After a strong nettle tea this morning, I feel supercharged and inspire to share the wealth of our green and bountiful friend.  The nettle plant is much misunderstood, yes it stings a bit, but there is so much more to nettles than that.  It is one of the healthiest plants that grows in temperate areas and is something we could all benefit hugely from incorporating into our diets.   Nettles are one of natures multivitamins (and the rest)!!

We love drinking nettle tea, its a complete health tonic and ideal first thing in the morning. The way we start our days is so very important, what we choose to put into our bodies after many hours sleeping can have a huge effect on our day and health in general.  Nettle tea is the perfect start!  It’s just one of those infusions that you know is doing you the power of good. Then you read a little into it and you’re certain. Nettles are packed full of pure plant power.

Nettles have historically been regarded as a superbly healthy food in many different cultures.  Milarepa the famous Tibetan sage and saint ate them when meditating for ten years in a cave, eventually turning green and gaining the ability to fly (I love these legends).  Sometimes I think we feel like exotic foods, with cool names, are our only source of sparkling nutrition.  However, there are so, so many super foods on our doorsteps (or nearby).

The nettle picking season is just around the corner and we’re very excited. Hopefully a few will be ready before we head over to the States. North Wales is quite a tough place to grow things however nettles love it and we go on massive picking sessions each year, drying them in our dehydrator or in the boot of our estate car (on very warm days). We can then store the leaves for tea and adding to soups and stews throughout the year. You can even pan fry the leaves or use them fresh, just like spinach. Its a way of stocking up on essential minerals, vitamins and a whole host of sparkling nutritional properties, not to mention that the tea tastes wonderful. Its in the realm of green tea with a few added nuances. Some say its an acquired taste, but I think most are?! When the leaves are fresh, they have a lighter flavour. Free wonderfoods fresh from the hedgerow, now you’re talking!!

Nettles grow prolifically throughout the temperate areas of the world.  They actually thrive on the waste we produce and interestingly, large patches of nettles may be used as sign of previous settlements that are now long gone from our countryside.

THE POWER OF NETTLES
One of Jane’s teachers, Susan Weed, is a firm advocate of all things nettle and writes about them extensively.  Nettles are also known as the devil’s leaf and even wild spinach, they are certainly equally delicious and even more nutritious.  There are literally hundreds of health properties attributed to this wonder plant, here are a few:

  • Nettles strengthen the kidneys.  Their Greek name is Urtica Dioica, ‘Uro’ meaning urine.
  • They are a powerful tonic, anti-anaemic, diuretic, anti-spasmodic, anti-allergenic, decongestant, anti-arthritic, laxative, antiseptic, anti-rheumatic, anti-asthmatic, expectorant……..the list goes on and on.
  • Nettles are ideal for women, especially during pregnancy, childbirth and lactation.  Nettles help with menstrual cramps, nausea and bloating.
  • A general relaxant that helps with hypertension.
  • Fresh nettle juice is antispetic and can be used as a kitchen spray, for washing skin.
  • Nettles infusions can be used to wash hair, leaving it shiny and thick.  They are also said to prevent hair loss.
  • Helps with gastrointestinal diseases, IBS and constipation.
  • Cures the common cold.
  • They can also help with hormonal, adrenal and energetic imbalances and the circulatory system.
  • They can be taken as an anti-histamine, which over a period of time, can cure ailments like hayfever.
  • Reduces gingivitis and prevents plaque when used as a mouthwash.
  • Nettles are known as a digestive restorer and consistent use of nettles strengthens lungs, intestines, arteries and kidneys.
  • Even the nettles sting has been shown to alleviate joint pain!
  • And many, many more……

You can definitely say that nettles are an all-rounder!

It is worth mentioning that if you are taking certain pharmaceuticals, you should seek a doctors advice before taking nettles regularly.

NUTRIENTS

Nettles are especially high in calcium, vitamin C and iron.  They are also high in protein and fibre, a whole host of minerals and many more vitamins.

The whole plant is basically a powerful medicine, from roots to seeds.  It is especially good for ‘pale and pasty types’.  I like this little rhyme:

“If they would eat nettles in March and drink Mugwort in May, so many fine maidens would not go to the clay” (Funeral song of a Scottish mermaid)

We seem to have lost touch with so many of natures gifts that surround us throughout every season which are there to give us health and vitality.  I believe that in each environment we can find the nourishment we need to thrive, that is, if we have the knowledge and are inspired to seek them out.

HARVESTING NETTLES

Nettles are easily identified by most, we’ve all had a little incident with them as children.  Like any plant, if you are not completely sure, don’t pick it.  There are many different types o nettles, this is especially true if you’re traveling to other countries.  Some have a very nasty sting.

We travel with marigolds and bags in nettle season and when we see a good patch, we harvest.  For eating fresh and drying, take the tender, young leaves from the top of the plant.  The first four is a good rule of thumb.  Like many plants, the growing energy is concentrated in the upper plant, this is what we after.  Nettles become more fibrous as the season goes on, so get in there during early spring although some young paler nettles will grow in shaded areas until late summer.  Always pick nettles, and any edible plants, away from man made signs of poisons and ground contamination.  This means away from roads, railway lines etc.  Many foragers also avoid plants near popular dog walking areas, or at least pick above leg cocking height!

