The Food

YoVeg! Mediterranean Vegan Yoga Holiday in Spain will be full of delicious plant-based food cooked by our amazing chef Lee Watson (cookbook author) using super fresh ingredients sourced from the local markets in Costa Calida.

A true taste bud party 3 times a day every day! During the retreat, Lee will also share with you a cooking workshop where you have the opportunity to learn new techniques and get hands-on with the amazing fresh local produce from the Murcia region.

Our Vibrant Vegan! Snowdonia holiday is fast approaching and we have a challenge for our attendees, and you all, let’s get healthy together!!

We’ve been travelling a lot recently and feeling out of balance, our diet has been all over the place, it’s been an amazing adventure, but we’re so glad to be back in the Beach House after a few years.  We’re feeling grounded and at peace again, the Beach House energy is strong!!

What’s the idea?……

I’m back in my beloved kitchen, surrounded by glorious local produce, fresh mountain air and inspiration to bring you healthy and delicious recipes.  The Beach House lifestyle revolves around a sense of wellness and positivity in life and to tap back into that has been transformational for me.

But it’s not all about a healthy diet, exercise, especially yoga, and positive practices, like meditation, also play a major part in this.  Wellness is a fine balance, it touches and is influenced by everything I do.  It was this motivation and a desire for me to be better and brighter that resulted in the Vibrant Vegan!

 

Let’s get together, form a group of like-minded, open hearted folk who are seeking a exciting new adventure.

 

This challenge is open to anyone, you pick and choose what works with your lifestyle at the minute, just a little taste of vibrant vegan will be enough to get started.  After that…anything is possible!!

I was told by one of my favourite teachers that an ounce of practice is better than a tonne of theory so…..LET’S DO IT!

Vibrant Vegans!!

Here’s the guidelines:

 

– Eat a balanced vegan/ plant-based diet

– Make healthy eating choices, so no white sugar, white flour, alcohol, takeaways or heavily processed, deep fried food. Eat good fats, cold pressed oils and loads of fruit and veg. Eat the rainbow!

– Exercise daily or whenever possible. Even if it’s just a brisk walk, gently stretching or going to a yoga class. Raise our heart rate a little.

– Drink more water. Water is life! Drink water throughout the day.

– Go to bed early. Get 8 hours-ish sleep, your optimum sleep.

– Take deep breaths ofter, we’ll be posting links to videos about this on the group (see below). Breathing right, which may sound a little strange, is the foundation for a healthy, energised life.

Vegan Wine and Tapas Evening ~ Manchester, Saturday 9th November 2019

Vegan Wine Tasting and Tapas Evening, Manchester

For one night in November, the vegan chef, Lee Watson (author of ‘Peace & Parsnips’ cookbook), and professional wine geek, Robert Moore, are teaming up to bring you an entertaining and exclusive evening of delicious wine and food pairing.

 

Guests will be treated to ten fabulous wines* from around the world, each wine being specially paired with mouth-watering tapas from the same country.

 

Lee will be creating bespoke recipes especially for the evening, using local, seasonal produce, most of which will be organic. It promises to be a menu filled with plant-based surprises and bold, creative flavours that everyone will enjoy, vegan or otherwise.

Albariño grapes in Rías Baixas, Lee has just returned from Galicia in Spain. We will be sampling a crisp, citrus and floral Albariño soon….

As you try each of the wines and accompanying tapas, you’ll be learning not only how to properly taste wines, but more about the wine making process and regions where they grow.

 

Did we mention that all the wines and all the food are completely vegan? We did? Oh, good.

 

Rob has created a varied and dynamic vegan wine list, one which will take your tastebuds on a global adventure. He will be answering any questions you have about the wine, as well as imparting knowledge on how to best match wine and food, offering you skills to asses and buy quality vegan wines.

 

Lee will talk about the dishes and how they were prepared, sharing vegan cooking tips, plus you will leave with a recipe booklet containing a number of the tapas recipes so you can try them at home for yourself.

