Cook Vegan! Christmas Feast, Manchester – Cooking Workshop and Lunch

Learn to plan and cook a creative, show stopping three course vegan Christmas lunch with support and guidance from Lee and the Beach House Kitchen team.

Is this your first vegan Christmas?  Are you cooking for vegans or just interested in trying something new and creative?  Maybe you’re a vegan cook looking for fresh festive foodie inspiration?

This hands on workshop is packed with delicious plant-based alternatives to a traditional Christmas lunch. All dishes are full of bold flavours and textures that everyone will enjoy.

Cook Vegan Xmas will leave you feeling cool, calm and prepared for the great Christmas day cook off!

We’ll cook together a three course meal, making a starter, stunning centrepiece and all the trimmings plus a decadent dessert. Many of the dishes you can freeze at home, to be extra prepared for the big day. You’ll also get a full recipe booklet, including an invaluable timetable, so you can plan your cooking leading up to the big meal, making sure everything is ready at the right time. You’ll also leave with some essentials; stuffing, gravy and cranberry sauce for the freezer.

Anyone familiar with Lee’s cooking will know that the recipes are going to be creative but not overly time consuming or complex. Christmas day is about finding a balance between delicious dishes and straightforward preparation. Leaving more time to raise a glass or two and enjoy the day with friends and family. He’ll even make you fall in love with Brussels Sprouts. It is possible!

Cook Vegan Xmas will provide you with new techniques and tricks, plus you’ll leave the day feeling confident that 2018 will be the best vegan Christmas lunch yet!

Lee will be releasing the full menu a little later in the year.

We’ll all sit down at the end to enjoy the dishes we’ve created together. Coffee, wine and drinks will be available to buy from the Food Sorcery bar.

Your favourite festive jumpers and aprons are encouraged. As well as learning new skills, this is a pre-Christmas celebration. We’re going to have lots of fun!

The workshop is hands on, fast-paced and fun. Like the big day itself! We’ll work together in groups of three (max), with some techniques demonstrated by Lee and some working from the recipe booklet. All levels of cooks will be benefit from the day. There will at least 30 minutes for lunch at the end.

Dinner at the Farm – Photos of our Kashmiri Feast on Tyddyn Teg Organic Farm

A few pics from last weekends Dinner at the Farm. The first of many we hope, we had a blast!!

Tyddyn Teg farm is a beautiful location and we cooked exclusively using their stunning organic produce.  What a treat!  A variety of summer squashes, a plethora of heritage tomatoes, many shades of kale, peppers, aubergines, really interesting Peruvian mint, sweet foot long cucumbers, plus a lot more…..we even offered homemade wine!  Food miles for the dinner ingredients were around 200 metres!!

It was a pleasure to cook and work with the TT team, it is such a positive project, focused on maintaining and developing sustainable and ethical food production and ways of living.  An inspiring place to hang out for the day.   They have so many exciting plans for the future.

The sun came out in the afternoon and the bookings rolled in, benches and tables were made (by the onsite wood genuises) and numbers toppled well over 60.  This took some classic ‘creativity’ and ‘problem solving’ techniques in the kitchen that all cooks know about.  But being on an organic farm, if you need another squash, you just pop out and pick one!

“Simon, any chance of a bin bag full of three varieties of fresh picked kale.” 10 minutes later. “Is this enough!!” The beauty of cooking on a farm:)

Vibrant Vegan! Cornwall – Photo scrapbook of our recent weekend of healthy plant-based cooking and yoga

Here are some of our favourite pictures from last weekends Vibrant Vegan Cornwall getaway, just beside Lands End.

We were blessed with sunny weather and clear skies and joined by a wonderful group of people.  We shared many memorable times, lots of empowering yoga with Complete Unity Yoga in the Yoga Hall, so much plant-based food, delicious and healthy, with global twists and plenty of treats.  Boswedden House was a beautiful location, comfortable with a nice big dining room and kitchen (the most important rooms right!)

Stunning Cape Cornwall! The sun shone all weekend.

The gardens of Boswedden overlook the coastline and the little old tin mines which trail along the cliffs.  They even have a labyrinth in the garden which we enjoyed.  It was the perfect location for our Saturday night fire, where we told stories, sang songs and read poetry.  We even burned a chest of drawers (old and dilapidated;) which added a real spark to the evening!

We welcomed an amazing group of people! (Not sure what I was looking at here!;)

Malene’s yoga was based around the teachings of Patanjali, taking us right back to the roots and heart of yoga.  All took part and felt the benefits.  Yoga is for all!  No matter what level we’re at.