COOKING NETTLES
Nettles are easily transformed into a delicious edible green leaf vegetable.  Simple blanch them in boiling water, this breaks down the formic acid which stings.  You can leave them to steep to make a lovely tea or use as you would any leafy green.  Try a Nettle Aloo or Nettle Soup.  We love them in smoothies and iced teas.  Nettles make for a great pesto and can be used in place of basil and we especially like nettle hummus an stirring the leaves into hot pasta.

NETTLE JUICE

Rinse young leaves and stalks in water, place in a mechanical juicer or place leaves in warm water and leave to steep for 30 minutes.  Place in muslin cloth and wring out the bright green juice.  The juice will keep in a fridge for one day.

PAN FRIED NETTLES

Blanch the nettles leaves in just boiled water.  Save the water as a stock or drink it.  Strain the leaves well.  In a frying pan, add some oil and garlic followed by the leaves.  Fry for a minute and served topped with pine nuts or almonds.

TINCTURES

Jane also makes a wonderful nettle tincture, basically pop lots of leaves into a kilner jar and cover with vinegar (you can also use alcohol like vodka or gin).  You should use young leaves,  dried or fresh are both fine.  Leave for a month or more (the longer left, the stronger the tincture) and then strain with muslin cloth.  Place in small bottles and use the tincture for eczema, psoriasis, allergic rashes, rinse in hair to treat dandruff, taken internally it is known to treat hayfever.  Take 1 teas poon every morning as a preventative or three times a day to treat ailments.

Dry the leaves without blanching them.  As I mentioned, you can do this in a warm car with a couple of windows slightly opened.  On a very sunny day, thinly lay out the nettle leaves on news paper.  Leave for a day and check that the leaves are nicely dry and crisp.  If you are lucky enough to have a dehydrator at home, dry as you would kale or other leaves.  It won’t take long.

The strong fibres of the nettle plant have been used to make paper, sails, bags, cloth (think a silky linen) and makes a very strong string or rope (fifty times stronger than cotton).  Nettles have been cultivated in Mexico for 8000 years for these purposes.  Nettles can also be made into a dye, the leaves for green and the stalks for yellow.

Nettles are a gardeners delight.  They are hugely nourishing to the soil and are amazing on compost heaps.  They can be brewed into a homemade plant fertiliser packed with nitrogen compounds (this stuff stinks by the way) and can be grown as a companion crop with tomatoes and aromatic herbs.

I still think that it’s incredible that nettles are not sold in greengrocers or markets.  It is a shame that more people are not benefiting from this stunning plant.  I’d say if you’re taking multivitamins, why not try nettles instead.  They’re perfectly natural and free!

Drinking nettle tea and eating fresh nettles in stir fries, soups etc will ease and energise the circulatory, immune, endocrine, nervous and urinary systems.  Like I said, an incredible overall tonic and they literally grow on trees (or in small bushes).  If we all used nettles wisely, pharmacies would go out of business!  Nettles are good for us in ways that we don’t really fully understand yet.  The nettles season is coming, don’t miss out!

I think it is so rare to find a publication that is based purely on love and positivity.  The focus in the Barefoot Vegan is creating a better world for all, a powerful message that is deeply effecting and in the magazine you get all the good news!

There are so many people out there pulling in the right direction, making efforts and putting energy into creating a more peaceful, accepting and harmonious global society.  The Barefoot Vegan is like an antidote to what we see on the news or read via the media in general.  Its empowering and full of hope, without which, positive change is hard to muster on any level.  We’re off to the Americas for a while very soon, but hopefully I’ll be able to write an article or two on the road.

There are so many reasons to feel proud of each other and the efforts we make, no matter how small, to reverse the trend of a depressive world view and destructive approaches to living.  Going vegan is massive step in so many wonderful ways and has profound effects.  It’s much, much more than simply changing our diet.

The Barefoot Vegan is like a sanctuary where optimism, compassion and peace are virtues to be celebrated and are ultimately realistic and hugely transforming.

Vegan Myth Busted! – Top Plant-Based Sources of Iron

There is still a popular food myth doing the rounds that vegans are generally short of iron in their diets or it’s difficult to find natural sources of iron without taking supplements and the like.  This is way off the mark.

“How do you get enough iron eating only plants?” A question I get asked quite a lot.  The answer is simple; loads of very accessible, inexpensive, plant-based places. Eating a balanced vegan diet, the question is more, “Where do we not get our iron, protein, vitamins, other minerals……..?” A vegan diet allows us all to thrive!

The WHO consider iron deficiency to be the number one nutritional disorder in the world. 80% of the world population may be iron deficient, so it is always a good idea to keep topped up and learn a little about plant-based nutrition (Vitamin B12 for example).

Iron is essential to health and basically helps our blood carry oxegen to our bodies tissues. Our body stores iron but we still need to eat a reasonable amount per day, roughly 18mg for adults  is advised. Women who are menstruating will need more, this can lead to cravings for iron rich foods.

The iron found in plants is different than that in meat. When we eat meat we are basically directly ingesting the iron in the blood, organs and muscles of the animal. It is easier for the body to access. We need to be aware that iron in plants will not be as easily absorbed.  But no worries, this is easily sorted.