LOCATION

Trigonos is a retreat centre set in the picturesque Nantlle valley, just beneath Mount Snowdon, beside a peaceful lake and forests. A variety of comfortable rooms are available, many with beautiful views.

Lee is a chef at Trigonos and has hosted a number of holidays and retreats here. Trigonos is a ‘secret garden’, a place to get away from the outside world for a while and reconnect with nature, find peace and calm, engaging with new found friends and the breath-taking scenery of Snowdonia.

FOOD

Being a vegan chef, healthy and delicious food is one of the main focuses. Lee has created menu’s, using local, seasonal and organic ingredients, some of which are even grown on-site.

From quick dishes you can try easily at home, to desserts and cakes, homemade breads, to curries and attractive salads, a wide range of skills and dishes will be covered. Vegan roast dinner, soups and stews. Prepare for the autumn, with tips on preserving and fermenting.

 

 

Autumn is a time of abundance, this is reflected in the meals, a huge range of flavours and textures, with lots of treats along the way. This is plant-based food that everyone will enjoy!

Lee will also be hosting two cooking demonstrations (see below), where you’ll see how to cook the dishes you are enjoying, plus pick up many new cooking tips.  Lee’s demonstrations are upbeat and fun, with opportunities for you to put an apron on and get involved.

All meals are prepared by the Trigonos team, with love and care, served buffet style in the dining room, overlooking the mountains and lake.

Yoga is an excellent practice to incorporate into our lives. It offers a chance to find balance, positive energy and peace. Laura will be our yoga teacher for Vibrant Vegan!, the classes will be found useful for all levels, absolute beginner to experienced yoga practitioner.

Laura’s yoga promises techniques to ease stress and tension, stretch and strengthen out bodies and connect in a positive way with ourselves.

Tom is an inspiring and experienced leader of groups into the wilderness with his company ‘Nomad – Journey with Purpose’, with a focus on re-establishing our relationship with nature and how that reflects within ourselves and others.

We are so lucky to have him join us to lead an afternoon beach walk along the stunning Dinas Dinlle (loads of pictures of this in Peace and Parsnips), a mini adventure and loads of fun, with breath-taking views of the Snowdon Range, Llyn Peninsula and Anglesey.

 This is no ordinary stroll. This is walking with purpose, walking to discover more about ourselves and our environment.

Tom will also be joining us around our Autumn equinox bonfire, where he and Lee will be telling stories and reading poems. You are invited to join us in sharing a story or poem, or just warm your hands by the fire and contemplate the trees, lake and stars.

Janice’s Fantastic Fermentation Masterclass

We have never met anyone as passionate about fermented foods!  A real Fermentista!! Janice is a macrobiotic health coach and writes the wonderful blog ‘Nourished by Nature’, running regular fermentation classes in and around her Glasgow home.

We love Janice’s enthusiasm for healthy, seasonal and nutritious food, she is a real inspiration for us, and believes:

“We can all make a very positive difference to both our own lives/health, and also environmentally through minimising the negative impact we create from the foods we choose and how we source them.”

Janice will show us how delicious fermented foods, made with simple techniques, can heal ourselves on every level and taste amazing!  We’ll be sampling seasonal kraut, some fermented relishes/chutneys/dips and also some seasonal kombucha flavours!

Owain is our resident veg superhero! We’ll go for a short tour around the Trigonos farm, where all veg and fruit is grown using organic principles, taking in foraging spots. Owain is an experienced horticulturalist and has been growing veg at Trigonos for years. He will be able to answer questions and help us to appreciate the importance of amazing, fresh produce, with plenty of growing tips.

An afternoon making celebratory door wreaths with locally foraged and hand grown woodland produce and fruits like acorns, alder masts and tiny pine cones.

Gillian Monks is a local druid, quaker, friend and best selling author of last years ‘Merry Midwinter – How to re-discover the magic of Christmas time’.

We’ll spend the afternoon creating autumnal wreaths, broaches/ posies, pine cone gnomes, or anything your imagination conjures. An afternoon with Gillian will help us to learn new skills and celebrate the rhythms, abundance and beauty of nature.