On Sunday night Malene and Will led a transformatory experience in the yoga hall.  Yoga in the mornings is always a highlight, especially when the pool is open beforehand.  The best way to start any day!

Delphiris took over the lounge for the weekend for a variety of massage sessions, along with Jane’s reiki and menstrual cycle workshop, Malene was offering one-to-one yoga consultations and lifestyle coaching.  All these therapies had such a positive effect on the weekend.

It’s rare in life we can just let go, focus solely on taking care of ourselves and re-energising and aligning ourselves with healthy ways of being.  This is what the Vibrant Vegan weekends are all about, it goes way beyond just what we eat, but a wholesome, balanced plant-based diet is a excellent cornerstone for a healthier body and lifestyle.

We’re chuffed that there are at least two new vegans in the world after the weekend!  We all talked a lot about new ideas, impetus and strategies to lead a more balanced life back in the ‘real world’, a life that is based around our own well-being and peace of mind, making us better equipped to deal with the ups and downs in life, allowing us to give life our very best shot!

Our Vibrant Vegan holidays showcase what a healthy plant-based diet is all about, variety, colours, textures, fresh flavours, decadent treats, amazing nutritional bits and pieces.  It’s a no lose, no sacrifice, all good way of nourishing our body.  It doesn’t have to be challenging either, so many quick recipes when time is the master!

The weekends are all about inspiring us to cook fresh food, during the cooking demonstration we talked about simple techniques to change the way we cook at home, saving time and approaching new ingredients with confidence.  We even had a chat about vegan nutrition and how to thrive on pure plants.

I know that a lot of people made it down to the beach and the surrounding coves, the ocean down in Cornwall seems really grand.  There is the feeling that you’re right at the end of the island, looking out into the big, big blue.  Refreshing!

Our big thanks and love to all attended and made Vibrant Vegan a very special weekend for us all, especially Jane, Thelma, Nigel, Sue, Will, Malene, Will, Jenna and Cat (the cat) plus everyone else behind the scenes who helps to make these holidays and getaways such a peaceful and enriching time.

Cook Vegan! London – A Weekend of Delicious Plant-based Cooking, 13th-14th October ’18

Discover creative cooking skills and have fun in Hackney this October with Lee Watson (author ‘Peace and Parsnips’ and beachhousekitchen.com). Saturday is all about Asian Street Food and on Sunday, we explore the diverse and hearty cuisine of Spain, perfect dishes for the upcoming wintertime.

These workshops are hands-on, we’ll be making vibrant, globally inspired vegan dishes like a show stopping Wild Mushroom Paella, light and fluffy Baked Pea and Mint Tortilla, creamy and spicy Malaysian Squash and Coconut Laksa, classic Teriyaki Tofu Onigirazu – Japanese Sushi Sandwiches with Cauliflower Rice, fragrant Pad Thai Salad and lots, lots more. Desserts will include a Spanish Chocolate Custard Pie (sugar and gluten-free), plus Sticky Thai Coconut and Mango Rice.

You’ll no doubt learn many new tips and techniques to make healthy, inspiring, home cooked meals an everyday reality and tune into, or unearth, your inner chef! We’ll be focusing on nourishing food with big flavours with plenty of treats; from meals in minutes to decadent desserts, one pan wonders to dishes slightly more complex, aka weekend specials and the best part is, we’ll all sit down together at the end to enjoy our tasty creations.

Each day starts with fresh teas and coffee, and you are given your bespoke recipe book for the day. We talk through the recipes and a little about the nutritional aspects of the days menu and then, we cook! Working together in small teams at well equipped stations. Numbers are kept low, so Lee and his team can offer constant assistance.

The Cook Vegan! recipes are designed to be accessible and interesting to every level of cook and the days are themed, taking in two of Lee’s favourite places in the world, Asia and Spain, places Lee has travelled, and eaten, extensively. This is food that is packed with bold flavours and bright colours, that also happen to do us good.

This is the weekend for plant-based inspiration! You’ll leave with a host of exciting recipes and bags of knowledge about plant-based food in general, with resources and support offered for anyone thinking about cooking and living a vegan lifestyle or those simply looking at incorporating more plant-based dishes into their kitchen repertoire.

Saturday – Asian Street Food Celebration
Asian cuisine, focusing mainly on South East Asia, is so vibrant, fresh and tantalising. It is a place very close to Lee’s heart, where every street seems to be a moveable feast. This street food represents one of the world’s greatest food experiences, eating delicious dishes whilst getting lost in a maze of food vendours and flavours.