Plant-based iron is best absorbed when combined with Vitamin C and it is also best to avoid tea and coffee if you’re looking at helping your body absorb plant based iron.  They both contain tannins and calcium which hinder absorption.  So leave a good half an hour before or after eating until you put the kettle on or eat high foods high in calcium.

THE IRON RICH ‘HIT-LIST’

Many beans like pinto, kidney, black eyed and black.  Lentils. Soya is best fermented like miso, tempeh. Tomato paste or sauce. Potatoes, spring greens (collards), spirulina, tahini, whole wheat, bulghur wheat, oats, nuts, kale, pumpkin seeds, mushrooms, quinoa, raisins, peas, sunflower seeds, apricots, watermelon, millet, almonds……I’m getting hungry here!

Popeye did well on it, but spinach is actually not the best choice for iron.  It contains acids that inhibit absorption but Vitamin C again can help.

You can see that many of the staples that most vegans eat are good sources of iron.  1 cup of lentils for example contains almost your RDA for iron and black strap molasses is worth a mention, 2 tbs contains 7.2g iron.

TIPS TO GET IRON INTO YOUR DIET

Seasonal fruits can also be a great source of iron so grab a bowl of oats topped seasonal fruits for a nutritious and iron rich way to start the day.  Some vegetables, like Broccoli and Bo Choi, are rich in both iron and Vitamin C.  Which, as mentioned, is a great combo!  Snacking on dried fruit like raisins and apricots or seeds, eating beans with greens, adding tahini or molasses to dishes or dressings, are all good ways of introducing iron rich foods into our everyday meals.

CALORIE COUNTING

If you are counting calories, it is worth mentioning that sources of plant based iron are obviously the better choice. Cooked spring greens (collards) for example contain 4.5mg of iron/100 calories, whereas Sirloin Steak weighs in with a mere 0.9mg of iron/100 calories.

It has also been said that cooking in iron pots can help.  Cooking a tomato sauce in a cast iron pot can increase the iron levels ten fold!

In a balanced vegan diet there are so many sources of iron and vitamin C that a lack of iron is no major concern.  There is also no evidence to suggest that vegan and vegetarians have a higher incidence of iron deficiency than meat eaters.

As you can see, vegans are sorted for iron!  Another vegan myth busted!!

People Food Music – Permaculture in rural India using community, food and music

I spent time at Solitude Farm in Auroville, Tamil Nadu (India) a couple of years ago.  I was writing Peace & Parsnips at the time, something I did in six different countries whilst travelling around the world.  In a strange way, the more I travelled and spent time with local, proactive farmers, the more I realised my passion for ‘local’, ethically produced food.

Wherever you are in the world, local food plays a critical role in so many ways; it connects us with our local environment, it maintains our health and provides our bodies with all they need to thrive and it can help us build stronger communities, sharing knowledge and working together in positive projects based around an ethical approach to life and society.

Krishna was always very kind, Solitude Farm is a place of action and energy, but I occasionally spent late afternoons in my little hut keeping up with the book submission deadlines.  Outside of my typing, I spent plenty of time harvesting papayas, watering and tilling the parched Tamil earth, learning from Krishna about the incredible flora and fauna and cooking.  I did loads of lovely cooking.

I cooked in the Solitude kitchen with local women, who after weeks still referred to me in Tamil as ‘the tall beardy man’.  We prepared the dishes over wood fired stoves with a whole host of exotic ingredients; radhas consciousness (a flower), varagu (like millet), green papaya, plantains, banana flowers, red amaranth leaves……so many wonderful ingredients that we picked freshly every morning.  The food was naturally and effortlessly vegan.  It was an awesome experience!

I have never seen such fecundity, in one small field we had a diverse range of fruits, leaves, nuts and roots to eat.  One small field could provide many, many people with a diverse and nutritious plant-based diet.  At Solitude Farm I saw a vibrant window of what farming could be, when we turn our attention away from the industrial and towards more sustainable, sensitive and enriching practices, namely permaculture and the teachings of Masanobu Fukuoka.  The earth provides us with all that we need and nature is perfect!

Soltitude Farm was such a fertile place to write and be, a place of inspiration in so many ways, much of which hit the pages of Peace & Parsnips.  The sense that when we pull together, anything is achievable and that the future is bright when we turn to the earth and watch, learn and most importantly, act.  The answers to all of our problems are here; in people, food and music.

I hope you get the chance to read more about Krishna’s wonderful project and help to support it, allowing the people of Tamil Nadu access to invaluable training and knowledge that can transform lives and communities.

There are only 12 more days to go to contribute towards this important project and there are some inspiring ideas for last minute Christmas presents.  Really unique and precious.  Embracing and learning about local food is at the heart of a better tomorrow and I thank Krishna for his constant dedication to spreading the seeds of positive change, from the heart to the plate.

World Meat Free Day Today! Is meat production costing the earth?

