A quick post here, but something quite special.  Have you played with aquafaba yet?  It is a sensation and amazing in so many ways. This very simple vegan mayonnaise is both rich and creamy whilst purely plant based.

AQUAFABA?

Aquafaba is basically the cooking broth of chickpeas or other beans.  It can be used in a whole host of amazing ways, from making vegan meringues, fudge, pavlova and macaroons to a brilliant egg substitute in baking.  See The Vegan Society’s 13 Amazing things to do with aquafaba.   There is also an awesome Facebook page called ‘Vegan Meringues – Hits and Misses!‘ which has thousands of people playing and talking about this bafflingly brilliant ingredient.  Exciting times!

It seems we are only just getting to grips with all of the uses for this aqua faba (Greek for ‘water’ and ‘bean’).  There is much experimenting going on in kitchens across the world.  I know most of my non-vegan friends are really excited about the prospects of converting something so innocuous and plentiful into sensationally light and dreamy cakes and whipped creams.  Even Baked Alaska is now possible, purely plant! (see the brilliant Lucy’s recipe here).

When making things like mayo, dips, hummus etc that call for quite a lot of oil, I normally opt for something a little less expensive.  Extra virgin olive oil is never (and should never be) cheap and is best drizzled unadulterated onto warm bread or salad leaves.  The flavours are so subtle and fragrant that they can be wasted on a dressing or hummus.  My advice, find a decently priced middle of the roader with good flavour but not a hefty price tag.  Rapeseed oil is a wonderful one and if you’re in the UK, its grown and made here and has the most amazing flavour and deep colour.  It’s making quite a comeback.  Many new modern style producers are making rapeseed oil in the same way that high quality olive oil is made.  It shows!  Here are two of the very best Blodyn Aur and  Bennett and Dunn.  Having said all of that, I wouldn’t use these oils here.  Something more neutral like a sunflower oil is perfect.

There are so many ways of flavouring things mayonnaise, blend with roasted red peppers or onion, try it with any combo of herbs, add chipotle chillies or smoked paprika, lime and coriander…….go wild with it!  Have fun……

Here goes our basic, everyday mayo recipe.  Nice amount of vinegar, touch of sweetness and a little kick of Dijon mustard.  After you give this simple recipe a try you’ll never go for shop bought mayo again.

Recipe Note

You may like to add 1 teas lemon juice and reduce the vinegar content.  We don’t normally do this as it is means your mayo won’t last as long in the fridge.  It does taste nice though.

Most vegan mayo lasts a good six weeks after opening, to give you some gauge of how long it will last in the fridge.  Our mayo normally doesn’t make it past a few days.

The Bits – Makes roughly 200ml Mayonnaise

1 1/2 – 2 tbs apple cider/ white wine vinegar

2 tbs chickpea/ bean broth

1 teas dijon mustard

1/2 teas sea salt

1/2 teas sweetener (we use rice syrup)

125 ml neutral oil (like sunflower)

All you need to make glorious mayo

Do It

Add all of the ingredients bar the oil to a narrow cup/ jug (a measuring jug works well).  With a stick blender, blitz the mixture a few times and then gradually drizzle the oil into the jug whilst the blender is running.

The mayonnaise will thicken and become white and creamy.  Keep blending, for a minute or two, until the thickness resembles your favourite mayonnaise.

Do not add any further vinegar to the mayonnaise at this stage, it will ruin the thick texture.

You can do this in a food processor if its easier.

Serve

You know how you like it!  Although we’ve taken pictures of mayo being served like a dip, its worth remembering that this is predominately oil.  Mayo is always  good spread over some freshly toasted bread and made into a sandwich or Jane’s favourite, with chips (they are French Fries to our American contingent)

Foodie Fact

Sunflower oil is light and highly nutritious and can also be used to keep skin moist and hair shining.  It has a good balance of mono and polyunsaturated fats (the good ones) and is also high in vitamins, especially Vitamin A and E, a potent antioxidant.