Having lived in the Philippines as a child, Lee was raised on spicy, fragrant food and he can’t wait to share with you a range of recipes that summarises, in many ways, the food of such a diverse area. One thing is constant though, the food is always amazing!

We’ll be making a creamy and spicy Malaysian Squash & Coconut Laksa, Teriyaki Tofu Onigirazu – Japanese Sushi Sandwiches with Cauliflower Rice, fragrant Pad Thai Salad with Kickin’ Peanut Sauce and Sticky Thai Mango & Coconut Rice. There will be surprise dishes on the day too!

Sunday – Spanish Fiesta Feast
Lee is in love with Spain, his family have a home on the coast in Murcia. He has just spent the summer there cooking and travelling this diverse country. These original recipes have been developed recently, using the very best seasonal produce, most are classic dishes veganized, with all the fresh and satisfying Mediterranean flavours.

We’ll be cooking a show stopping Wild Mushroom Paella, light and fluffy Pea & Mint Tortillas with Garlic Mayonnaise, rich and more-ish Andalusian Chickpeas, a Mandarin, Red Onion & Black Olive Salad and Almond Horchata. Dessert will be a twist on a classic Spanish Custard Tart, we’ll make Mini Chocolate Custard Pies (all recipes are gluten and sugar free, but satisfying decadent!).

Lee will share his passion for Spanish cooking, it’s variety, colours and big, bold flavours. With winter just round the corner, we’ll be making some satisfying classics, to ensure you have the healthy comfort food recipes you need to see you through winter. A Taste of Bliss – Our Vegan Cooking & Yoga Holiday, Spain

The Beach House Kitchen has been a little quiet of late, we’re in Spain and have just finished an amazing week of cooking, yoga, workshops, beach time and a lot more……

A Taste of Bliss was an idea we had with Will and Malene, we talked about it last year when we were in Goa and after a year of planning it was great to see it all happening, in our eco-villa, right on the beach in the beautiful little gem of a village, La Azhoia.  We envisaged a time in a beautiful location to re-energise and refresh, relax and recharge.  A time and space where we could come together and share contentment and freedom, a calm corner of the world where we could get away from it all and enjoy a healthy lifestyle.

Will, Jane and I shopped for days, scouring the local markets for the best produce and visiting Moroccan shops and an organic co-operative in the countryside. After picking everyone up at the airport, the bliss began! Days of restorative and relaxing yoga, healthy plant based meals on the terrace, BBQ’s, walks along the beach to little cafes, a lunch at a local taverna and not to forget a cruise on a vintage, wooden yacht. The cruise was a little choppy, we had strangely windy weather this May, but we managed to make it to a little cove where we swam and enjoyed our packed lunches.  There were also regular workshops to help us tune into peace and happiness offering tips and techniques to living a healthy and vibrant lifestyle.

The week went so quickly and we didn’t want it to end, we have decided that this will not be the last Taste of Bliss, watch this space or join our Vegan Cooking with Beach House Kitchen group on Facebook to hear about our future plans.

We’re spending the next month in Spain on the beach, perfecting our paella’s and working on a few projects.  After that we’ll drive, zig zag style, back to the UK via Portugal.

Vibrant Vegan Manchester – What a weekend!!

 What a weekend!  We took our Vibrant Vegan workshop to the North West and loved every minute!!

 

On Saturday we got set up and then explored Manchester, a vegan paradise for sure, loads of amazing vegan restaurants.  Then Sunday, BOOM!, Vibrant Vegan kicked off in the awesome Food Sorcery in Didsbury.

The snow caused some problems for people travelling, anyone who couldn’t make it, we’ll see you in the autumn hopefully!  Everyone who did brave the elements, what an lovely group!  We shared a top day of cooking and getting to know each other.  I’m blown away at how well people work together and share cooking skills and good times.

The food all looked and tasted amazing and was ready bang on time, what an achievement, considering it was quite a complex menu and we’re all working in a new kitchen.

Beach House Kitchen Event Update – What’s cookin’ in ’18?

We had a great time at the weekend, hosting a A Healthy New Year‘ Yoga and Plant-based Cooking Day Retreat with Claire from Inspiratrix Yoga.  It’s wonderful to cook locally and see so many enthusiastic people in North Wales digging what we do.  I’m blown away by how many non-vegans are now cooking more vegan meals.  Pictures of the event are over on our BHK Facebook cooking group.