Today is World Meat Free Day  ‘One Small Step For Our Planet’!  I’ve been reading a lot this morning about the negative effects of the global industrialised animal industry.  There is no easy way around it, it is shockingly bad for the environment.  I don’t want to say too much about it really, the figures speak for themselves.  Here are just a few eye opening facts. Presently, our taste for meat is costing us the earth:

  • According to scientists at the World Bank, animal agriculture is responsible for over 50 percent of anthropogenic greenhouse gases (AGHG) produced world-wide, making animal agriculture responsible for more AGHG than all forms of transportation combined and tripled.
  • Animal agriculture is responsible for more deforestation that any other industry in the world.
  • Animal agriculture uses more fresh water than any other industry in the world, which contributes to water scarcity.
  • Animal agriculture is the world’s largest polluter of fresh water.
  • In the United States, on-the-job injuries among slaughterhouse workers are three times higher than in other factory jobs.
  • And, according to a recent report by the United Nations, 70 percent of all diseases in humans are linked to animal agriculture.
  • Everyday, 10,000 children die from starvation and one billion people suffer from malnutrition.  In the U.S. alone, the amount of grain fed to livestock could feed 840 million people per year.

Meet Our New Author Lee Watson

With his debut cookbook Peace and Parsnips coming at the beginning of May, we decided to catch up with our new author Lee Watson. Dynamic about vegan food without being preachy, Lee Watson is the man set to revolutionize the way we think about veganism…

Can you tell us a bit more about your book Peace and Parsnips?

It’s a chunky slice of vegan vibrancy; packed with colourful plant based dishes that will appeal to absolutely everyone. There are recipes here for every occasion and every taste. Vegan food takes a fresh and creative approach to cooking anything from burgers and bangers, to luxurious curries, creamy soups, hearty bakes, zesty salads, funky nibbles and a whole host of gorgeous drinks. The dessert section is packed with richness and decadence and also loads of healthy sweet treats. I wrote the book with my friends and family in mind, who are mainly rampant carnivores; they regularly gobble up the recipes and loved ‘em! ‘Peace and Parsnips’ shows that veganism in primarily delicious and secondarily, brilliant for you and the plantet.

If you had to pick one recipe to show off what Peace and Parsnips is all about, which one would it be?

I think there are quite a few corkers in here, but the ‘Pecan and Portobello Mushroom Burger’ is a real hit. Carnivores and vegans alike rave about it. It even looks like a normal burger and has fooled many, it has an intense taste and is super rich and flavourful. Vegan food is always surprising; it feels so fresh and new, even though the term ‘Vegan’ has been around since the ‘40’s. Veggie burgers have a bad rap for good reason; they are generally not the best. In ‘Peace and Parsnips’ I’ve really focused on making the burgers something special and to top it all off, they are very, very healthy! It’s a win, win thing.

What advice would you give to someone looking to cook vegan food for the first time?

There is really no great difference in cooking vegan dishes, except that they are roughly a third of the price to shop for! I guarantee that if we went into your kitchen together, you’d have all we needed to make a vegan feast. There are generally a few more ingredients to play with as we can’t just rely on meat or cheese to give us flavour. We are drawn into creative corners and this leads to all kinds of wonderful new things. With just a few key ingredient switches and a focus on glorious vegetables, fruits and legumes, you’re well on your away to becoming vegan. The possibilities in a well-stocked veg basket and a handful of cashew nuts are endless. Having an open mind to trying something new is key.

Do you come from a long line of great cooks or are you the first passionate foodie in your family?

My family has always appreciated good, honest, home cooked food. We hardly ever ate out and all love to cook. The Watson’s are from a small mining village in Durham and my granddads would always be outside with a hoe and fork, getting busy in the veg patch. I learnt alot about beetroots and radishes from them. We had a lot of meat, but Mum was always health conscious and was the first person in the village to try making a homemade cheesecake. Even when my sister and I were ungrateful teenagers, Mum always prepared fresh dishes and put loads of effort into feeding us a balanced diets. I owe it all to Mum (you knew I was going to say that though!)

Here at The Happy Foodie, we’re somewhat obsessed with cookbooks. Can you tell us a bit about your favourite?

I’ve only recently been buying cook books; I used to just pick recipes up like a happy magpie, scribbling them into my notebook in libraries or book shops. I was given Oh She Glows recently, a brand new vegan cookbook from the US. Its one of those books that you want to cook every recipe right now! Its gorgeous. There are actually so many inspirational vegan cookbooks from the US; it really is a hot bed for very creative cooking (which happens to be plant based). The ‘Veganomicon’ by the brilliant Isa Chandra Moskowitz is a massive hit state side, but then again, all of her books are interesting. Hopefully ‘Peace and Parsnips’ can bring a British/ European take on all things vegan and veggie. It’s a style of cooking that is evolving very quickly, always looking to the future.

Who would be your dream dinner party guest and what would you cook for him/her?

I would say the Dalai Lama, but he likes early nights, so it would be Robert Plant who just lives a few valleys away up here in North Wales. I’d invite him around for the Kashmiri Turnip Curry with Beetroot Raita (in the book). Then we could have an after dinner sing song around the fire pit with some spicy chai’s.

Is there an ingredient you are really enjoying cooking with at the moment?

I was cooking loads of plantains recently in South India and I love their versatility. Mashed, fried, roasted, boiled…always delicious.

I also love turmeric, its tastes like a peppery orange, crossed with some ginger. It seems to sneak its way into far too many of my dishes and there is no mistaking it! It has some supreme health giving properties; it’s a very, very powerful anti-oxidant. Really things like turmeric, cinnamon, ginger, coriander etc. are more like medicines than simply food. Potently wonderful foods. Try adding a teaspoon to a smoothie. Quite a transformation.

