This is no ordinary stroll. This is walking with purpose, walking to discover more about ourselves and our environment.

Tom will also be joining us around our Autumn equinox bonfire, where he and Lee will be telling stories and reading poems. You are invited to join us in sharing a story or poem, or just warm your hands by the fire and contemplate the trees, lake and stars.

Janice’s Fantastic Fermentation Masterclass

We have never met anyone as passionate about fermented foods!  A real Fermentista!! Janice is a macrobiotic health coach and writes the wonderful blog ‘Nourished by Nature’, running regular fermentation classes in and around her Glasgow home.

We love Janice’s enthusiasm for healthy, seasonal and nutritious food, she is a real inspiration for us, and believes:

“We can all make a very positive difference to both our own lives/health, and also environmentally through minimising the negative impact we create from the foods we choose and how we source them.”

Janice will show us how delicious fermented foods, made with simple techniques, can heal ourselves on every level and taste amazing!  We’ll be sampling seasonal kraut, some fermented relishes/chutneys/dips and also some seasonal kombucha flavours!

Owain is our resident veg superhero! We’ll go for a short tour around the Trigonos farm, where all veg and fruit is grown using organic principles, taking in foraging spots. Cook Vegan! Manchester – Spanish Fiesta Feast, Cooking Workshop and Lunch, 30th September 2018

Cook Vegan! Spanish Fiesta Feast, Manchester
Sunday 30th September ‘18

Discover new cooking skills at this hands on vegan cooking workshop led by Lee Watson (author ‘Peace and Parsnips’ and beachhousekitchen.com). Learn delicious and creative tips and techniques to make healthy, home cooked plant-based meals an everyday reality.

Lee is in love with Spain, his family have a home on the coast in Murcia. He has spent many years cooking and travelling there and this summer hosted a cooking retreat in a beachside villa.

These vibrant Spanish recipes have been developed recently, most are classic dishes veganized, with all the fresh and satisfying Mediterranean flavours we adore.

We’ll be using the very best local and seasonal produce to cook a Spanish Fiesta Feast::

A show stopping Wild Mushroom Paella
Light and fluffy Baked Pea, Lemon and Mint Tortillas with Garlic Mayo
Rich and more-ish Andalusian Chickpeas

Dessert will be a twist on a classic Spanish Custard Tart, we’ll make:

Mini Chocolate Custard Pies

All dishes are gluten and sugar free, but still decadent!

**Early Bird Offer £79**

Lee and his team will also be preparing a Mandarin, Red Onion and Black Olive Salad, plus a Almond Horchata to sample on arrival. The best bit is, we’ll all sit down together at the end to enjoy our tasty creations. If the weather is nice, maybe we can even eat outside on the terrace, overlooking the river Mersey.

Spain is changing, with more and more vegan options and restaurants appearing, but many dishes are still based on meat and fish. Lee would like to show you how to get big flavours and the right textures, using only plant-based ingredients. It is more than possible!

Lee will share his passion for all things healthy, vegan and of course, Spain. He will demonstrate some techniques and dishes, but mainly you’ll be cooking in small teams, working together at well equipped kitchen stations with constant support from the Cook Vegan! team.

We’ll be cooking dishes with big, bold flavours and colours. With winter just round the corner, these are satisfying classics, ensuring you have the healthy comfort food recipes you need to see you through a very tasty winter. Food that is rich and gorgeous but also nourishing and packed with nutrients. A happy balance!

You’ll leave with a full recipe booklet and information on plant-based nutrition, so you can try out all the dishes at home for yourself. The recipes are flexible, so once you’ve learned the technique for say, a great paella or tortilla, you can use different ingredients, or whatever’s in the fridge.

This is Lee’s second visit to the Food Sorcery kitchen, a brilliant, modern venue. Judging by last time, the weekend will sell out quickly.

On this cooking workshop you’ll learn:

  • How to make a perfect vegan paella, quick and simple
  • How to select and properly store delicious mushrooms
  • Secrets behind a light vegan tortilla/ omelette
  • How to press and drain tofu before use
  • Vegan custard technique and a healthy pie crust

Vibrant Vegan Manchester – What a weekend!!

Vibrant Vegan Manchester in full swing

What a weekend!  We took our Vibrant Vegan workshop to the North West and loved every minute!!

On Saturday we got set up and then explored Manchester, a vegan paradise for sure, loads of amazing vegan restaurants.  Then Sunday, BOOM!, Vibrant Vegan kicked off in the awesome Food Sorcery in Didsbury.

Umami burgers with pressed salad and avocado – some of the amazing food produced by the vibrant vegans on the day!

The snow caused some problems for people travelling, anyone who couldn’t make it, we’ll see you in the autumn hopefully!  Everyone who did brave the elements, what an lovely group!  We shared a top day of cooking and getting to know each other.  I’m blown away at how well people work together and share cooking skills and good times.

