The ultimate Sunday morning reviver (or at least one of many potential juice combinations that will make you sparkle and sing in the morning.  There are a vast and glorious number).  Joyful and juicy.

Its a glorious morning in North Wales, the wind is blowing and the small birds are singing.  Rocky Robin especially seems to be filled with the joys of spring.  Perfect shining juice conditions we feel.

This may sound like quite an unusual, savoury, mix of ingredients for a juice, but they all work brilliantly together.  Carrots and apples are the base for most of our juices, they are relatively inexpensive and highly nutritious.  This juice boasts outrageous levels of vitamin C (pepper, lime), K (coriander) and of course A (carrots).  Basically, this is a juice that leapt out of our veg basket.  The glory of juicing is that, you can dream up any combination of fruit and vegetable and whack them together in a juicer to sensational results.  Celery however, should always be enjoyed in moderation.  Its very potent.

Juicing is the perfect way to offer your body a serious hit of sparkling vibrancy in the morning.  Juicing does take away most of the fibre from your fruits and veggies, so we like a balance between smoothies and juices.  Or just eating loads of fruits and veggies in their raw state.  You then get to enjoy all the textures of gorgeous plants.

THE IMPORTANCE OF ORGANIC JUICING

If pesticides are used during growing fruits and vegetables, they will normally be more concentrated in the skins.  We never peel our fruit and veg when we juice, so this means that we must try to seek our organic produce when we can.  Otherwise, we’re taking in all of those chemical pesticides/ fertilisers that are inevitably used in shop bought produce.  Its a bit of a downer, but the benefits of drinking vibrant juices are tempered when pesticides are involved, they are very hard for our bodies to deal with.

We normally juice citrus fruit with the skin on, but I must say that oranges can be a challenge.  Try them out, but if I’m using more than one in a juice, I normally peel them.  One pithy orange is enough per juicing session.

Jane and I took our Canadian pal, Shira, up Mount Snowdon the other day. It was truly astonishing.  Wales was sparkling, crystal clear and radiant.  All cloaked with the most beautiful, shimmering light.  We walk up the back route, the Rhydd Dhu way, and it is one of my favourite hikes.  So varied, it goes from a ambling Welsh countryside feel, to rock hopping, then almost a scramble up loose scree paths until you hit the top with is like a castle of jagged rocks and tiny winding trails.  You cannot help feel a little like Frodo on some kind of quest.  Anyway, I’m telling you all of this because we had a juice that morn and all felt supercharged.  I’ve even climbed Snowdon powered on just a Beetroot and Apple Juice (see Primitive Juice Man Scales Mighty Mountain!).  I am yet to discover why exactly, but it felt good at the time.   If I was running the London Marathon today, I’d love to down this beforehand.

The Bits – 4 Small Glasses, 2 Big ‘Uns

4 apples, 4 carrots, 1 yellow pepper, 1/3 cucumber, 1 handful fresh coriander, 1 lime

Do It

Place the coriander and lime in the juice first, on high speed and follow with the rest. We like to put the carrot in last as it seems to flush any lingering leftover goodness.

Serve

In a Guinness glass and a leftover gherkin jar.  Or glassware of your choice.

Foodie Fact – Coriander (or Cilantro)

Coriander does not grow so well up here, too windy and a little cold.  We have had success with coriander in our little grower or indoors.  Once it goes, it goes wild.  A good one for the indoor window box.  Is that normal?  We have them.  Mainly to try and keep our precious, fragile plants out of the whipping Irish Sea winds.  Growing your own coriander means that you can use loads of it in sauces like Salsa Verde or in juices like this.  Those little packets you can buy, for a pretty price, just don’t quite give you enough to play with.

Once picked, use your coriander quickly.  The leaves are very gentle and discolour easily.  If you need to store coriander, we find the best way is wrapped gently in a damp cloth or kitchen towel.

Use the stems, coriander stems are soft and packed with flavour.  They can be used just like the leaves, I normally stir them into a soup/ stew and use the leaves as garnish.  Double coriander can never be a bad thing.

Coriander is a super star.  You may call it Cilantro and are also right.  Originally from the Mediterranean.  It contains outlandish amounts of Vitamin A and K with high levels of vitamin C.   It is also a good source of iron.

VITAMIN K?

Vitamin K is something a little obscure, but its essential for healthy bones and keeps the brain healthy.  Two parts of the body I’d like to keep ticking over.  Vitamin K is even used in treating Alzheimers disease.  Coriander is one of natures best sources of ‘K’

Kale, Carrot and Apple Juice

The ultimate early morning kickstart! This juice will definitely get you wide awake and feeling wonderful.

The combination of kale and a whole lemon here (zest and all) make it a real eye opener, very different and refreshing flavour.  You can also use something like a savoy cabbage here which also has great flavour.  Who knew that cabbage juice could be so tasty?!

You will need a juicer to make this green and lean juice, and if you don’t have one, this juice is the perfect excuse to get one!