I also love flax seeds. I think many vegans do. They are miraculous little pockets of radiant nutrition. They are ridiculously high in fibre and omega 3 fats and are packed with anti-oxidants, even higher than things like blueberries. Ground up, they can be added to bread or cakes, or easily sprinkled onto cereal or to thicken stews. I love ’em!

What excites you about the British food world at the moment?

Its openness, diversity and creativity. We are well placed, having one foot in Europe, so we are grounded in many old and brilliant food cultures, but are now freely spreading our wings to the farthest reaches of the globe. British food is not dogmatic and we are open minded to new flavours and ideas. I think that’s why Britain produces so many brilliant chefs. With the internet and more options to travel around, Brits are becoming well versed in all sorts of magical and remote food cultures. The British food world is a vibrant kaleidoscope of global flavours and influence, the restaurant scenes in our cities and towns reflect this. There is never a dull moment and vegan food incorporates this enthusiasm with a positive ethical and environmental twist, as well as whole new dimensions of deliciousness.

WHY VEGAN?

What we eat has never been so important.  In many countries we are blessed with the choice to eat what we want.  At the B.H.K., we believe that going vegan is the most important decisions you could make in terms of your own health, the planets health and the welfare and care of animals.  Veganism is the ultimate expression of peaceful intent for the future.  We will never judge anyone for doing otherwise, we were both very much into bacon sarnies, but here is how we feel now and how our opinions and lifestyles have changed.

Veganism is just a name, we all eat loads of vegan food everyday.  If you eat vegetables, legumes, nuts, fruits, you are part vegan already!  Hoorah!!!!  Choosing a vegan diet, even if its just every now and again, is not about sufferance.  You are not giving anything up, you are actually gaining loads!  Vegan food is outrageously flavourful and moreish, naturally leading to weight loss and energy gains.  For us, thinking vegan lead to new and healthy habits and highlighted the importance of a balanced and nutritious diet.  Taking a step towards veganism leads to a giant leap forward in our collective sustainability.  All we need are open minds (and mouths!)

TAKING THE PLANT-BASED PLUNGE

Jane and I have been vegan/ vegetarians for a while now, and around two years ago, I decided to take the plunge and become full-power vegan (Jane is still eating her homemade Kefir and likes a very occasional Indian Railway style Chai).  If you look back into the Beach House Kitchen library, you will find vegetarian dishes with cheese and egg, but no more.  Our recipes are full plant power and loving every plateful!  We have gone through the whole process, from extremely carnivore to content herbivore and we know exactly what its like to be curious about a vegan diet.  I’ve always loved cooking vegan food.  We ended up giving bits and pieces up and finally blooming into full blown vegan-hood.

We were first attracted to vegan food by its creativity and vibrancy.  It really seems like the food for a brighter future.  It all seemed so beautifully fresh and tantalising.  In our experience, eating vegan food has made us feel lighter and brighter, with oodles of well being and energy.  I know we all say that, but its true!  We have never felt so darn healthy and vivacious.

As a cook, vegan food takes you to a new levels of plant-based deliciousness, it is cooking that is laced with constant surprises!  Rich, robust, raw, ravishing…….all that and much, much more.  Organic plant foods are clean and superbly nutritious, there is no need for dairy or meat in our diets anymore.  We can choose a new way to eat.  Munching and cooking a balanced and creative vegan diet is such a joy and is never, ever dull.  It is inexpensive and simple.  Anyone can do it (we did!)  Vegan food worships good produce and is constantly looking for fresh and interesting ways of creating magical meals.  Hopefully we tap into that enthusiasm here on the B.H.K.

A NATURAL PROGRESSION

Avoiding meat and dairy all together seemed a very natural progression for me, especially when based on environmental and ethical evidence (some of the challenging facts and figures can be found here).  The closer we got to nature and the more we learn about the impact of large scale meat and dairy production, the more we realised that this is the only way for us to express our hopes and dreams for the future.  Becoming a vegan has a massive effect on the environment; our own health and the well being of animals.  It is a no-lose decision and can only lead to a more peaceful existence for all.  It’s very big deal!

Leaving meat and dairy off your plate is a powerful message and a stance against many forms of cruelty.  The suffering that animals endure to provide generally unnecessary nutrients to humans seems utterly wrong.  Meat and dairy not only harm the body by labouring it with saturated fats and cholesterol, which inevitably lead to a long term degradation of health, but also see us collectively condoning the destruction of our beautiful planet.

A MINDFUL DIET

We are more conscious now of what we eat, we don’t just wolf it down anymore.  We feel more in tune with our bodies and far more creative with our cooking; having to combine a greater number of ingredients and textures to create delicious dishes.  Veganism has made us focus much more on our diets and how they effect our body and mind.  We have also learnt a lot more about nutrition and have come to realise that we are what we eat and most (if not all) mass-produced food is just not up to scratch.  Food made in factories by machines just seems wrong, for a start, there is no love there.  Our food needs bags of love and home made is best.  We know it’s difficult in the busy modern world, but its something to aim for and most of all, enjoy!