The food all looked and tasted amazing and was ready bang on time, what an achievement, considering it was quite a complex menu and we’re all working in a new kitchen.

The kitchen buzzing with activity. Awesome to see:)

“…The day was an absolute eye opener for me. I found my self surrounded by really inspiring and enthusiastic vegan cooks..immersed in a world of new flavours and exciting alchemy. Lee created a relaxed, lively and great fun learning environment. Each dish was orchestrated with time for questions and ladles of encouragement. His team were Lovely; they worked really hard to ensure that everything was at hand, washed up immediately, so we could all focus purely on the glorious creations.  I enjoyed every minute of the day, and the superbly equipped venue and location was perfect.” Anita

We all then sat down to enjoy the gifts of our hard work, a healthy soul food feast; Umami burgers, Mexican Brownies with Dulce de Leche, Sweet Potato Mac and Cheese, BBQ Pulled Jackfruit, Mushroom Bacon with Chipotle Mayo. Yum!!

Vibrant vegans washing up;)

Thanks to all who came and contributed in such an open hearted way.  You’re amazing!!

I even do the waiting on tables;)  Lunch time

Plus, big thanks to Unicorn Groceries for being one of the coolest shops we’ve ever visited, plus Network News North Wales for delivering our recipe booklets mid Siberian blizzard, Tyddyn Teg Farm for picking our organic veggies in the snow and Mandy, Mark and Jane, the vibrant vegan crew, plus all those who stayed at the end to help wash up.  Legends!!

Also huge thanks to Food Sorcery for accommodating the BHK’s many needs;)  So much good will and kindness coming together to make a very tasty and fun event.  Thanks to all!!  See you soon back in the North West.

Nita loving the burgers and the brownies:)

“Soul Food with Lee was a raucous feast of creativity and deliciousness! We cooked for hours, and scoffed our way through our creations: mac n cheese, BBQ-pulled jackfruit, caramel sauce, n’ice cream brownies, burgers and mayo…and all vegan? Magic. His supportive facilitation and teaching allowed us to relax right into the cooking, playing with new tastes and techniques. As a non-vegan, I’ve come away feeling totally inspired about the food I put into my body (if you don’t know about how amazing black beans are yet, look them up), making some more vegan choices, and proudly cooking a few more vegan meals for my family. If you’re looking for new possibilities to unleash your kitchen creativity, get yourself down to the Beach House Kitchen.”  Rhiannon

Our workshops are a mix of demonstrations and loads of hands on cooking.  This was all about Aquafaba.

Happy cooking, L+J:)x

Beach House Kitchen Event Update – What’s cookin’ in ’18?

Thanks to Jane at Formby Yoga for this cool collage of A Healthy New Year Day Retreat, Caernarfon

We had a great time at the weekend, hosting a A Healthy New Year‘ Yoga and Plant-based Cooking Day Retreat with Claire from Inspiratrix Yoga.  It’s wonderful to cook locally and see so many enthusiastic people in North Wales digging what we do.  I’m blown away by how many non-vegans are now cooking more vegan meals.  Pictures of the event are over on our BHK Facebook cooking group.

“The mini retreat day on Saturday was totally inspiring with easy and healthy vegan recipes. Food was truly outstanding and by Lee’s demonstration they certainly seemed achievable by even the most unskilled of cooks!”  Elaine

Cooking at one of our Vegan Retreats

I wanted to update you on what we’re up to in ’18 so far, I’ll always update our events page, and we’ll announce things via this blog or on our newsletters.  Sign up here.

Here’s 2018 so far…………….

“Thank you Lee & Jane for a wonderful time…the demonstrations were really inspiring and of course the food was delicious!!  It was lovely to meet fellow vegans too, to swap ideas….you were amazing!!”  Irene

During our cooking demo at the Ludlow Food Festival (I’m holding an imaginary cauliflower, it’s a long story……;)

18th March ’18 – Our next event in North Wales is ‘Food for the Soul’ Day Retreat.  Book over the next week for our early bird offer!  The location is in the beautiful Snowdonia hills.

One of our recent cooking demonstraion at Trigonos ’17

I am currently working on new events for ’18 and even looking into ’19.  We love collaborating on events and getting out and about around the UK.

Our long awaited Cornwall Vegan Cooking Holiday is looking ever more likely.  We’ve found a stunning location down near Lands End and will hopefully have some news on that very soon.  There will be excellent yoga, healthy and vibrant vegan food cooked by us and a whole host of activities designed for relaxation and rejuvenation.  If you’re interested, contact us on the email above.  Places will be limited.

