but I prefer the tang of the feta here that stands up nicely to the other flavours and has the perfect crumbly texture for this filling.

Really get your leeks, onions, potatoes etc nice and golden and sweet, this will make a great contrast with the lemon, olive and feta.  Expect a multi-cultural party in your mouth here!

CRAZY CHEESE

You can really go crazy with the cheese here and Yotam put three cheeses into his pie (he seems to put three cheeses into alot of things).  Obviously we are working on a different level to Yotam and felt that one was more than enough, with a couple of blobs of good creamy Greek yoghurt to add a creamier feel.

LITTLE TIP – LEEK CLEANING

I find the easiest way is to cut off the very tops of the green leaves and check for any dodgy looking wilted leaves.  Then chop the leek, discarding the root end and loosing the hard outer leaves, you’ll be able to feel what I mean when you do it.  Then place in standing cold water and give them a good wash.  Sieve out and double check that no grit or dirt remains.

Cleaning and chopping a leek this way allows you to get the most out of the green bit, which is packed with flavour and all to often shown the bin.

This is the tastiest pie I’ve ever made, try it!

Welsh Leek, Feta and Herb Pie

Makes one large pie, a dish approx. 8″ by 10″ or there abouts.  Enough for four.

The Bits

8 new potatoes (cut into small cubes), 2 large leeks, 1 red onion, 5 mushrooms (most varieties will be fine), 2 sticks celery, 2 handfuls spinach leaves, 10 pitted green olives, 3 large cloves garlic. All finely chopped.

75g fresh dill (1 1/2 teas dried dill), 75g fresh mint (1 1/2 teas dried mint), 2 free range eggs, 150g good Greek feta, 2 tbs thick creamy yoghurt, 1 lemon zest, 1 teas honey, sea salt and plenty of cracked black pepper

1 pack of puff pastry (one roll or however you buy it).   1 tbs oil (for brushing)

Do It

Get some colour on your potatoes, in a large frying pan, add 1 tbs of your cooking oil (your choice here!) and fry off your potatoes for 10 minutes, getting some nice golden brown tints. Set aside.

In the same pan, add 2 teas more oil and get your onions softened, 3 minutes cooking, then add your leeks, celery, mushrooms, garlic, cook for a further 3 minutes until all is getting soft.

Then add your olives, spinach and cooked potatoes and then all your filling bits.  Stir in and warm through for 10 minutes on a low heat.  Cover and cool, now sort the pastry.

Pre-heat fan oven to 180oC

Roll out your pastry sheet to fit your pie dish, we just used a pastry lid, but you may like to add a base.  We are not huge fans of loads of pastry in a pie, the more filling the better!

Place your warm filling in the dish and spread evenly, then throw on your pie lid (delicately!) and brush the pie dish edges with oil.  Now press down around the edges with gentle force, sealing the pie.  I used my thumb, you may like to use a fork.  Trim off any excess pastry and make three slices in the centre of the pastry to release cooking steam.  Now give the pie a loving brush with some olive oil and pop in the oven for 20-25 minutes.

The pastry should be nicely golden and the pie filling steaming hot.

Serve

With a steamed green vegetables or a nice green leaf salad with a light, sweet dressing.  The pie has a lovely lemon-ness that will go nicely with a honey/ sweet dressing.  Its a heavy pie, flavour and texture, so keep the accompaniments light.

We Love It!

We  really do you know.  Love It!  Especially this pie, which had us both ‘Mmmmming’ in unison at its sheer deliciousness and flavour combinations.   Not your average pie and all the better for it.

Foodie Fact

Leeks are alliums, basically tall thin onions with a green head of leaves, they are used all over the world and don’t just feature in Welsh pies!  Leeks contain many vital vitamins and allicin that actually reduces cholesterol, they also contain high levels of vitamin A.