We both found that when you begin to give up or lower the foods that are doing us no good (we all instinctively know what these are and you’re not going to like me for saying this…..but) – fatty nibbles, alcohol, caffeine, sugar etc, cravings gradually slip away and we feel lighter and energy levels rise.  Our bodies need good, clean, easy to digest fuel.  Namely, plant based food.  Foods that make you shine!

WHERE’S THE FUN IN IT?!

A friend of mine said to me “Where’s the fun in it?!” refering to a healthy diet.  I can assure you, there is still plenty of fun in the Beach House, just minus the lamb chops.  Healthy eating doesn’t have to be stuffy and rigid, there are endless recipes that are absolutely delicious and an incredible palate of ingredients and flavours to play with.  It does take a little change of the palate and a new approach to the way that you eat and subsequently live, but after a short while it becomes perfectly normal.  Your palate becomes more sensitive, with less exposure to rich and overly seasoned foods and you can enjoy the subtle flavours of ingredients and simpler foods.

NO PURITANS PLEASE

This is not a puritanical vegan blog, we will never preach from an upturned potato crate.  This is a good vibes vegan blog!  We ate meat for years ourselves.  We have found that all vegans get there in different ways.  We do however feel that there is a collective shift taking place, there is more and more awareness about the benefits of a vegan lifestyle.  We are amazed and excited to see society changing in that way.  Most of us are realising that plants have to take a larger role in our diets, not just for our own sake, but to attempt to reverse the damage that we are doing to the earth.

VEGAN FOR ALL!

We try to make our dishes appeal to all tastes and most of our carnivorous friends love dinners at the Beach House (even my Dad, who has gone from a greens hater to Kale’s number one fan).  You’ll find our recipes are packed with flavour and nutrients and we love a good plate of food, so the portions are always hearty and satisfying.  Our food is cooked from the heart, it’s real (good for the) soul food!

Happiness is the highest form of health – The Dalai Lama

No matter how many kale smoothies we drink, no matter how much we avoid processed sugar or potatoes, “happiness is the highest form of health.”  I found this little quote put much of our current eating habits into focus.  Enjoy your food, whatever you’re cooking or eating!  A healthy, content and happy mind inevitably leads to a healthier body.

Reasons to be Vegan 1,2,3……+ Inspiring Vegan Quotes (pt 2)

(I never really liked Ian Dury, but ‘Reasons to be Cheerful’ is a stone cold classic.)

Being a vegan quickly becomes a major talking point in life.  Its unavoidable and certainly makes you think about lifestyle choices in a deeper way.  It’s a challenging stance to take and many people feel threatened by it.  It requires a complete re-evaluation on our approach to producing food and the way that we source and buy our food.  Having an open mind to such a drastic change is paramount, if you are against veganism on principle, please read on with an open heart and see what settles.  I’d love to hear constructive comments, but generally, I receive strangely thought out theories on why meat is essential to modern human existence.  All I would say is that ethics and social behaviour can change quickly, especially when backed by governments and the powers that be, just look at the huge changes we went through with the smoking ban in public places.  Veganism or eating far less meat and dairy, is surely next on the agenda.  We have to stop consuming so much.  It is the most effective way we can minimise the degradation of our environment and create a cleaner, healthier future.

Most people I meet are interested in the vegan lifestyle and normally ask ‘why?’ (many shaking their heads like I’ve lost my marbles.)  I seem to be missing out on so many goodies when we go to restaurants, bakeries, bars, etetec  This is not an easy question to answer for me as there are many reasons and not eating a croissant ever again seems like a small sacrifice to make:

1)  The food is amazing.  I love to cook vegan food and experiment with new ideas and fresh approached to nutrition and cooking techniques.

2)  It’s superbly healthy for ourselves and the planet.

3)  Its a life style that is against the exploitation and suffering of animals (and humans for that matter)

…….the list goes on and I can find no negative aspects to a vegan diet.  None.  That is using the most objective angle I can muster.

I told some friends recently to check out the blog for more inspiring vegan info and bar the food, realised there was little else to get the vegetal flow moving.  I have gathered some vegan quotes that inspire me, with cool pictures of friendly animals and thought I’d do a little sharing.  I posted pt 1 a while ago now and with the new year upon us, it seems that pt 2 is ripe.  I hope you find them equally inspiring.

What better time of year to give veganism a go!  These quotes may give you the final push to change things up a little.  After all that indulgence over the festive period, we all need light and super nutritious food to give us a detox hug and new year sparkle.  There are plenty of recipes on the B.H.K to fit that bill, but today we are going in a quote/ ethics direction.  Being a vegan is much more than delicious food, its a statement about how you wish to lead your life and treat other living things.  Vegans are for peace and a healthy future for the planet and our new generations, after all, if everyone in the world stopped eating meat, there’d be enough grain available to feed the world population at least seven times over!  If every person in the world stopped eating meat for just one day a week, there would be enough grain to feed our world population, 7 billion, one time.

Some of the quotes are quite full on, but this is a highly emotive issue and rightly so.  I cannot ethically equate the suffering of animals for food within the society I live in.  Britain is well renowned as a nation of ‘animal lovers’.  I believe that the way that we treat our animals says a lot about out culture, that is all animals and not just those classed as pets.  The industrialised meat and dairy industries are torturing animals on a daily basis to present us with the foods that we prefer.  Its a matter of choice, not necessity.  I’m not saying we should all become vegans overnight, but we should be aware of the processes of cruelty that are involved in providing cheap dairy and meat products, when we realise this, surely as compassionate human beings, we move away from foods which undoubtedly promote torment and suffering, towards a healthier plant based diet.