Jane is Lee’s partner and will be leading our evening meditation, bringing us closer to our breath and a sense of peace and well-being.  The perfect practice for helping to quieten the mind and get a blissful nights sleep.  Jane likes to keep things simple and believes that even a little  meditation can change our lives!

What a Year 2018! Great Memories and Big Thanks to YOU

We just wanted to say a huge thanks and best wishes for 2019!

 

But first up, 2018, what a year!!

 

It’s been a mega time, we’ve packed so much in, cooked in so many amazing places and met so many special people along the way.

 

You know that we’re all about tasty and healthy plant-based food, but it’s also, very much about YOU.  The kind and open hearted folk who make it all happen, give it all such a positive and creative feel.

2018 has been the most successful year for the Beach House Kitchen blog, in more ways than one, and the most enjoyable and rewarding part of the whole thing is connecting with and sharing recipes with you all.

You make this blog and our Facebook and Twitter pages a great place to be and inspire us to keep sharing and enjoying what we do.  Thanks to all for your amazing feedback over the festive season, seems a few of you enjoyed the Mushroom Wellington!!

What have we been up to in 2018?

 

From our Taste of Bliss Cooking and Yoga Holiday in stunning Spain, to our Cornish Vegan Getaway near Lands End, to the centre of London and the awesome Made in Hackney. We’ve had events all over North Wales and in Manchester, not to mention our annual cooking demos and talks at Ludlow Food Festival. In 2019, we’d like to visit new towns and cities, give us a shout if you know any good venues/ locations.

Highlights from our Vegan Christmas Cooking Workshop – 2/12/18 Manchester

A CHRISTMAS FEAST TO REMEMBER!

Our day started well before dawn in North Wales, then we all scooted down to our wonderful venue Food Sorcery in Manchester and got the ovens fired up….

The day was a mixture of cooking demonstrations and hands on cooking, working from our specially designed recipe booklets and loads of support from the team.

Viva Vegan! Lee’s interview with Veganuary

Hi Lee! What’s the inspiration behind this exciting plant-based cooking holiday?

We just love cooking and sharing delicious vegan food.  We’re excited to be getting together and showcasing the diversity and potential of a plant-based diet and healthy lifestyle.  We also wanted to do it in a villa near the beach!  Why not!!  Viva Vegan offers up a weekend of relaxation, sensational food and a chance to learn new kitchen skills.  We want to share our passion for good living!

How did the idea come about?

Áine and I have been chatting for a while about collaborating on a cooking holiday.  I love Áine’s style of cooking and recipes.  I’ve organised holidays like this in the past and they’re just such fun and are an opportunity for everyone to learn and meet new, like-minded people.  Having Áine and I contributing to the weekend, also makes the food and workshops even better, a greater variety of styles and influences for everyone to enjoy.

Why did you pick Spain?

I’ve been going to this little village in Spain for over 12 years and it’s one of my favourite places in the world.  I guess I just wanted let people into the secret!  For me, its the most beautiful stretch of coastline in Spain, where the mountains meet the sea and there’s still that feel of ‘real’ Spain.  Murcia is also known as the ‘garden’ of Spain, the local produce is sensational, tomatoes, olives, lemons, peppers, aubergines, fruits and we even have some local vegan wines to sample.

What can people expect to experience on the holiday?

The Viva Vegan weekend is designed to let people experience they’re perfect weekend.  We have a beautiful location, our modern eco villa is right on a quiet stretch of beach, we have winter sun and amazing local produce.  Áine and I will be doing all of the cooking and hosting workshops, which range from a cheese making masterclass to top vegan kitchen hacks and tips.

There is even the option for us to go for a mini cruise on a vintage yacht down the stunning coast.  Maybe a picnic in a little cove?  The idea is we take care of everything, from soothing yoga classes and nourishing smoothies in the mornings, right through to mocktails at sunset.  We’re even having a vegan BBQ night.  It’s a time to enjoy peace, walks in nature, a swim in the Med, a visit to local cafes and villages.  The idea is you can transform the way you cook or just curl up in a hammock with a good book.  It’s all just a recipe for an inspiring and blissful weekend.