I am currently working on new events for ’18 and even looking into ’19.  We love collaborating on events and getting out and about around the UK.

Our long awaited Cornwall Vegan Cooking Holiday is looking ever more likely.  We’ve found a stunning location down near Lands End and will hopefully have some news on that very soon.  There will be excellent yoga, healthy and vibrant vegan food cooked by us and a whole host of activities designed for relaxation and rejuvenation.  If you’re interested, contact us on the email above.  Places will be limited.

Later in the ’18 – when (or if;) we make it back from Spain, we’ve music festival cooking lined up and more food festivals, if you know of any local food festivals who are interested in vegan cooking, let us know.

Looking back at the photos of ’17, we’re surprised how far and wide we got, from cooking in front of a packed crowd at Vegfest London, to a retreats at our much loved Trigonos, North Wales and cooking to a tent full of hungry non-vegans in Ludlow Castle.  Although one of the highlights for me will always be cooking at the Stadium of Light!  Home of the finest football team in the land (who are just giving everyone else a chance at the minute;)

We also love getting out there and talking vegan, we had a great time chatting about all things vegan in ’17 at food festivals and in book shops.  

We hope to see you somewhere on the road in ’18 or in the future!

Food for the Soul – Yoga & Plant-based Cookery Day Retreat, North Wales

 

Come and join us for a revitalising and relaxing day retreat amid the mountains in beautiful Mynydd Llandegai.  Learn to cook satisfying, healthy vegan food and relax deeply with yoga and meditation. We’ve planned a peaceful day to help you recharge, nourish yourself and get lots of healthy inspiration.

The day will start with nutritious herbal teas and then experienced local yoga teacher Claire will lead you through an extended yoga class designed to help you use breath and movement to feel more grounded and revitalised. Beginners and improvers are welcome.

In the afternoon Lee will demonstrate how some of the dishes were made and share knowledge and tips about creating simple and healthy plant-based dishes at home. Questions are always encouraged.
After the cooking demonstration, it’s time for afternoon tea and cake. We’ll end the day with a meditation session with Claire to send you home full of good vibes.
You will receive a full recipe booklet from the event to take home so you can recreate magic in your own kitchen.

Vibrant Vegan! Healthy Global Cooking Workshops, 3rd & 4th February ’18 Hackney, London

We’re VERY excited to announce our latest BHK vegan cooking event down in London!

Are you looking for new plant-based cooking inspiration for the new year?  Lee invites you to get healthy and happy in the kitchen, and celebrate the diversity of vegan food whilst learning new skills and techniques.

The dishes are all gluten-free and mainly using organic ingredients, some that Lee will bring from his local farm in Wales. 

The daily themes for the Vibrant Vegan! weekend will be: 

Saturday – HEALTHY VEGAN JUNK FOOD

All the textures, treats and flavours of fast food, but good for you!  We’ll start with a Cacao & Kale Mudslide Smoothie, then for lunch, Miso & Shiitake Ramen Bowl, Mac & Jack – BBQ Pulled Jackfruit with Sweet Potato Mac & Cheese, plus a quick Rainbow Sauerkraut. Dessert will be Mexican Chocolate Brownies with Dulce de Leche and Mango N’Ice Cream.  We’ll also learn a simple and inexpensive technique to make your own Chickpea Tofu.

Sunday – INDIAN FEAST DAY

Lee has travelled to India many times and is passionate about all things Indian food.  We’ll be cooking some of his favourite recipes picked up on his travels.  The day will start with a Rooibos & Almond Masala Chai, then for lunch we’ll make Squash & Cashew Butter Masala Curry, Thoran – Keralan Coconut Stir-Fry, Masoor Daal Tadka, a quick pickle and raita, plus a decadent raw dessert with Almond & Cardamom Biscotti and Smoky Cashew Cheese.  You’ll also learn a technique to make the perfect spiced rice.  Every time!

A Healthy New Year: A day of yoga, inspiration and plant-based cookery

Start your 2018 in a good way with this day-long mini-retreat in Caernarfon, hosted by chef extraordinaire Lee Watson, author of the vegan cookery book ‘Peace and Parsnips’, along with yoga teacher Claire Mace, who teaches classes on Ynys Môn that help people honour the wisdom of their bodies, reduce stress and feel better in themselves.

This day will get you feeling muscles you didn’t know you had, learning some top cookery techniques and relaxing deeply. We want to inspire you with vibrant, nourishing food and easeful movement to recharge your enthusiasm for self-care and healthy living.