Veganism is not just a lifestyle trend, its a statement of intent.  In simplest terms, I feel that being a vegan stands for a peaceful future for all.  Going vegan has a MASSIVE effect on the world socially and environmentally.  We are gradually moving away from our current eating trends and awareness is spreading, but we must act quicker.  There is alot at stake.  Human life itself is at stake.  What better cause to wake us up and turn to tofu!

‘Raw June’ in 2012 was a whole month dedicated to eating raw food, with no caffeine, added sugar, or alcohol. It was an incredible month for me. The experience made me realise that I actually ENJOY eating raw food! After it had finished, it felt natural for us to continue with a big part of our diet raw from then on.

Not only did I develop quite a flair in the kitchen for whisking up quick, gorgeous salads, soups and sauces (I’m not a natural cook), we both became very at home with the basics of nutrition, combining foods, new foods, health foods – the days were long and light, the food was sunny, and bright, and so were we!

The other interesting thing for me was that I really connected a lot more with my body during that time. I listened to it more, and felt into my energy levels more often during the day. For the first time in my life, I was aware of the conditioning of my mind, telling me I was hungry just because I didn’t feel ‘full’ (despite eating bowls and bowls of the most nutritional food on the planet)! And my goodness, did I get a whopper lesson on the nature of cravings? Wheew! It was as if something happened in my brain and I suddenly over-night became an addict of chocolate, dairy, crisps and even fried chips! It was a great exercise of willpower for me, especially since my birthday also fell into the month of June….

The other day, while roaming Anglesey’s wild and beautiful coastal path on a gorgeous sunny afternoon, Lee and I started excitedly planning the next Raw Food month for this Summer.

Inspiration spiraled as we sparked off each other, and soon we were discussing not only how we could improve the way we eat, but also the way we live our lives in general. The way we impact our Mother Earth.

I would say we live in a fairly environmentally conscious way; we are not huge consumers of material possessions, electricity, or water. We recycle and make compost for our veg patch, we don’t own a clothes dryer, microwave or TV, we make our own washing up liquid and toothpaste, I don’t wear make-up, I use cloth pads during my moon time…. But no way are we perfect! We still use some chemical cleaners around the house; we use laundry detergent, conventional soap, and I use conventional shampoo, conditioner, and deodorant. We both use our computers for hours each day, electrical appliances and lights are accidentally left on… that kind of thing.

So we have set an intention! For a whole month starting on the Summer Solstice Friday June 21st, we are going to be eating only raw vegan food and we are also going to live in a way that lowers our impact on nature and the climate.

This means we are going completely ‘chemical free’ in the home – we’ll be experimenting with home-made eco-cleaning products, laundry products and toiletries. We are cutting down our electricity usage by not using appliances or electric heating. We are also going to switch off our lights in the evening to become more in tune with nature’s circadian rhythms. We’ll reduce our petrol consumption to essential trips only, and limit ourselves to 2 hours of computer time per day. Our mobile phones will be off unless we’re working, and, last but not least we will not buy anything apart from food and essentials – so no shopping trips!

It was not easy for us to agree the finer points of this experience – because of course it does involve sacrifices to our normal way of living, and would not be a challenge otherwise. For example, there was a point in the conversation where I flatly refused to even do Raw Earth Month! It was when Lee brought up the topic of shampoo and conditioners. This was met by fiery resistance by me as my hair is unusually big, long, thick and DIFFICULT at the best of times, even with these wonderfully enriching chemically products in my life. The other thing I felt resistance about was hand-washing all our laundry, not using conventional laundry liquid, and disinfecting the loo. Other than that I’m excited to experiment and relishing the thought of no technology and evenings sat by candle light… Bliss!

Lee on the other hand had no qualms about giving up chemicals on his body and hair, but found the computer part challenging – and even managed to haggle me up from one hour (as initially suggested) to two per day! I do take his point that blog articles can take time to write…

I’m just hoping that we can learn some new life skills during this phase; hopefully lessons we will be able to integrate into the rest of our lifes forever. In our opinion, saving and conserving energy is something we will all have to do more in the future. We will have to turn back once more to Mother Nature, and work with her not against her. Lets get a head start!

The Beach House Kitchen nominated for the ‘Beautiful Blogger’ and ‘Reader Appreciation’ Awards

Another couple of wonderful award nominations have landed at the Beach House doorstep recently. We love ’em!
I’ve finally managed to get around to acknowledging this kindness.  We are putting both nominations onto one post due to the Beach House being full of busy at the moment.  Not enough time to cook, never mind type!

Karin Wiberg nominated us for the Beautiful Blogger Award, which is a real pleasure because we love Karens writing, especially the regular haiku’s that spring from her blog.  A wonderful place for creative writing and literary inspiration.  We’ve been called many things in the past, but never beautiful!  We are blushing up here in the hills.

Yoga with Maheswari nominated us for the Reader Appreciation Award.  Yoga with Maheswari is a really wonderful blog for positive vibrations of the yogic kind, wisdom and much bendiness.  One day we hope to attend a class and share a breath.