Cook Vegan! Christmas Feast, Manchester – Cooking Workshop and Lunch

Learn to cook and plan a creative, show stopping three course vegan Christmas lunch with support and guidance from Lee Watson, plant-based cook and cookbook author, and the Beach House Kitchen team.

Is this your first vegan Christmas?  Are you cooking for vegans or just interested in trying something new and creative?  Maybe you’re a vegan cook looking for fresh festive foodie inspiration?

This hands on workshop is packed with delicious plant-based alternatives to a traditional Christmas lunch. All dishes are full of bold flavours and textures that everyone will enjoy.

Cook Vegan Xmas will leave you feeling cool, calm and prepared for the great Christmas day cook off!

We’ll cook together a three course meal, making a starter, stunning centre piece and all the trimmings plus a decadent dessert. Many of the dishes you can freeze at home, to be extra prepared for the big day.

You’ll also get a full recipe booklet, including an invaluable timetable, so you can plan your cooking leading up to the big meal, making sure everything is ready at the right time. You’ll also leave with some essentials; stuffing, gravy and cranberry sauce for the freezer.

We have an excellent venue, with fully licensed bar and fresh tea and coffee available.

Anyone familiar with Lee’s cooking will know that the recipes are going to be creative but not overly time consuming or complex. Christmas day is about finding a balance between delicious dishes and straightforward preparation. Leaving more time to raise a glass or two and enjoy the day with friends and family. He’ll even make you fall in love with Brussels Sprouts. It is possible!

The workshop is hands on, fast-paced and fun. Like the big day itself! We’ll work together in groups of three (max), with some techniques demonstrated by Lee and some working from the recipe booklet. All levels of cooks will be benefit from the day. There will at least 30 minutes for lunch at the end.

Dinner at the Farm – Photos of our Kashmiri Feast on Tyddyn Teg Organic Farm

A few pics from last weekends Dinner at the Farm. The first of many we hope, we had a blast!!

Tyddyn Teg farm is a beautiful location and we cooked exclusively using their stunning organic produce.  What a treat!  A variety of summer squashes, a plethora of heritage tomatoes, many shades of kale, peppers, aubergines, really interesting Peruvian mint, sweet foot long cucumbers, plus a lot more…..we even offered homemade wine!  Food miles for the dinner ingredients were around 200 metres!!

It was a pleasure to cook and work with the TT team, it is such a positive project, focused on maintaining and developing sustainable and ethical food production and ways of living.  An inspiring place to hang out for the day.   They have so many exciting plans for the future.

The sun came out in the afternoon and the bookings rolled in, benches and tables were made (by the onsite wood genuises) and numbers toppled well over 60.  This took some classic ‘creativity’ and ‘problem solving’ techniques in the kitchen that all cooks know about.  But being on an organic farm, if you need another squash, you just pop out and pick one!

“Simon, any chance of a bin bag full of three varieties of fresh picked kale.” 10 minutes later. “Is this enough!!” The beauty of cooking on a farm:)

Vibrant Vegan! Cornwall – Photo scrapbook of our recent weekend of healthy plant-based cooking and yoga

Here are some of our favourite pictures from last weekends Vibrant Vegan Cornwall getaway, just beside Lands End.

We were blessed with sunny weather and clear skies and joined by a wonderful group of people.  We shared many memorable times, lots of empowering yoga with Complete Unity Yoga in the Yoga Hall, so much plant-based food, delicious and healthy, with global twists and plenty of treats.  Boswedden House was a beautiful location, comfortable with a nice big dining room and kitchen (the most important rooms right!)

Stunning Cape Cornwall! The sun shone all weekend.