Later in the ’18 – when (or if;) we make it back from Spain, we’ve music festival cooking lined up and more food festivals, if you know of any local food festivals who are interested in vegan cooking, let us know.

I’ve added lots of new photos to our photo scrap book, check it out here.

Looking back at the photos of ’17, we’re surprised how far and wide we got, from cooking in front of a packed crowd at Vegfest London, to a retreats at our much loved Trigonos, North Wales and cooking to a tent full of hungry non-vegans in Ludlow Castle.  Although one of the highlights for me will always be cooking at the Stadium of Light!  Home of the finest football team in the land (who are just giving everyone else a chance at the minute;)

We also love getting out there and talking vegan, we had a great time chatting about all things vegan in ’17 at food festivals and in book shops.

We hope to see you somewhere on the road in ’18 or in the future!

Cook vegan, get healthy, be happy!

Happy cooking, Lee & Jane:)

Global Vegan & Vegfest – Our big weekend in London

I’m just preparing for what is going to be a big weekend for the Beach House Kitchen. We’re heading to the big smoke for some fun and cooking!

We’re getting a car load of tasty ingredients ready for our events, we’re transporting the Beach House Kicthen to London this weekend!

Starting with the Global Vegan Cooking demonstration and lunch on Saturday. We’ve a few tickets left, but we’ve nearly got an arch full (the event will be in Sunshine Arts Centre, their main room is a railway arch!) We love it!! We’ll be cooking lots of global vegan recipes and having a mezze lunch.

Then on Sunday we’re off to Vegfest, a huge vegan festival in London. We were there two years ago and had a great time. We’ll be doing a cooking demonstration at 2pm, can’t wait to see all the new vegan foodie products and ideas and hopefully see some of Will Tuttle’s talk.  Not to mention meet lots of amazing new people.

If we don’t see you there, I’m sure there will be a few pictures to share next week;)

Home Cooked Happiness Vegan Cooking Retreat – Photos, Food and Thanks

Cooking demos in the studio

Here are a few photos of our recent Home Cooked Happiness retreat at the beautiful Trigonos in North Wales.  There were full days of vegan cooking demos, walks near Snowdon, yoga and lots and lots of good eating (and laughs)!

I cooked simple and creative dishes from all over the world; Mexico, Lebanon, Italy, Spain, Indonesia, Greece and China.  It was a pleasure to cook for such a wonderful group of people, I love these retreats, always leaving with a whole new gang of friends and inspiration to do more cooking retreats/ holidays.  I just have the best time!

First morning of HCH, I was up at dawn pressing tofu;)

Mexican Dark Chocolate & Pecan Blender Brownies (g/f) with Dulce de Leche – Dessert on Day 1

This time of year means an abundance of incredible organic, seasonal produce

I was so lucky to be able to cook with almost exclusively organic, local produce from the Trigonos farm and the brilliant Tyddyn Teg.  Thanks to Judy and Claire for providing produce that chef’s dream of;  Crown Prince Squash, Spaghetti Squash, beautiful greens, radiant tomatoes and even giant Welsh aubergines.

Mushrooms grown and foraged in Snowdonia, Wales

I even managed to get some local mushrooms, grown just the other side of Snowdon.  We had some foraged Chaterelles, loads of Shiitakes and even some Hedgehog mushrooms.  They made our paella extra special!  Thanks to The Mushroom Garden.

One of my favourite nights, Spanish feast with wild mushroom paella and a roast potato and thyme tortilla

Simple and delicious. Rose, Macadamia and Strawberry Cheesecake

View from the studio window. The weather was very un-Welsh throughout the retreat. The sun shone!

Just checking out the afternoon tea:)

Home Cooked Happiness starts in the kitchen, the heart of the home and ripples out into all aspects of our lives.  After all, eating a healthy and peaceful diet can only make our lives healthier and more peaceful!!  Cooking nourishing, fresh food at home is for me, one of the most important things we can do with our time.  It’s a gift for ourselves, body and mind, and those loved ones we share our lives with.  It doesn’t have to be fiddly or complicated, we learned loads of methods and techniques to make the most out of plants, the kind of dishes that anyone will enjoy, young or old, vegan or otherwise.

The buffet table is always packed with vegan treats

We went all Mexican on the first night.  Quesadillas, mole and all the bright and colourful trimmings.  I love it!

Every meal is accompanied by a varied cheese board, sometimes with homemade cheeses.

I’d like to thank Vegusto, V-Bites and Mozza Risella for providing some tasty cheeses for our cheese boards.

Willie’s Chocolate tasting on the last day. Everyone leaves buzzing on amazing chocolate!

Thanks to our lovely yoga teacher Claire for getting our mornings off to the best possible starts.

We start most mornings with yoga, meditation and a healthy breakfast, normally light, there is a lot of eating to do everyday!