Begin the day with a fresh smoothie, followed by a two-hour yoga session with Claire, with options both for those new to yoga and those wishing to improve their practice. Expect to stretch deeply, let go of stress and feel more centred.

Then sit down to a delicious vegan and gluten-free lunch. Lee’s food is always super-tasty, varied and inspiring. Expect dishes influenced by his global research into vegan diets, made with locally-sourced produce grown at Tyddyn Teg in Bethel.

Afterwards Lee will share some easy and effective vegan cooking techniques through live demonstrations. You will learn about making healthy tasty snacks and salads, plus dessert and comfort food that doesn’t leave you feeling guilty or lethargic.

Global Vegan & Vegfest – Our big weekend in London

I’m just preparing for what is going to be a big weekend for the Beach House Kitchen. We’re heading to the big smoke for some fun and cooking!

We’re getting a car load of tasty ingredients ready for our events, we’re transporting the Beach House Kicthen to London this weekend!

Starting with the Global Vegan Cooking demonstration and lunch on Saturday. We’ve a few tickets left, but we’ve nearly got an arch full (the event will be in Sunshine Arts Centre, their main room is a railway arch!) We love it!! We’ll be cooking lots of global vegan recipes and having a mezze lunch.

Then on Sunday we’re off to Vegfest, a huge vegan festival in London. We were there two years ago and had a great time. We’ll be doing a cooking demonstration at 2pm, can’t wait to see all the new vegan foodie products and ideas and hopefully see some of Will Tuttle’s talk.  Not to mention meet lots of amazing new people.

Home Cooked Happiness Vegan Cooking Retreat – Photos, Food and Thanks

Here are a few photos of our recent Home Cooked Happiness retreat at the beautiful Trigonos in North Wales.  There were full days of vegan cooking demos, walks near Snowdon, yoga and lots and lots of good eating (and laughs)!

I cooked simple and creative dishes from all over the world; Mexico, Lebanon, Italy, Spain, Indonesia, Greece and China.  It was a pleasure to cook for such a wonderful group of people, I love these retreats, always leaving with a whole new gang of friends and inspiration to do more cooking retreats/ holidays.  I just have the best time!

This time of year means an abundance of incredible organic, seasonal produce

I was so lucky to be able to cook with almost exclusively organic, local produce from the Trigonos farm and the brilliant Tyddyn Teg.  Thanks to Judy and Claire for providing produce that chef’s dream of;  Crown Prince Squash, Spaghetti Squash, beautiful greens, radiant tomatoes and even giant Welsh aubergines.

I even managed to get some local mushrooms, grown just the other side of Snowdon.  We had some foraged Chaterelles, loads of Shiitakes and even some Hedgehog mushrooms.  They made our paella extra special!  Thanks to The Mushroom Garden.

Home Cooked Happiness starts in the kitchen, the heart of the home and ripples out into all aspects of our lives.  After all, eating a healthy and peaceful diet can only make our lives healthier and more peaceful!!  Cooking nourishing, fresh food at home is for me, one of the most important things we can do with our time.  It’s a gift for ourselves, body and mind, and those loved ones we share our lives with.  It doesn’t have to be fiddly or complicated, we learned loads of methods and techniques to make the most out of plants, the kind of dishes that anyone will enjoy, young or old, vegan or otherwise.

We went all Mexican on the first night.  Quesadillas, mole and all the bright and colourful trimmings.  I love it!

Every meal is accompanied by a varied cheese board, sometimes with homemade cheeses.

I’d like to thank Vegusto, V-Bites and Mozza Risella for providing some tasty cheeses for our cheese boards.

Thanks to our lovely yoga teacher Claire for getting our mornings off to the best possible starts.

We start most mornings with yoga, meditation and a healthy breakfast, normally light, there is a lot of eating to do everyday!

We had three cooking demos every day, ranging from making plant milks and cheeses, to all kinds of global dishes, curries. soups, breads, cakes, desserts and lots of trying new ingredients from around the world.  Not to mention some pickling and fermenting.

I love cooking and preparing for these retreats, it pushes me to try out new things and develop new recipes.  Each attendee gets a big, fat recipe booklet to take home and play with in their kitchens.  The vast majority of the recipes are designed especially for the specific retreat.  Here’s one:

The Italian Dinner rounded things off with seasonal feast of pasta, local vegetables and other Puglian delights!

I can’t imagine a more beautiful location to host a retreat. I feel very lucky to have worked at Trigonos and be able to invite happy cooks into Snowdonia.