The gardens of Boswedden overlook the coastline and the little old tin mines which trail along the cliffs.  They even have a labyrinth in the garden which we enjoyed.  It was the perfect location for our Saturday night fire, where we told stories, sang songs and read poetry.  We even burned a chest of drawers (old and dilapidated;) which added a real spark to the evening!

We welcomed an amazing group of people! (Not sure what I was looking at here!;)

Malene’s yoga was based around the teachings of Patanjali, taking us right back to the roots and heart of yoga.  All took part and felt the benefits.  Yoga is for all!  No matter what level we’re at.

On Sunday night Malene and Will led a transformatory experience in the yoga hall.  Yoga in the mornings is always a highlight, especially when the pool is open beforehand.  The best way to start any day!

Delphiris took over the lounge for the weekend for a variety of massage sessions, along with Jane’s reiki and menstrual cycle workshop, Malene was offering one-to-one yoga consultations and lifestyle coaching.  All these therapies had such a positive effect on the weekend.

It’s rare in life we can just let go, focus solely on taking care of ourselves and re-energising and aligning ourselves with healthy ways of being.  This is what the Vibrant Vegan weekends are all about, it goes way beyond just what we eat, but a wholesome, balanced plant-based diet is a excellent cornerstone for a healthier body and lifestyle.

We’re chuffed that there are at least two new vegans in the world after the weekend!  We all talked a lot about new ideas, impetus and strategies to lead a more balanced life back in the ‘real world’, a life that is based around our own well-being and peace of mind, making us better equipped to deal with the ups and downs in life, allowing us to give life our very best shot!

Our Vibrant Vegan holidays showcase what a healthy plant-based diet is all about, variety, colours, textures, fresh flavours, decadent treats, amazing nutritional bits and pieces.  It’s a no lose, no sacrifice, all good way of nourishing our body.  It doesn’t have to be challenging either, so many quick recipes when time is the master!

The weekends are all about inspiring us to cook fresh food, during the cooking demonstration we talked about simple techniques to change the way we cook at home, saving time and approaching new ingredients with confidence.  We even had a chat about vegan nutrition and how to thrive on pure plants.

I know that a lot of people made it down to the beach and the surrounding coves, the ocean down in Cornwall seems really grand.  There is the feeling that you’re right at the end of the island, looking out into the big, big blue.  Refreshing!

Cook Vegan! London – A Weekend of Delicious Plant-based Cooking, 13th-14th October ’18

Discover creative cooking skills and have fun in Hackney this October with Lee Watson (author ‘Peace and Parsnips’ and beachhousekitchen.com). Saturday is all about Asian Street Food and on Sunday, we explore the diverse and hearty cuisine of Spain, perfect dishes for the upcoming wintertime.

These workshops are hands-on, we’ll be making vibrant, globally inspired vegan dishes like a show stopping Wild Mushroom Paella, light and fluffy Baked Pea and Mint Tortilla, creamy and spicy Malaysian Squash and Coconut Laksa, classic Teriyaki Tofu Onigirazu – Japanese Sushi Sandwiches with Cauliflower Rice, fragrant Pad Thai Salad and lots, lots more. Desserts will include a Spanish Chocolate Custard Pie (sugar and gluten-free), plus Sticky Thai Coconut and Mango Rice.

You’ll no doubt learn many new tips and techniques to make healthy, inspiring, home cooked meals an everyday reality and tune into, or unearth, your inner chef! We’ll be focusing on nourishing food with big flavours with plenty of treats; from meals in minutes to decadent desserts, one pan wonders to dishes slightly more complex, aka weekend specials and the best part is, we’ll all sit down together at the end to enjoy our tasty creations.

Each day starts with fresh teas and coffee, and you are given your bespoke recipe book for the day. We talk through the recipes and a little about the nutritional aspects of the days menu and then, we cook! Working together in small teams at well equipped stations. Numbers are kept low, so Lee and his team can offer constant assistance.

The Cook Vegan! recipes are designed to be accessible and interesting to every level of cook and the days are themed, taking in two of Lee’s favourite places in the world, Asia and Spain, places Lee has travelled, and eaten, extensively. This is food that is packed with bold flavours and bright colours, that also happen to do us good.