We had three cooking demos every day, ranging from making plant milks and cheeses, to all kinds of global dishes, curries. soups, breads, cakes, desserts and lots of trying new ingredients from around the world.  Not to mention some pickling and fermenting.

I love cooking and preparing for these retreats, it pushes me to try out new things and develop new recipes.  Each attendee gets a big, fat recipe booklet to take home and play with in their kitchens.  The vast majority of the recipes are designed especially for the specific retreat.  Here’s one:

Rich chocolate mousse with drunken cherries and almond biscotti (g/f)

I’ll be sharing some of these new recipes on the blog soon.

The Italian Dinner rounded things off with seasonal feast of pasta, local vegetables and other Puglian delights!

Everyone say “Home Cooked Happiness!!!”

I can’t imagine a more beautiful location to host a retreat. I feel very lucky to have worked at Trigonos and be able to invite happy cooks into Snowdonia.

Thanks to all at Trigonos for the care, help and support in getting this retreat together and running it.  Most of all, thanks to all the Home Cooked Happiness group who made the retreat so special and memorable for me.  Your positive energy and passion made cooking for you a dream!  Now all you have to do is practice, practice, practice.  I can’t wait to see your kitchen inspiration over on our Facebook vegan cooking group.

So that’s it for our Trigonos retreats this year, both Home Cooked Happiness and One World Vegan have been an incredible experience for us both.  They have flown over and we’ll hopefully see some of you up here next year for more whole food, plant-based cooking and good times in North Wales.

Diolch yn Fawr!!

Our next event is soon in London – Global Vegan Cooking Demonstration and Lunch

Then we’re across to Vegfest London for a cooking demonstration.

We also have our Taste of Bliss – Plant-based Yoga Holiday next May in Spain.  Just like Wales, but we substitute the mountains for beaches!

Our Discovering Vegan Cooking Event in Newcastle – Big thanks and some pics!!

Jane and I at the Discovering Vegan Cooking Demonstration

Saturday was a blast!!  We had a great day in Newcastle at our Discovering Vegan Cooking event, it was a little bit of hard work and loads of laughs.  The group was just amazing, such a nice gathering of people, vegans and non-vegans, people who just loved good food and good livin!

This was our first event in the North East and we decided to really go for it!  Offering a full and varied menu with a variety of different techniques to be demo’d.  We had a slight hitch when the power went off for our hobs and blender, these things happen, but the group were very understanding and it came back on, avoiding the potential raw food lunch that looked on the cards at one stage!

Whole Roast Cauliflower with Za’atar & Tahini Yoghurt

Here’s what you may have missed.  The menu in full:

Strawberry Power Smoothie

Homemade Oat Milk

BBQ Jackfruit & Cosmic Slaw Sliders

Corba – Turkish Lentil Soup with Flatbread

Whole Roasted Cauith Za’atar, Pomegranate & Tahini Yoghurt

Roasted Mediterranean Vegetable & Basil Tart

Goan Squash & Black Eyed Bean Curry

Sticky & Sweet Indonesian Tempeh/ Tofu with Sambal

Tofu Bacon Bites

Wholegrain Herb Pilaff with Buckwheat, Millet & Quinoa

Kale, Avocado & Gomasio Salad

Roasted Balsamic Beetroots

Chargrilled Pineapple Chunks

Sprouted Mung Beans & Green Lentils

Simple Kimchi

Coconut Banofee Pie

Decadent Double Chocolate Cake with Berries

Cashew Cream Cheese & Smoky Cashew Cheese

BBQ Jackfruit & Cosmic Slaw Sliders

It was a bit of a feast!!  We wanted to really showcase what vegan cooking is all about, vibrant, colourful food packed with flavours.  There were a few carnivores in attendance who loved the food and went as far as saying “you really don’t need meat”.  Which is music to my ears.

The recipes were all designed to be easy to prepare. The group contained new vegans, Deepa from the ace blog Veggie Mum Up North was on day four of her vegan adventure (read a review here).  Other people in attendance have been vegan for years and I learned lots from all, especially where to buy tempeh locally, which is essential information.

We love doing these events, primarily because we get the chance to meet so many amazing new people.  Thanks to everyone at Brunswick and to Dad, for helping with the washing up and making the tea.

Here’s a review of the day by Louise from Vegan Festival UK

We were a little busy to take pics, so a big thanks to Mick, Neil (NE Veggie Socials), Deepa (Veggie Mum Up North blog) and Louise (Vegan Festival UK) for the taking these snaps.

Our new recipe booklet packed with tasty and healthy dishes

This is the first of our events in 2017, see our full calendar here.  They will range from appearances at food festivals, to cooking demonstrations and meals, pop up kitchens, vegan and yoga retreats.  We’re on the move in 2017, come and join us!!