The rules of both awards basically the same:

  3. Share seven things about yourself
  4. Nominate 5-10 bloggers for the award and notify them.

Seven things about ourselves:

1- Our front garden is being laid siege to by a particularly grotty group of feral street sheep.  These sheep are not pets and stare down oncoming traffic.  If they breech the dry stone walls, our tomatoes are in great peril.

2 – Our back garden is being laid siege to by a seemingly infinite number and vastly diverse range of ravenous slugs.  They are eating anything that lays down roots for too long and we fear they may be planning future raids on the veg drawer in our fridge, such is their devious and slimy nature.

3 – Our first green chilli bloomed yesterday on the windowsill, the same day as our first tomato.  A day when the sun actually shone for a while.

4 – Jane is Gemini, I am Taurus.

5 – Jane has recently taken courses in aromatherapy, mechanics, Spanish and woodworking at the local college.  I am allergic to the classroom environment.

6 – The Beach House may sound like an exotic location bathed in sunshine and bikinis, well, not quite.  We have had the worst summer in North Wales for the past 100 years and the Beach House may be more aptly named the House of the Rising Damp.

7 – Jane is a keen breeder of spider plants, we currently have at least one in each room and the ‘Mother’ is threatening to take over the front room (remember the film ‘Little Shop of Horrors’!)

A Wonderful Movie – ‘The Green Beautiful’

This is the best movie we have watched in ages and its free on youtube. Hooray!  We felt like sharing it with all you lovely people.

Its about a lady who lives on an idyllic planet, where all people live in harmony with nature and their world.  She is beamed down to earth to help and the adventure begins.  It is a French movie and rather funny.

“If you don’t take care of your body, where are you gonna live? “

This is a wonderful post that I felt compelled to share, as it is exactly how we feel in the B.H.K about a balanced approach to good living.  It doesn’t take much, just a greater degree of sensitivity with the body and mind.  The lifetstyles we choose have a profound effect on who we are and how we act.

You are given a body -this most wonderful perfect system. it is impossible to think the amount of processes , that are happening every second , regardless if you are awake or asleep.

It is my opinion , that there are 3 approaches in which people like to treat their body-there are those , that live only in the body and strive for perfection, there are those, that have forgotten they have a body and treat it like something, that they have to carry about with them , and there are also those that believe that to have a fulfilled life one has to find the mind , body and soul balance.When those 3 are in balance life is a pure bliss. According to the Ayurveda medicine when this harmony is disturb in any way your being is in dis-balance which is the root cause of all diseases. Long before any illness appear you body is giving you different signals, that you can sense with your heart and understand with your body. The main thing is not to ignore them , but listen to your body . When you are tired rest, when you are feeling unwell make yourself better, your wee has a colour-drink more water, your tongue has a white coating -fast for a few days,….the list is endless.

 

There is a reaction behind every action and prevention is priceless, but you can’t buy it when it’s too late. It is never too late, unless you re dead. So start now listen to your body, sense it with your heart and understand it with your mind.

The magic of living is to optimize you body-soul-mind trinity. I would like to share a few tips form the Ayurveda medicine for optimal health and I would love to hear from you -what is your best tip for being healthy.

1.Rest before you are tired – a regular 20 minute break will benefit not, just your body but will also refresh your mind and make you more present . Always make time for it. it is really worth the effort.

2. Eat when you are hungry -this is an universal advice . Educate yourself about the differences between emotional and physical hunger and learn to respond to them accordingly . If it a real physical hunger it will come on stages and you can easily identify and satisfy it with natural foods. Emotional hunger is sudden and it craves certain foods- when you know it is happening ask yourself why and let the answer come to you. Awareness is a powerful tool.

3. Ayurveda describes massage as one of the best way to remain healthy – a nice foot, head or back massage can be very beneficial at any time and it can cure many discomforts and tensions in your body, it also calms your mind and sooths your soul.

4. Accept what is and learn to love what is .One of the biggest causes of any disese is the fact , that we sometimes try to change what we can not control. Long term stress brings your immune system down so do your best to reduce and eliminate bad stress. Focus on what matter and do your best to use your energy on things , that you can actually change .

5. Move your body – you have been given legs to walk with, hand to lift with and body to dance with . Find your best way to move every day. Ayurveda recommend yoga as the ultimate mind-body -soul movement and I couldn’t agree more, but i also love to dance, love to cycle and love to walk and swim. Getting physical reduces stress, clears your head and makes you feel good.

6. Cultivate and nourish your relationships- nothing gives your soul more meaning , than sharing it with others. Communications, connections and Love. This is pure medicine .Love, be loved and loving . It is the only truth.

7. Forgive . Forgiveness is the greatest gift known to man. Start with yourself and gradually extend that forgiveness to all. Do not be picky, take your time and explore the beauty of forgiving . This is a gift, that you owe to yourself .

8. Be grateful . Always , even for the stuff you did not want . There is a silver lining in every cloud and every disaster could be a blessing. The only attitude worth the effort is the attitude of gratitude . At the end all makes sense and you would be grateful for the lessons you’ve learned .

So over all another good Irish saying comes to mind-”a good laugh and a long sleep are the two best cures for anything”.I love going to bed in the evening . Since I cycle every day I feel this sweet tiredness , that I have missed for years