This is the weekend for plant-based inspiration! You’ll leave with a host of exciting recipes and bags of knowledge about plant-based food in general, with resources and support offered for anyone thinking about cooking and living a vegan lifestyle or those simply looking at incorporating more plant-based dishes into their kitchen repertoire.

Asian cuisine, focusing mainly on South East Asia, is so vibrant, fresh and tantalising. It is a place very close to Lee’s heart, where every street seems to be a moveable feast. Lee is in love with Spain, his family have a home on the coast in Murcia. He has just spent the summer there cooking and travelling this diverse country. These original recipes have been developed recently, using the very best seasonal produce, most are classic dishes veganized, with all the fresh and satisfying Mediterranean flavours.

We’ll be cooking a show stopping Wild Mushroom Paella, light and fluffy Pea & Mint Tortillas with Garlic Mayonnaise, rich and more-ish Andalusian Chickpeas, a Mandarin, Red Onion & Black Olive Salad and Almond Horchata. Dessert will be a twist on a classic Spanish Custard Tart, we’ll make Mini Chocolate Custard Pies (all recipes are gluten and sugar free, but satisfying decadent!).

Lee will share his passion for Spanish cooking, it’s variety, colours and big, bold flavours. Lee and his team will also be preparing a Mandarin, Red Onion and Black Olive Salad, plus a Almond Horchata to sample on arrival. The best bit is, we’ll all sit down together at the end to enjoy our tasty creations. If the weather is nice, maybe we can even eat outside on the terrace, overlooking the river Mersey.

Spain is changing, with more and more vegan options and restaurants appearing, but many dishes are still based on meat and fish. Lee would like to show you how to get big flavours and the right textures, using only plant-based ingredients. It is more than possible!

Lee will share his passion for all things healthy, vegan and of course, Spain. He will demonstrate some techniques and dishes, but mainly you’ll be cooking in small teams, working together at well equipped kitchen stations with constant support from the Cook Vegan! team.

We’ll be cooking dishes with big, bold flavours and colours. With winter just round the corner, these are satisfying classics, ensuring you have the healthy comfort food recipes you need to see you through a very tasty winter. Food that is rich and gorgeous but also nourishing and packed with nutrients. A happy balance!

You’ll leave with a full recipe booklet and information on plant-based nutrition, so you can try out all the dishes at home for yourself. The recipes are flexible, so once you’ve learned the technique for say, a great paella or tortilla, you can use different ingredients, or whatever’s in the fridge.

This is Lee’s second visit to the Food Sorcery kitchen, a brilliant, modern venue. Judging by last time, the weekend will sell out quickly.

  • How to select and properly store delicious mushrooms
  • Secrets behind a light vegan tortilla/ omelette
  • How to press and drain tofu before use

Join us for a rejuvenating, empowering and nourishing day retreat on the stunning coastline of Anglesey. Local yoga teacher Claire Mace is teaming up with vegan chef and cookbook author Lee Watson to bring you a special programme based on grounding yourself in a healthy way of being, learning new and transformative habits for body, mind and soul. This approach is rooted in the seasons and the cycles of existence.

Autumn is a time of abundance in so many ways, especially in the kitchen. Lee will be cooking a delicious plant-based seasonal feast for lunch using produce sourced locally in North Wales, with a smoothie in the morning and more sweet treats in the afternoon. There will also be a cooking demonstration and a Q&A session. Pick up new kitchen skills and simple techniques that will make satisfying plant-based meals accessible to you and your family.

Lee’s creative recipes explore the sweet spot between healthy and hearty, decadent and good for you. He believes that this is entirely possible only using plants, and that autumn is the perfect time of year to showcase all the incredible local ingredients on offer in Gwynedd and Anglesey. He has also designed a bespoke recipe booklet and nutrition sheet for the event, covering many of the recipes you will taste, making it easy to re-create them at home.