Unrefined oils, like sunflower, are best in recipes that do not require cooking.  Unrefined means that the nutrients, colour and flavour are still there.  Refined oils are generally more stable at high temperatures i.e. when frying or baking.

Warm Green Salad with Rapeseed Oil Dressing

Warm and Green Summer Salad

A quick and easy summer salad with many a luxury touch.  The method here is simply blanching the veg and hopefully maintaining alot of their goodness.  You certainly don’t want to cook veggies until they lose their crunch, that is utter madness.  Veggies should be alive and crispy when eaten!

This salad was so green, it was jumping out of the bowl (if that makes any sense at all!)  All the veg here are seasonal, from the farm (bar the Avocado which I think flew over from Mexico), the basil came from the bush on the windowsill and even the oil and salt are Welsh.  It is so great to eat something made from produced sourced locally.  We have really struggled this year to gather together good, organic produce.  But the sun is out today and all is blooming, hopefully the next few weeks will see more harvesting and beautiful produce up for grabs.  Even our rainbow chard in the garden is looking good for the plate.  Amazing what a little sun can do!

The dressing is made with Blodyn Aur Rapeseed Oil, a real find in Wales.  Great folk who use the cold press techniques of olive oil making to produce a stunning rapeseed oil.  Real food heroes who enrich our lives with beautiful oil.  The flavour is very buttery, nutty and smooth and the colour is the brightest gold.  This oil also has bags of Omega 3 essential fatty acids, which are great for us.  If you live in Britain, I hope you can track some down.  It is like no other oil I have come across.

We also used some local sea salt flavoured with celery.  Halen Mon are a family business making salt from the pure water of the Menai Straits on Anglesey, we can seem them from the kitchen window of the Beach House Kitchen and have never tasted salt this good.  Really.  It’s amazing salt.  See our Halen Mon post here.

We always have a good stock of seeds, but if you don’t have sesame or flax, any seed will do really.  Although poppy seed would be a little strange.  We like adding flax to dishes because it is good for the digestive system.

A opposed to our normal raw food fare, this warming (I wouldn’t go as far as cooking!) of the salad really brings out the flavour of the dressing.  We have also recently been told that it is not such a good idea to each French beans or broad beans raw.  They contain things that may do you no good.

PS – A handful in our recipes is probably about a cup (in our hands!).  Maybe yo have different names for these beans, fava etc.  I hope you know what we are talking about here!

The Bits

Salad – 1 ripe avocado (chopped), 3 handfuls of spinach, 1 small sweet onion, 3 handfuls of chopped french beans, 2 handfuls of podded broad beans, 1 stick of finely sliced celery, 1/2 handful of chopped basil leaves, 2 teas sesame seeds, 2 teas flax seeds.

Dressing  – Freshly squeezed juice of a lemon, 3 tbs great oil (olive or we used local rapeseed oil, it has a lovely buttery flavour), 2 cloves of crushed garlic, 1 teas organic honey, cracked black pepper, sprinkle of sea salt (we used Halen Mon celery salt).

Do It

Gather all your broad beans, french beans, onion, place in a bowl/pan and pour over just boiled water.  Leave to sit for a few minutes.  Make the dressing, add all ingredients to a small bowl and whisk vigorously with a fork or small whisk.  Drain you veggies and add to a large salad bowl (or any good looking receptacle), mix in your avocado, celery and basil leaves (gently does it) and pour over and stir in your dressing.

All good local fare; seasonal veggies that are so full of flavour and the vibrant dressing adds a lovely rich citrus kick.  A bowl full of the joys of these lands.

Unlike all other vegetable oils, cold pressed rape seed oil contains a natural balance of omega 3, 6 and 9 oils, making it a great source for these essential fatty acids. ‘Good oils’ are essential in bodily functions, including aiding cholesterol reduction, and maintaining a healthy heart.  Omega 3 is a rare oil, that can be difficult to include in our diet.  Rapeseed oil also contains Vitamin E, a powerful anti-oxidant.

Sunflower and Beetroot Pate (Raw)

A pinky purple veggie/ raw pate that will get your taste buds zinging and brighten up any happy plate.