Jane and are glad to be back in the Beach House and eating our favourite foods.   After our experiences last summer with the raw food diet, we are planning another venture into crunch this year, probably starting in late June (after Jane’s birthday).  Last year we celebrated in a windy tent on the Pembrokeshire coastline with a salad and raw starwberry tart.  Delicious, but lacking bubbles!

If this doesn’t wake you up of a morning, then I would advice you go back to bed and try again tomorrow.

PS – This is serious detox territory too.

Make two glasses:

The Bits

1 apple, 2 handfuls of green leaves (savoy cabbage or kale), 3 good sized carrots, 1 inch cube of ginger, 1 lemon (whole)

Do It

Pop all in the juicer, we add the lemon first, then ginger and normally finish with the carrot.  It is dense and juicy and seems to flush out any lingering bits.

Serve

Straight away with smiles.

We Love It!

Jane and I are not really morning people, our bed is normally the only warm place in the beach house!  But this juice will drag us out and with the ginger kick, wakes and warms!  Its a beauty.

Foodie Fact

Kale is one of natures most amazing gifts.  Kale helps the body detox, lowers the risk of the big ‘C’ and actually lowers cholesterol (I love these types of food).  Kale is packed with Vitamin K, C and A, Kale also has ‘unusually’ high levels of flavanoids and carotenoids which highly reduce oxidative stress (which is definitely not good for you).  Read more.

Green Kiwi Juice

The bits

Our first juice with the Magimix, quite a moment.  I have never had a more pleasing kitchen gadget.  The motor purs and hums, no clattering and pops like our old smoothie maker.  

I looked at the fruit bowl and veg basket and decided it was a green morning.  Kiwi would go very nicely with apple, the cucumber is always refreshing and the pear would add a nice sweetness.

We loaded it all into the extra big funnel and whizzed it up.  The Magimix made quick work of it.  

The juice was lovely, fresh and sweet, with a good kick of kiwi.

The Bits

2 apples, 1 pear, good chunk of cucumber, 2 kiwis.

Makes enough for two glasses.

Do It

Pop it all in a juicer.

Foodie Fact

Kiwis are sometimes called a Chinese Gooseberry as they are the national fruit of China.  They contain more vitamin C than orange, it is also full of Vitamin K and is amazing for protecting our DNA (which is important!). 

What a wonderful way to start a day.  Let the juice experimenting begin!

Rainbow ‘Slaw and Rosehip Tea

Today the sky is the deepest of greys, the washing nearly blew away and Jane poured a pint of water all over her computer.  We both held the stricken machine in our hands, then noticed the water pouring out of the side with the plug still in the wall…the penny dropped…we placed it in-front of the fire and thanked our lucky stars for not getting frazzled.

We put on some Vashti Bunyan and started to make lunch……….

Out of this peaceful state came this wonderful combination of vibrant colours and flavours.  The salad is an old friend from past summer days, the beetroot, carrot and orange is a tantalising combination and packed full of good things.  Preparation could not be easier, this is a real raw food delight.  The tea is fairly straightforward also!

From a potential near-death experience, to a rainbow lunch and ‘Rosehip November’ (in April).  Happy days at the Beach House.

The ‘Slaw

The Bits

1 large beetroot, 1 large carrot, 1 large chunk of butternut squash (optional, just increase the carrot by one), juice of half an orange, handful of chopped coriander.

Do It

Grate all veggies, we used a hand grater, or plug-in your food processor.  I appreciated the exercise actually.  I peeled the beetroot and the squash.  Squeeze in the OJ and throw in the greenery.  Add the finely chopped pith of the orange for even more of a citrus POW!  Mix up and leave at room temp for a while, let the flavours mingle a little.

Serve

We made a lunch out of it with some toasted leek oatbread (recipe soon to appear on the blog) and cucumber raita.  This is a versatile ‘slaw that will brighten up any plate.

We spiced it up with a couple of pinches of Ras El- Hanout spice and a splash of olive  oil.  Our raw life starts in June, why not live dangerously for a while!

The Tea 

Clipper Rose hip (and Hibiscus)

It’s a Clipper Tea.  An organically grown infusion, fruity, with a deep colour and plenty of vitamin C.  The good people of Clipper are in all of our supermarkets in the UK and always good value.

They use unbleached bags and have an awesome range.  Their black tea is a winner with a splash of soya milk (and lashings of honey, B.H.K style).  We have also tried the tasty Dandelion and Burdock Tea, which took us back to our childhood days, drinking the fizzy sweet version out of glass bottles in bracken, near streams.

Foodie Fact

Rose hip has been used for years for its health properties, the fruit of the Rose is especially good for the joints.  The Vikings used it on long sea voyages to ward off scurvy, its packed with Vitamin C.  It also contains most of the B vitamins and the mighty vitamin K, with antioxidants and rich fatty acids surely making this a real superfood.