Thanks to all at Trigonos for the care, help and support in getting this retreat together and running it.  Most of all, thanks to all the Home Cooked Happiness group who made the retreat so special and memorable for me.  Your positive energy and passion made cooking for you a dream!  Now all you have to do is practice, practice, practice.  I can’t wait to see your kitchen inspiration over on our Facebook vegan cooking group.

So that’s it for our Trigonos retreats this year, both Home Cooked Happiness and One World Vegan have been an incredible experience for us both.  They have flown over and we’ll hopefully see some of you up here next year for more whole food, plant-based cooking and good times in North Wales.

One World Vegan Cooking Retreat – Photos, Memories and Thanks

I think pictures sometimes tell a better story than words.  We had an amazing time at our vegan cooking retreat last week at Trigonos.

Jane and I would like to thank all who attended and the Trigonos team for making it such a special and memorable time.

We were lucky with the weather as the sun shone for most of the retreat and we had a good walk around Snowdon.

We cooked food which we love and enjoyed on our travels around the Balkans, China, Indonesia, Italy, India, Mexico and more.

The buffet table was always packed with dishes;)  We brought the flavours  we savoured around the world back to North Wales.

I came up with a menu filled with original recipes, created especially for the retreat.  I love sharing the bounty and creativity of pure plant-based cooking.  With a few tricks and tips, it can be so easy to recreate wonderful, healthy, wholefood vegan food at home.

Everyone who attended mentioned that it was a daily feast, but there is always room on the last day for the chocolate tasting.  Thanks to Willies Cacao, Essy & Bella and Vivani for supplying an interesting range of chocolates.  We traveled all around the world, just by sampling chocolates of differing origin.  A great way to travel!!  I think one of the most popular times is when we make hot chocolate with Willie’s 100% Single Estate Peruvian Black Cacao.  It tastes like no other hot chocolate!!  As we all know, chocolate is very, very important and should be taken seriously;)  Results of the chocolate tasting will be on a post soon.

We made a variety of vegan cheeses, from Smoky Cashew Cheese to Baked Almond Cheese, but I’d also like to thank Vegusto, V-Bites and Mozzarisella for contributing cheeses to our cheese boards at lunch and dinner.  I’d also like to mention the incredible Tomato Stall, based on the Isle of Wight, who produce some of the most delicious tomato based delights.  Their Oak Smoked Tomatoes are one of my favourite things.  I’m also loving their new Sun Dried Tomato Balsamic Vinegar.  Wow!!

We used a lot of Trigonos produce, grown to organic standards.  It’s such a privilege to cook with home grown produce.

Many of the group woke around dawn to pratice Tai Chi by the lake, even spotting otters most mornings.

It’s a brilliant experience for me to meet so many people passionate about cooking and open to learning new techniques and recipes.

Great to see Janice from the ace blog Nourished by Nature again and thanks to Jan for taking some of these pictures.   I must mention Ninja Blenders for providing the BHK with a new, high quality blender and food processor, after ours finally gave up on a chocolate mousse one day.  It’s got so many features and we’re loving making ranges of smoothies, raw desserts and sauces with our new gadget.  It’s easy to clean and use, with loads of power to make things creamy and smooth.  We’ve never had a blender this good!

We’d also like to thank Laura from Yoga Wellbeing for coming up and teaching our yoga and meditation classes, plus John, Sarah and Gillian for the music and storytelling in the evenings.

Yoga classes in the mornings and meditation in the evenings help us all to relax and enjoy the beautiful location.  Classes taught by lovely Laura at Yoga Wellbeing (my sis;)

These cooking retreats go so quickly, sometimes I wish they could last for longer, we meet so many like-minded people and always make new friends.

One World Vegan Cooking Retreat – 29/8-2/9/17, North Wales

I’ve just put the finishing touches to the new menus for the ‘One World Vegan’ Cooking Retreat at Trigonos, North Wales.  I’m really excited about them, the food is looking great and we have a diverse range of dishes to learn how to cook and most importantly, taste!  No one has seen these dishes before, expect Jane, we were up to 1 am last night trying new dishes out.  Yum!

I can’t wait to get cooking soon, Trigonos is one of my favourite places to cook and we’ll be using organic produce from a local farm and even Trigonos’s own fruit and veg, grown using organic practices.  I’m a very lucky chef indeed!!  All this plus spices and ingredients I brought back with me from the food markets of Delhi, Tripoli, Beijing and Jakarta.   It’s going to be a feast!