The wind is howling outside, probably smashing our poor little runner beans and sunflowers.  I can’t bring myself to go out and check them.  Its the worst possible weather for our newly planted veggies and flowers.  We are hoping they’ll tough it out.  We need cheering up with some vibrant food and colours. Thankfully we got out hands on some delicious organic beetroots and already had a batch of sunflower seeds sprouting, so the combination seemed logical (and tasty).

We are eating alot of salad, as you would imagine being raw this month (rabbit food we are regularly told.  Lucky rabbits!) but like to have something a little different on the side.  Another texture to compliment the crunch of the salad, this pate is perfect for that.

It has a light texture, but is full of flavour and I imagine would be great spread on toast (like the other livery stuff).  We have added hazelnuts to the recipe in the past, which gives it a fuller texture and richness.

We use Blodyn Aur rapeseed oil here because it is delicious and from Wales.  It has a lovely nutty and buttery flavour that is totally unique.  It also contains 11 times the amount of omega oils compared to olive oil.  If you are in the U.K., keep your eyes peeled for it.  It’s a star.  You could however use a good quality olive oil or flax seed oil.

We seem to be using alot of jars with this new diet change.  Having been saving them for so long, I’m glad to get some use out of them.  They are ideal for shaking up and storing dressings and this pate will keep for a couple of days refrigerated in a jar.  They also happen to look much cooler than a clunky tupperware!  That rustic look that is very fashionable in our hamlet.

The Bits
Makes one large jar
3 small beetroots, 2 carrots, 1 stick of celery, 2 handfuls of spinach, 1 courgette, handful of parsley, 1 small red onion, 1 cup sprouted sunflower seeds, 2 tbsp rapeseed oil (olive oil is fine), 1 big handful of black olives (de-stoned), juice and zest (finely chopped) of 1 lemon, 2 tbsp tamari, 2 tsp cumin, 1 red chilli, 3 cloves garlic.

Do It

Add all ingredients to a blender and blitz until a smooth paste is formed.  You may need to stop and scrape down the sides a few times, to ensure that all is blended nicely.

Serve

Finish with another glug of oil and some chopped parsley and sunflower seeds.  Great as a side dish, or as a dip.  You may also like to spread it thickly on things that you like.

Foodie Fact

Sunflower seeds are a great source of nutrition, a really concentrated food.  It is an excellent source of vitamin E, which is a powerful anti-inflammatory and anti-oxidant.

Sprouted sunflower seeds are full of iron and chlorophyll which helps to detoxify the liver and blood.  They also contain the wonderfully named, phytosterols, which act like a superhero all over the body, battling all sorts of nasties.

Raw Emerald Soup

Raw Emerald Soup

A creamy raw soup that is deep green and delicious.  This is raw food at its finest, a lovely texture and flavour and also packed full of nutrients.  It is thick and filling.  This is the perfect soup for a nice lunch in the summer garden.  No emeralds are used in this recipe!  This soup is so vividly green it must be good for you.

Savannah and Jane made this one last night and they both commented on how easy it is to prepare.  It’s funny in raw food that the ingredients list normally outweighs the preparation list.  It’s quick.  There is also less washing up to do!

Raw food is dense in nutrients and I am eating less for meals.  One bowl of this and I was well sated.

The inspiration for this soup came from the brilliant raw food book ‘Eat Smart, Eat Raw’ by Kate Wood.  It is written specifically for raw fooders in the UK.  It is fast becoming our raw food recipe bible.

All vegetables here are grated beforehand to make it easier to blend.

The Bits

These bits are per person:
4/5 carrots, two large handful of spinach, 1/2 onion, 2 cloves of garlic, 1/2 apple, 1/2 avocado, 1/2 tbs miso paste, 1 tbs flax seed oil (we used rapeseed oil), 1 teas dried seaweed, 300ml water.

Do It

All goes into the blender and puree until smooth.

Serve

Mix mung bean sprouts in and scatter on top with some freshly chopped parsley and I added a scattering of sunflower seeds.
